This is the day to celebrate and enjoy popular, tasty pecans! We have 6 ways to honor this special day.

1. Butter Pecan Cookies

Ingredients:

1 and 1/2 cups (195g) Diamond of California chopped pecans
1 cup (230g) unsalted butter, softened to room temperature
1/2 cup (100g) granulated sugar
1 cup (200g) packed light brown sugar (or dark brown)
2 large eggs, room temperature preferred
2 teaspoons vanilla extract
2 and 1/2 cups (312g) all-purpose flour
1 teaspoon cornstarch
1 teaspoon baking soda
1/2 teaspoon salt
OPTIONAL
1/3 cup (67g) granulated sugar, for rolling
sea salt, for sprinkling

1 c light brown sugar, packed
1/2 c all-purpose flour
2 c chopped pecans
2/3 c butter, softened
2 large eggs, beaten

Ingredients:

4 cups Diamond of California® Pecan Halves
1 cup sugar
1 cup brown sugar
3 tablespoons cinnamon
¼ teaspoon salt
3 egg whites
2½ teaspoons vanilla
3 tablespoons water

Ingredients:

4 boneless chicken breasts
1/4 tsp pepper
1/4 tsp salt
3 Tbsp butter
1 1/2 cups whipping cream
2 Tbsp orange marmalade
1 Tbsp Dijon mustard
3/4 cup chopped toasted pecans

Baked Pecan Crusted Chicken Fingers

1 and 1/2 pounds skinless, boneless chicken breasts or tenders
2 cups Diamond of California pecan halves
3 Tablespoons all-purpose flour
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon smoked paprika1
2 large eggs
chopped parsley for garnish, optional

Chocolate Caramel and Pecan Turtle Clusters

Ingredients:

2 1/2 C pecans
1/2 C butter (I use salted)
1 C brown sugar
1/2 C light corn syrup
7 ounces sweetened condensed milk (1/2 of a 14 ounce can)
1/2 t vanilla
1 (12 ounce) package milk chocolate chips
1/2 t shortening (I use butter flavored Crisco)
