Cracked Out Chicken and Rice
I needed a quick and easy meal for my family, as I had been sick for over a week, and couldn’t eat so well myself, but it was time for me to cook for the family again. A week of freezer and convenience meals was a week too long, and it was time for them to eat a bit better. I found this chicken and rice recipe, and everyone loved it. Quick, easy, budget friendly. Â Prep ahead of time, and have your hubby toss it in the oven if you need too. It would make for a good meal to bring a friend in need, as they can just pop it in the oven an hour before they are ready to eat.
Serves 4-6 for about $0.90/serving
2 cups cooked,chopped chicken – ($2-3)
1 cup cheddar cheese
1 (1 oz) packet dry ranch seasoning mix – ($0.48)
3/4 cup rice
1 can cream of chicken soup – ($0.86)
1 cup milk – ($0.13)
Preheat oven to 375.
Combine all ingredients and place in a 9X13 dish. Cover dish with foil. Bake for 45-60 minutes, stirring every 15 minutes to check for doneness (yes, that is a made up word 🙂 ).
