Pineapple Crock Pot Chicken

Another quick and easy crock pot meal.  One you will want to give a try.
Now that the holidays are upon us, I am sure many of you, like me, have extra busy days of shopping, errand running, party going, cookie making and present wrapping.  We all need quick and easy meals, that are healthy, tasty and filling at the end of a long day.  This one you can throw together and get going in the morning, and enjoy the yummy way your house will smell, all day long…or when you walk in the door!  With few ingredients, most of you may have them stocked and ready to go anyway.  Next time I would season the chicken with salt and pepper before putting in the crock pot, and probably add some garlic too.
Serves 6-8 for about $0.65/serving

3-4 Chicken Breasts (about 2 lbs) – ($3-4)
1 can of pineapple in juice (tidbits, chucks, rings, it doesn’t matter) – ($0.98)
1 medium onion – ($0.33)
2 TBSP soy sauce
½ cup chicken broth – ($0.29)

Chop onion and place in crock pot.

Place Chicken Breast on top of onion.

Dump the can of pineapple (juice and all) over the chicken.

Dump the soy sauce and the chicken broth on top of everything.
Cover and cook on HIGH in the crock pot for 4-5 hours or on low for 6-8 hours.
Serve over rice and with a steamed veggie.
