52 Weeks of Pinterest: Week 15 Cheesecake Filled Carrot Cake Cupcakes with Cream Cheese Frosting!

This year I wanted to go with a resolution I would have no problem sticking to! Then as I was pinning an item on Pinterest, a light bulb flashed on above my head. Ok, maybe not literally, but this great idea popped into my head. Those of us who are Pinterest users know that we pin hundreds of things a week, but do we ever do them? So I decided this year I would do one of my pins every week. At the moment, 52 weeks of Pinterest was born. Each week I will do something I found on Pinterest rather it be a craft, new recipe, organizing technique, or whatever!

This week I went for a pin for our Desserts  Board Cheesecake Filled Carrot Cake Cupcakes with Cream Cheese Frosting!

What You Will Need:

Box of Carrot Cake (plus ingredients called for on box)

Cheesecake Filling:

4 ounces softened cream cheese
1 egg yolk
1/2 cup sugar
1/2 tsp vanilla

Cream Cheese Icing

8 ounces softened cream cheese
2 tablespoons butter
1 tablespoon shortening
1/2 tsp vanilla
1 cup powdered sugar

Start by preheating your oven to 350°. Prepare the boxed cake following the directions on the box.

Now set aside the the mixed carrot cake and get ready to make the cheesecake filling. In a mixing bowl combine the cream cheese, egg yolk, sugar and vanilla. Cream together until smooth.

Now we can start making these yummy things. Place the cupcake liners in your pan and fill each one ½ way full with prepared carrot cake mixture.

Take a spoon and drop about a teaspoon full of the cheesecake filling onto the top of each cupcake.

It should look like this:

Place cupcakes in preheated oven and bake according to box.

While these bad boys are baking, you can start preparing the frosting.

Beat together the butter and sugar until smooth. Add the vanilla and mix with those ingredients until they are well combined. Split the cream cheese in half. Add the first half to the mixture and combine. Next, add the shortening and mix until combined. Follow that step by adding the remaining cream cheese. Gradually add the sugar and combine thoroughly. Mix until it’s the consistency of frosting. Go ahead – taste it, you know you want to. It’s amazing! 🙂

Once you pull them out of the oven, they should look like the picture above. After they have cooled – frost away.

I  made these Easter day with just a tad bit of time until the family dinner so I left them as plain ol’ cupcakes. You could however top with crushed pecans, decorate with carrots on top, or even some chocolate sprinkles.

I have made a ton of cupcakes in my life and these have topped all of them! They were sooooo good and everyone had at least 2! 🙂 I wanted like 6 of them. Make these, you won’t be disappointed!
