Using-Up-Those-Marshmallows: Granola Bars

May 29, 2009 1 Comment

Thank you reader Cheryl for sharing this recipe for homemade granola bars!   Another way to use up your oatmeal!

Granola Bars

¼ cup butter
1 pkg (10 oz.) marshmallows
½ tsp vanilla
¾ cup peanut butter candy melts (or ½ cup peanut butter chips)
4 cups rice crispies cereal
1 ½ cups quick oatmeal
¾ cup chopped walnuts

Melt butter in a large sauce pan over low heat. Add marshmallows, stirring frequently. Once marshmallows are halfway melted add in candy melts (or chips.) Continue stirring until mixture is smooth. Remove from heat and stir in vanilla. Add in remaining ingredients and stir to coat evenly. Coat 9×13 pan with butter Pam and press the mixture into it. Cool and cut into granola bar size pieces. Makes about 20.

These ingredients are all items I had that needed using. My 3 year old did the quality checking and says they are yummy. I am planning on making up a few different versions to keep the kids from getting bored with them before I’ve used up my marshmallows.

Variations:

Use 2 Hershey bars (broken up) in place of the peanut butter chips and ¾ cups graham cracker pieces in place of the walnuts and you can use all your bargain ingredients and have s’more bars!
Or use white chocolate chips and raisins (or craisins.)
Or semi-sweet chips and broken pretzels.
Or cherry chips and coconut.
Use your imagination!

Thanks Cheryl (hiccups)

  1. Thank you to the alternative (smores) to using peanut butter and nuts. Too many of the recipes have nuts and we can’t do that in our house!
