Broccoli and Cauliflower Chop Salad

Here is a yummy way to use up the cheap Broccoli and Cauliflower from Fred Meyer this last week!
 
Dressing:
  • 1 cup sour cream
  • 1 teaspoon oregano, dried, crushed
  • 1 teaspoon celery seed
  • 2 tablespoons fresh lemon juice
  • 1/4 cup onion, finely diced
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon freshly ground black pepper
  • Salad:
  • 4 cups romaine lettuce, chopped
  • 1 cup broccoli, chopped
  • 1 cup cauliflower, chopped
  • 1 cup red bell pepper, chopped
  • 1 cup mushrooms, sliced, fresh
  • 1 can artichoke hearts, drained and chopped, 13.75 oz. (optional in my opinion)
  • 6 each kalamata olives, pitted and chopped (optional in my opinion)
  • Directions:

  • In a small bowl, whisk together the sour cream, celery seed, oregano, lemon juice, finely chopped onion, sea salt and pepper.
  • In a large bowl, toss together the lettuce, red pepper, broccoli, cauliflower, mushrooms, artichoke hearts and chopped olives. Top with dressing and toss until evenly coated. Refrigerate until ready to serve.
