Freezer Meal Recipe: Mexi Stuffed Peppers
These Mexi Stuffed Peppers are easy and delicious!
This is a simple freezer to prepare for your family, just thaw it and cook for 30 minutes and you have dinner all ready. I like to add some salsa, sour cream and eat with tortillas or tortilla chips.
Mix up some homemade taco seasoning for the ground beef! Super easy! I used a little over a tablespoon of the seasoning and it was great! (Love this skillet, by the way!) You know, you could prepare several pounds of cooked, seasoned ground beef and then easily freeze it for tacos and other recipes, like this one!
The ingredients for the filling are really pretty simple – seasoned ground beef, corn, black beans, rice (I used brown rice here), green onions, and shredded cheese (if you so desire). I usually love extra cheese whenever possible, so I definitely include the cheese in the filling and more on top!
It is a simple recipe, but still tastes great, and you can really take it up a notch with whatever garnishes you want, like your favorite salsa, sour cream, cilantro, or whatever!
I was a little worried how well these would freeze, but I ended up enjoying them just as well as I do when I cook them fresh! All I did to prepare them for freezing was to make them like I normally would, then wrap them in plastic wrap and then in tin foil. I froze them on a baking sheet and when they were solid I transferred them to a Ziploc bag. You could probably get away with just freezing them all in a baking dish or foil pan too, if you cover the top with similar layers of plastic wrap and foil and have the baking dish to spare.
To prepare them just thaw them in the refrigerator, then cook for 30 minutes. Serve with whatever additional toppings you want (see some ideas above). If you get a bunch of bell peppers from your garden, this is a great way to use them up!
