Apricot Gouda Cheeseball Recipe

With the prospect of a new year beginning I’m getting excited. It is going to be a fantastic year so let’s start it out right!
We aren’t a glamorous group around here, but we sure like to party. Our New Year’s Eve blowout will start with an array of appetizers I’ve added all my favorite things to Apricot Gouda Cheeseball, caramelized onion, crunchy bacon, Gouda cheese, and dried apricots. It’s sweet, salty, and creamy, all rolled in toasted almonds, YUM. Set out crackers and fresh veggies and watch your guests make themselves at home.
Begin by caramelizing onions, by slowly cooking them in a little olive oil until they are richly browned. It takes between 30 to 45 minutes, depending on the amount of onions you are slowly cooking. It is worth it! Work on preparing the other ingredients while the onions caramelize.
Cook the bacon until crisp. Drain from fat and cool. Then crumble the bacon, I like to whirl mine in my food processor. Grate the Gouda cheese and mince dried apricots.
Whip softened cream cheese, mayonnaise, and Worcestershire sauce together. Then add the cooled onions, bacon, cheese, and apricots. Mix together well and chill.
Toast the sliced almonds until fragrant and the edges are just beginning to turn golden brown. You can do this in a skillet on the stove over medium heat, stirring or shaking frequently to prevent burning. Or spread out on a rimmed baking sheet and toast them in an oven at 350 degrees, stirring every few minutes. Roll Apricot Gouda Cheeseball in nuts and serve with assorted crackers and fresh veggies. Yum!
