Cream Cheese Mashed Potatoes

Anyone else LOVE mashed potatoes?  Anyone else in awe in how you can eat multiple potatoes worth of them, and only 1 baked potato?  I love the number of flavors and ways you can make them as well.  I was craving mashed potatoes the other night, and have heard about people using cream cheese in them…oh man, they were rich, creamy and delicious!!  Probably shouldn’t make them like this every time, as they are pretty rich and full of fat, but so good!  You could probably use low fat cream cheese and skim milk to make them a little lighter.  I followed this recipe, but adjusted quantities to my liking.

Serves 6-8 for about $0.30/serving

INGREDIENTS:

2 pounds baking potatoes

2 teaspoons salt

3 tablespoons butter

4 ounces cream cheese

1/2 cup milk

salt and pepper

DIRECTIONS:

Peel the potatoes and cut them into 1-inch cubes. Add the cut potatoes to a large pot and just cover with water. Add the salt and stir well. Bring to a boil and cook for 15 to 20 minutes or until the potatoes are tender when pierced with a fork.

Drain the potatoes and return them to the pot. Add the butter, cream cheese, and milk.

Mix well with a hand mixer until the potatoes are smooth. Add salt and pepper to taste.
