7 Fast and Easy Freezer Meals Using Chicken

I ordered a 40 lb case of chicken from Zaycon Foods and it came today!

I usually package my chicken in freezer bags like you see in our youtube video below. But with so many freezer meal recipes on Fabulessly Frugal and my dire need for time saving meals in my freezer, this time I am going to take the time to prep some freezer meals with my Chicken!

My Chicken Freezer meal recipes of choice:

A 40 lb box of chicken should contain about 80 breasts of chicken so I have a lot of meat to work with for my recipes. I am going to double each one of my recipes.  Once you put the effort into making one you may as well make two. You can use these ingredients to make your own grocery shopping list. Don’t forget to see what you have in your pantry from couponing!

BBQ Chicken Pizza  <—-Link to the full recipe

1 pizza crust (store bought or homemade)
2 c. mozzarella cheese
½ Red onion
2 Chicken breasts cut into small slices or shredded
2-3 c. BBQ Sauce

Breaded Smothered Chicken   <—-Link to the full recipe

4 Boneless, skinless chicken breasts
1/2 Can Bread crumbs
6 Eggs
2 c. Shredded mozzarella cheese
Prego sauce

2 cans of Cream of Chicken soup (or 1 Cream of chicken and 1 cream of mushroom)
1 7oz can green Chile salsa
1 cup sour cream
2 Tbs grated onion
4 cups boiled, shredded chicken
12 corn tortillas cut into 6 strips each (large tortillas)
1 1/2 cup cheddar cheese

4 chicken breasts
1 packet of dry zesty Italian seasoning
1 can of cream of chicken soup
8 oz of cream cheese
¼ cup of butter
½ cup of water
salt and pepper to taste

4 Breasts of chicken
1 package of Hidden Valley Ranch dressing packets
1 c. milk
1 c. mayonnaise
2 Tbsp dried minced garlic

pineapple pepper chicken freezer meal and crockpot reicpe

2 cups unsweetened pineapple juice
1 cup sugar
1 cup vinegar
3/4 cup water
1/2 cup packed brown sugar
1/3 cup cornstarch
1/4 cup ketchup
3 Tbls soy sauce
1 tsp. chicken bouillon granules
1/2 tsp. ground ginger
4 chicken breasts
1 can (8 oz.) pineapple chunks, drained
1 medium green pepper, julienned (optional)

cilantro lime chicken

1 1/2 lbs boneless skinless chicken breast
Juice from 2 limes
1 cup or 1 bunch fresh cilantro, chopped
1 (16 oz) bag frozen corn
2 garlic cloves, minced
1/2 red onion, chopped
1 can black beans, drained and rinsed
1 tsp cumin
salt and pepper to taste

What I need to know to make 14 freezer meals:

My Shopping list: I have most of the ingredients on hand to make these meals, but I will need a few things from the store. Your shopping list may have a few more items depending on how much couponing and stockpiling you have been doing.  I have doubled the ingredients to make two of each meal.

My Chicken Prep: I need 52 breasts of chicken to make all of the above recipes twice. So will you!

    Anyhoo, thanks for the ideas. I bought 3 boxes this zaycon offering. Last time I bought 2 boxes and I ran out before more was available. With bbq season fast approaching I bought an extra box. I butterfly some of the breasts. They fit better in a bun for chicken burgers and they cook much more evenly.

    • Love the idea of butterflying the breasts. I think that is a fabulous idea. The little boys was actually Kearna’s and he is a total cutie. So funny that he fell asleep during taping.

  • Love the recipes but I would love to see more that are lower sodium and not using packaged mixes. There are many that have high blood pressure in my family.

  • I am in! We bought 2 orders last time around and I literally just was shoving them into the bags last time around because I was so skeeved out by the raw meet at about 100 breast in! LOL! I am bound and determined to get my act together this time and have a plan with freezer meals like you suggested…thank you! BTW, are you actually going to open up those bags and add the meat in there or keep them seperate? Curious….and does sour cream freeze well? I am wondering too. Thanks for the awesome post…I get my chicken early April so I have a week+ with the holiday to get my act together! 🙂

      I totally agree about raw chicken being gross. I will add the chicken to the bags. I prepped everything yesterday and just added the chicken today after it arrived. It made the process really slick.

      You can freeze sour cream. It changes the consistency a little so I like to mix it in really well with my ingredients. That way you don’t really notice.

      So excited you are doing this. You are going to love it!!!

  • Thank you for some new recipes to add. We got 80#’s from zaycon today. Hubby helped with prep today and we got 50#’s in different marinades and in the freezer within just a few hours.

    Tomorrow is cook day so I wanted to find a couple more recipes in case I misjudged my menu plan. I’m so excited to have the freezer stocked back up again with quick meals!

  • We were gifted with a box like this from Tyson. It was completely frozen and I have it thawing now and am researching like mad to see what to do with it all. I know I want to cook some to have precooked chicken to throw in quesadillas and casseroles. I had assumed I would have to cook it all since it came frozen. I was trying to catch what you were saying about thawing and freezing to avoid freezer burn. Can you enlighten me on that part? If I want to put some of these breasts into a marinade and freeze them raw, can I?

    • The more you freeze and rethaw the higher your chance of freezer burn. If you can put frozen breasts in a marinade and freeze that would be ideal.
