Cream Cheese Mashed Potatoes
Anyone else LOVE mashed potatoes? Â Anyone else in awe in how you can eat multiple potatoes worth of them, and only 1 baked potato? Â I love the number of flavors and ways you can make them as well. Â I was craving mashed potatoes the other night, and have heard about people using cream cheese in them…oh man, they were rich, creamy and delicious!! Â Probably shouldn’t make them like this every time, as they are pretty rich and full of fat, but so good! Â You could probably use low fat cream cheese and skim milk to make them a little lighter. Â I followed this recipe, but adjusted quantities to my liking.
Serves 6-8 for about $0.30/serving
2 pounds baking potatoes
2 teaspoons salt
3 tablespoons butter
4 ounces cream cheese
1/2 cup milk
salt and pepper
Peel the potatoes and cut them into 1-inch cubes. Add the cut potatoes to a large pot and just cover with water. Add the salt and stir well. Bring to a boil and cook for 15 to 20 minutes or until the potatoes are tender when pierced with a fork.
Drain the potatoes and return them to the pot. Add the butter, cream cheese, and milk.
Mix well with a hand mixer until the potatoes are smooth. Add salt and pepper to taste.
