I know Fall is upon us, but something fresh and bright sounded good for a tasty treat, before diving head on into pumpkin treats. Â These Lemon Brownies were excellent, especially the next day…if you have any left 🙂 ! Â I usually go for chocolate brownies, but these were light with just the right amount of lemon flavor.
3/4 cup flour
3/4 cup sugar
1/4 tsp. salt
1 stick butter, softened
1 Tbsp.Â Lemon juice
zest from 1/2 lemon
1/2 cup powdered sugar
1 Tbsp. Lemon Juice
additional lemon zest
Combine the flour, sugar and salt in a large bowl. Â Mix in the softened butter.
In another bowl whisk the eggs with the lemon juice and zest.
Add to the larger bowl and mix well. Â Pour into prepared 8X8 brownie pan.
Bake at 350 for 25 minutes.
(You can double the recipe and bake in a 9X13 pan for 30 minutes.)
