Chocolate No Bake Cookies with Coconut Oil

Raise your hand if grew up eating no-bake cookies! We sure did. If I recall, it was one of my brother’s very favorite cookies in fact. It was a popular choice for my husband when he was growing up too. He and his friends lovingly referred to them as poop cookies. 😉

Well these are much tastier than the alternative… and if you’re doing Weight Watchers, you can enjoy one for 6 Freestyle Points!

I thought it would be awesome to find an easy chocolate treat that would still be okay when I’m trying to eat clean, so I started trying different no-bake cookie recipes and messing around with it. The recipe needed to be simple and easy, but still delicious and able to fulfill even the wildest of chocolate cravings. This recipe accomplishes that extremely well!

Did I mention how easy it is to make these no-bake cookies?

With some other recipes, you have to boil the mixture for a certain amount of time and if you happen to overdo it, you’ll end up with a dry, crumbly cookie. I love that you don’t have to fuss with that here. It is easy and simple. Two of my favorite words.

Now I don’t think I’ll ever go back to the traditional recipe for these! This version is awesome, even without the butter and refined sugar. The chopped almonds add a nice crunch factor to the texture too. I really like it! I don’t feel like I am missing out on anything.

How to get the best chocolate flavor in your no-bake cookies:

For the best chocolate flavor, I like to do about half natural unsweetened cocoa powder and half Special Dark cocoa powder. (The Hershey’s Special Dark is a blend of natural and Dutch-processed.)

With all natural cocoa, it ends up being a little bitter and not as full of a chocolate flavor as I was hoping for. The all Special Dark was a little too much dark chocolate flavor for my taste. I am very happy with the flavor of having both in there though! I usually do 3 tablespoons natural and 2 tablespoons dark. (Different brands may taste a bit different too.)

Try these things out! They are delicious and you don’t have to feel guilty about eating them! They are quick and easy so you can do them while the kids are playing outside or napping. These need to be in the cookbook of every single mommy because everyone will love them. And the best part is, even our bodies will love them with the new healthy additions!

These cookies have earned a permanent spot in my freezer. I love having a stash in there when I need a yummy chocolate treat! And since the ingredients are nice and clean, I don't feel too guilty about it either!

Ingredients

  • 1 cup creamy peanut butter or almond butter
  • ½ cup virgin coconut oil
  • 6 tablespoons honey
  • 2 teaspoons pure vanilla extract
  • 3 tablespoons natural unsweetened cocoa powder
  • 2 tablespoons Special Dark cocoa powder
  • ¾ cup sliced almonds chopped
  • teaspoon salt
  • 3 cups old fashioned oats

Instructions

  • Line a rimmed baking sheet or two with parchment paper or silicone baking mats.
  • In a saucepan (I use about 3-quart size) over medium heat, melt the peanut butter and coconut oil until smooth. Remove from heat and stir in the honey and vanilla. Then, while the mixture is still warm, stir in the cocoa powder, almonds, salt, and oats, until the ingredients are evenly distributed and the oats are coated.
  • Drop spoonfuls of the mixture onto the prepared pans. Then place the pans in the freezer or refrigerator to let the cookies set. Enjoy!

  • I’m curious, did you use a natural unsweetened peanut butter or a sweetened version? I’m just trying to get the sweetening right.

    • Good question! With the last few batches, I used Natural Jif Creamy and it does have some sugar and a bit of molasses in there. It will still work to use a natural peanut butter that does not have any sweetening, but it won’t taste quite as good (at least in my opinion). You could probably add more honey to help with that, but I’m not sure of the exact adjustments that would work best. Please let me know how it goes for you and if you make any adjustments that you are loving!

  • Do you have the nutritional information on these? Calories etc…

    • It will vary depending on the ingredients you use, especially the peanut butter. I suggest entering the recipe into myfitnesspal with the ingredients you are going to use. I’m planning to do that real soon for myself, so I can come back and share my results too if you want. 🙂

  • This is how I make mine every time! I have never used chopped nuts though. And sometimes, instead of honey or other sweeteners, I grind up some coconut in my food processor and use that to sweeten it! So yummy!

    • Awesome! Thanks for the tip on the coconut. The chopped almonds was a new thing to me too, but I love the additional crunch and texture that they add. You should give it a try!

  • Do they get hard if they are not in the freezer? Do they melt or anything when they get warm? I’m trying to figure out if these would work for picnics or boxed lunches?

    • They do get soft and a bit messy at room temp., so I keep them frozen or refrigerated. If you froze them first and packed them in an insulated lunch box, they may still be in good shape for a picnic or lunch though!

  • Do you think it would be possible to substitute unsweetened applesauce for the coconut oil? Thank you so much…these look yummo! 🙂

    • I haven’t tried that substitution before and I haven’t seen that done in other no-bake recipes either, so I really don’t know! I wonder if the applesauce would make the cookie softer and they wouldn’t set up as much. If you try it though, let me know how it goes!
