Crock Pot Breakfast Casserole
I have seen a few of these Crock Pot breakfast casseroles, but have never made one. Â I decided to give this one a try for our New Year’s Day breakfast. Â How nice would that be to throw everything in the crock pot the night before, and wake up to a warm breakfast, without all the work?! Â And even when making it, the hardest part was shredding the cheese and browning the meat. Â I guess a drawback of it though, was that the smell of it cooking woke me up about 3 am, after having already gone to bed late, but it smelt good, and was ready when we were ready to eat. Â I would say though, be sure to use plenty of salt and pepper, and I would probably do about 15 oz. of potatoes and a can of diced green chilies next time, it needed a bit more flavor.
Serves 8 for about $1.00/serving
1 26 oz. bag frozen hash browns (mine was 30 oz, it was fine) – $2.39
12 eggs – $1.20
1 lb. ground sausage – $2.89
1 cup milk
1 Tbsp. ground mustard
Salt and pepper
2 cups shredded cheddar cheese – $1.50
Begin browning sausage in a medium sized skillet on stove over med heat.
Spray crock pot and add hash browns.
Crack eggs in a large bowl and whisk well.
Add in milk. Â Add in seasonings.
When sausage is browned, drain and layer on top of potatoes.
Sprinkle with cheese.
Pour egg mixture over top.
Cook on low for 6-8 hours.
Would be good with a can of diced green chilies mixed in with the eggs.
