Crock Pot Corned Beef and Cabbage

Once a year for St. Patrick’s Day, our family enjoys Corned Beef and Cabbage for dinner.  Using the crock pot, this recipe makes having this complete meal SO simple!  You throw it all in the pot, let it cook away all day, add a fresh fruit or salad, and enjoy your St. Patty’s Day feast!

Serves 8-10 for about  $1.45, depending on the size of your Corned Beef

INGREDIENTS:

8-10 medium/small sized red potatoes – $0.91

2 cups baby carrots – $0.78

head of cabbage, sliced – $2.76

Corned Beef with Seasoning Packet – $9.45

1 medium onion, sliced – $0.33

salt and pepper

1 cup water

DIRECTIONS:

Place potatoes, onion and carrots in the bottom of crock pot.

Place meat on top.

Place cabbage wedges around the meat and season with salt and pepper.  Sprinkle seasoning packet on meat.  Add 1 cup of water.

 Cook on low 8-9 hours.
