Cracked Out Chicken and Rice

I needed a quick and easy meal for my family, as I had been sick for over a week, and couldn’t eat so well myself, but it was time for me to cook for the family again.  A week of freezer and convenience meals was a week too long, and it was time for them to eat a bit better.  I found this chicken and rice recipe, and everyone loved it.  Quick, easy, budget friendly.  Prep ahead of time, and have your hubby toss it in the oven if you need too.   It would make for a good meal to bring a friend in need, as they can just pop it in the oven an hour before they are ready to eat.

Serves 4-6 for about $0.90/serving

INGREDIENTS:

2 cups cooked,chopped chicken – ($2-3)

1/4 cup bacon bits – ($0.76)

1 cup cheddar cheese

1 (1 oz) packet dry ranch seasoning mix – ($0.48)

3/4 cup rice

1 can cream of chicken soup – ($0.86)

1 cup milk – ($0.13)

DIRECTIONS:

Preheat oven to 375.

Combine all ingredients and place in a 9X13 dish. Cover dish with foil. Bake for 45-60 minutes, stirring every 15 minutes to check for doneness (yes, that is a made up word 🙂 ).
