Here’s wishing you a holly-jolly Christmas morning surrounded by family and friends.  Whether you like to stay in your pj’s or gussy up, if you want to give yourself a gift, make this Quiché Lorraine-like, Cheesy Potato Breakfast Casserole the day before.  Christmas morning bake it while opening presents and you will be saying Ho-Ho-Ho!

I like to serve Cheesy Potato Breakfast Casserole with a fresh fruit cup and tender muffins.  It’s the perfect way to start the merriest morning of the year!

We have made this casserole with bacon, ham, and mild Italian sausage through the years.  Hey, it’s good without meat!  Mix and bake if you’d like, or chill it overnight.  It all works.

It’s a snap to prepare ahead.  Chop onions and bacon.  In a large skillet cook them together until the bacon is crisp; drain.  Whisk eggs together.

Combine the remaining ingredients; stir in bacon mixture.  Transfer to a greased 9X13-inch baking dish.  At this point, cover and place in the refrigerator overnight, if making ahead.

Bake, uncovered, in a preheated 350˚degree oven for 45-50 minutes or until the center is set.  Let stand for 10 minutes before cutting.

Cheesy Potato Breakfast Casserole

While opening presents Christmas morning, this delicious Quiché Lorraine-like breakfast casserole will puff and bake to perfection. Add some muffins and fresh fruit for a merry start to the best day of the year!


  • 1 pound sliced bacon, diced
  • 1 large yellow onion, chopped
  • 10 eggs, lightly beaten
  • 4 cups frozen shredded hash brown potatoes, thawed
  • 2 cups (8-ounces) shredded cheddar cheese
  • 1-1/2 cups cottage cheese
  • 1-1/2 cups shredded Swiss Cheese


  1. In a large skillet, cook bacon and onion until bacon is crisp; drain. In a large bowl, combine the remaining ingredients; stir in bacon mixture. Transfer to a greased 9X13-inch baking dish. At this point cover and refrigerate overnight if desired.
  2. Preheat oven. Bake uncovered at 350˚degrees for 45 to 50 minutes or until the center is set. Let stand for 10 minutes before cutting. Yield: 12 servings.


May use bacon, ham, or cooked and crumbled mild Italian sausage interchangeably.
