Crock Pot Breakfast Casserole

I have seen a few of these Crock Pot breakfast casseroles, but have never made one.  I decided to give this one a try for our New Year’s Day breakfast.  How nice would that be to throw everything in the crock pot the night before, and wake up to a warm breakfast, without all the work?!  And even when making it, the hardest part was shredding the cheese and browning the meat.  I guess a drawback of it though, was that the smell of it cooking woke me up about 3 am, after having already gone to bed late, but it smelt good, and was ready when we were ready to eat.  I would say though, be sure to use plenty of salt and pepper, and I would probably do about 15 oz. of potatoes and a can of diced green chilies next time, it needed a bit more flavor.

Serves 8 for about $1.00/serving

INGREDIENTS:

1 26 oz. bag frozen hash browns (mine was 30 oz, it was fine) – $2.39

12 eggs – $1.20

1 lb. ground sausage – $2.89

1 cup milk

1 Tbsp. ground mustard

Salt and pepper

2 cups shredded cheddar cheese – $1.50

Begin browning sausage in a medium sized skillet on stove over med heat.

Spray crock pot and add hash browns.

Crack eggs in a large bowl and whisk well.

Add in milk.  Add in seasonings.

When sausage is browned, drain and layer on top of potatoes.

Sprinkle with cheese.

Pour egg mixture over top.

Cook on low for 6-8 hours.

Would be good with a can of diced green chilies mixed in with the eggs.
