Authentic Tortilla Soup {In Less than 60 Minutes!}

To make this TERRAfit-friendly, use low-sodium chicken broth and skip the tortilla chips.
Ingredients
- 1 tablespoon olive oil
- 2 boneless chicken breasts, cut into bite sizes
- 1 onion, diced
- 4 cloves garlic, minced
- 1-2 teaspoons chili power
- 1 tablespoon dried Mexican oregano (Mexican Isle)
- ½ – 1 tablespoon Mexican cumin (Mexican Isle)
- 1 (28 ounces) can crushed tomatoes (Find Tomato Coupons)
- 4 cups chicken broth
- 1 cup water
- 1 (15 ounces) can whole kernel corn
- 1 (4 ounces) can or fresh chopped green or red chile peppers (optional) (I like mine mild)
- 1 (15 ounces) can black beans, rinsed and drained
- 1 fresh lime, squeeze
- ¼ cup fresh cilantro plus additional for topping, chopped
- Tortilla chips, crushed (Find Tortilla Chips Coupons)
- Green onions, chopped (optional)
- Avocado, diced (optional)
- Mexican blend cheese (Find Cheese Coupons)
Directions
In a medium pot, cook the meat, onions, and garlic in oil over medium heat until the meat is cooked through. Stir in chili powder, oregano, cumin, tomatoes, broth, and water. Bring to a boil, and simmer for 15-20 minutes, stir occasionally. Then add corn, beans, peppers, lime juice, and cilantro, and simmer for an additional 15-20 minutes. Serve in individual bowls, and top with tortilla chips, green onions, avocado, cilantro, and/or cheese. Serves 8.
