Healthy Whole Wheat Pancakes are a Great Way to Start off Every Morning!

I love making these easy whole wheat blender pancakes from scratch. They are easy, fast, and affordable! Almost as easy to make as pancakes from a mix!

Whole wheat blender pancakes make me feel like a kid again because my grandma used to make them whenever we would go visit her house.

A great thing about wheat pancakes is that they’re very filling! You could even serve them for dinner! And let’s be honest, who doesn’t like breakfast for dinner every once in a while?

In addition to being filling, these pancakes are also super quick to make since you can mix them up in a blender. All-in-all, this is a wonderful recipe.

I actually made a few other recipes to compare with this one and these whole wheat pancakes are the winners.

Whole Wheat Pancake Ingredients

You can find whole wheat kernels or wheat berries in the Winco bulk section and at many other grocery stores or health food stores. Wheat berries are very inexpensive!

I use hard white wheat in this recipe, but feel free to experiment with soft white, hard red, kamut, etc. Maybe you have some whole wheat in your food storage? This recipe is a great way to use it!

The recipe will not turn out the same if you try to sub whole wheat flour for the whole wheat kernels, so I recommend sticking to whole wheat kernels (also known as wheat berries).

Feel free to substitute the first cup of milk with buttermilk. It may yield a slightly thicker pancake and add a little more flavor.

Buttermilk Substitute

I have been using this buttermilk substitute idea for years and it works great. It is really simple to make as well, just mix 1 cup of milk with 1 tablespoon of white vinegar.

Time saver tip: You can triple the recipe and freeze the leftover pancakes. Then you can make a healthy & fast breakfast that you can just pop in the toaster or the microwave.

Ingredients

  • 1 cup whole wheat kernels wheat berries
  • 1 ½ cups milk divided
  • cup oil
  • 2 large eggs
  • 2 tablespoons sugar or honey
  • 1 tablespoon baking powder
  • ½ teaspoon salt

Instructions

  • Add 1 cup milk (or buttermilk) and 1 cup wheat to blender and blend on a high speed for 3 minutes. (I use the 5 or 6 speed on my Vitamix.) Batter will be smooth and thick.
  • Add the remaining 1/2 cup milk and blend for an additional 2 minutes. Add oil, eggs, sugar, baking powder, and salt and blend until combined and smooth.
  • Cook batter on a griddle at medium heat (about 300 degrees F), using about 1/4 cup batter for each pancake, 2-3 minutes per side, until golden brown.

  • I’m not really aware that I can do such a thing. I have to try because I’m curious if there’s a difference in its consistency.

  • I made them this morning and they turned out great! I made a half recipe, since we are a smaller family of 3 people, and that was about perfect with a stack of 3 pancakes per person. The batter is a lot runnier than I am used to and I was afraid that the pancakes would be tough, as they are so thin. But they are not tough at all! They are thin but super light and airy! I will make them again.
