Overnight oatmeal pancakes with cinnamon

Overnight Cinnamon Oatmeal Pancakes

If I lived in a perfect world, I would love to have pancakes for breakfast every single day. However, that probably wouldn’t be very good for me and pancakes typically take a good chunk of time to make (unless you’re using pancake mix).

There’s a solution though, and it solves both the health problem and the time problem. That solution is this overnight cinnamon oatmeal pancakes recipe. These pancakes can be prepared the night before, saving you time, and they’re also full of healthy ingredients.

To sum it up, these oatmeal pancakes are healthy, easy, and delicious. Perfect for busy mornings! Just mix up the batter the night before, cover, and refrigerate overnight. This allows the batter to thicken and the oats to soften. Then you can just cook up some hearty, delicious cinnamon oatmeal pancakes in the morning!

Overnight Pancake Batter Ingredients

Check out some of the ingredients for these overnight oatmeal cinnamon pancakes – whole wheat flour, oats, and honey. Those ingredients are what make these pancakes a lot healthier than regular old buttermilk pancakes, plus these pancakes will keep tummies full until lunch.

To make this TerraFit friendly, use a buttermilk substitute of milk and lemon juice (1 cup milk to 1 tablespoon lemon juice) and healthy toppings! (Limit pure maple syrup to 1 tablespoon.)

Cooking Your Cinnamon Oatmeal Pancakes

These cinnamon oatmeal pancakes need to cook at a lower temperature and longer than the usual, but they are still pretty quick and fuss-free!

My electric griddle makes pancake cooking super easy, and I can cook 6 pancakes at once! I definitely recommend getting one. This OXO silicone pancake flipper is also really nice and durable.

Enjoy These Overnight Cinnamon Oatmeal Pancakes

I really love how these pancakes taste, and the fact that they have some good, healthy ingredients in there makes me feel good about eating them and serving them to my family. I also, of course, love how convenient it is that the batter is prepared the night before!

I like to serve these oatmeal cinnamon pancakes with maple syrup and a nice glass of milk or juice. Makes for a classic and delicious breakfast! You can also feel free to add any pancake toppings that you desire. Enjoy!

Instructions

  • Prepare the batter the night before you want to cook the pancakes.
  • In a large bowl whisk together the oatmeal, flour, baking soda, baking powder, cinnamon and nutmeg. Add the honey, eggs, vanilla, and buttermilk and mix until the batter is well-combined. Cover the bowl with plastic wrap and refrigerate overnight.
  • The next morning, briefly stir to combine. Heat an electric griddle or skillet over medium-low to medium heat. These pancakes need to cook for longer than traditional pancakes so they will burn if the heat is too high! If needed, spray the griddle or skillet with cooking spray.
  • Drop 1/4 cup of batter onto the preheated griddle or skillet. Let cook for 2-3 minutes until the edges are very set and bubbles are popping on the surface. Quickly slide a flat spatula underneath and flip the pancakes making sure they are set before flipping. Cook for another minute or so until they are cooked through. Serve warm with desired pancake toppings.
