You only need a couple ingredients for this tasty appetizer.

  • 1 lb. Ground Beef, (96% lean)
  • 2 Tbsp. taco seasoning
  • 1 can (4 oz.) chopped mild green chilies, drained
  • 16 cubes pepper jack or Colby jack cheese (½-inch squares)
  • 1 egg white
  • 1 Tbsp. water
  • 2 cups nacho cheese-flavored tortilla chips, crushed

How to Prepare Nacho Cheese Balls for the Air Fryer

First you need to make your ground beef mixture. Combine the ground beef, taco seasoning and green chilies in a large bowl. Mix the ingredients together lightly, but make sure to do it thoroughly so that the taco seasoning and green chilies are evenly distrusted among the ground beef. 

Then, divide the beef mixture into 16 portions. Next, shape each portion around a cheese cube. Make sure to completely cover the cheese.

How to Fry Nacho Cheese Balls in the Air Fryer

I love frying foods in the air fryer because it is so much healthier. This recipe doesn’t need any oil. Before frying the cheese balls, you first need to finish the prepping process. In a bowl, beat together the egg white with water until blended.

Then, in a second shallow bowl, place the chips.

With each of the meatballs, cover them completely in first the egg wash then the chips. Place the meatballs in a preheated air fryer.

When Are Meatballs Fully Cooked?

Make sure the meatballs are evenly spaced in the air fryer basket and cook for 14 minutes at 400°F/200°C . At the halfway point, flip the meatballs to ensure even cooking.

  • 6 Tbsp. prepared thick taco sauce
  • 3 Tbsp. honey

  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • ¼ teaspoon cumin
  • 1 teaspoon cornstarch

How to Make Homemade Taco Sauce

This homemade taco sauce is packed with delicious flavors. Plus it is super easy to make too.

  1. In a medium saucepan, whisk together tomato sauce, water, 1 tablespoon white vinegar, hot sauce, sugar, salt, garlic powder, onion powder and cumin. Bring to a boil and then reduce heat to low or medium low. Simmer where the sauce is steadily bubbling for 15 minutes. 
  2. After 15 minutes, stir the cornstarch into ½ tablespoon water in a small bowl until dissolved. Add the cornstarch slurry to the taco sauce and cook for an additional 1 minute, stirring constantly, until the sauce becomes thick and glossy. Remove from the heat and stir in the additional ½ teaspoon vinegar. Store refrigerated; it will thicken even more as it cools.

Taco Dipping Sauce

  • 6 tablespoons prepared thick taco sauce *see recipe notes
  • 3 tablespoons honey

Instructions

  • Combine the ground beef, taco seasoning and green chilies in a large bowl. Mix lightly, but thoroughly until everything is well combined.
  • Divide the beef mixture into 16 portions. Shape each portion around a cheese cube, making sure to completely cover the cheese.
  • Preheat the air fryer to 400°F/200°C for 5 minutes.
  • Beat together the egg white with the water in a shallow dish until blended. Place the chips in a second shallow dish. Cover each meatball completely with the egg white mixture then the crushed chips.
  • Place the coated meatballs in the air fryer basket. Be sure that there is space between each meatball.
  • Cook for 14 minutes at 400°F/200°C, or until they reach an internal temperature of 160°F/71.1°C. Be sure to flip the meatballs at the halfway point.
  • Meanwhile, combine the sauce ingredients in a small microwave-safe dish. Microwave on HIGH for 30 seconds or until warm. Serve meatballs with sauce.
