Crock-Pot Turkey Noodle Soup with Homemade Broth

After Thanksgiving there are endless possibilities of making various dishes with turkey. The first thing that comes to mind is homemade turkey noodle soup. It is so healthy and delicious! This is such an easy dish to make especially when you make it in the crockpot, and it can be made with either turkey or chicken.

Ingredients

  • Turkey bones, bits of meat, and skin
  • 2 carrots, sliced
  • 2 stalks celery, sliced
  • ½ onion, chopped
  • 2 tablespoon chicken base or chicken bouillon
  • Water

Directions

Step 1: Make sure you save all of your turkey bones, bits of meat, and skin, and place into the crockpot. Fill enough water to cover the bones, and add 1 tablespoon of vinegar. The vinegar will draw the nutrients out of the bones. Let it cook over night on low for 12 to 14 hours.

 

 

 

Step 2: Strain it in a large bowl.

 

 

 

 

Step 3: Place the bone and the meat on plate and cool slightly before separating them. Once cooled, separate the bone and meat. Discard the bones. Transfer broth and meat back in the crock-pot.

 

 

 

Step 4: Chop up 2 carrots, 2 stalks celery, and ½ onion, and transfer to crock-pot. Add 2 cups water, and 2 tablespoon of chicken base (I like Better Than Bouillon), or chicken bouillon to soup. Stir.  Cover and let it cook on low for 8-10 hours or on high for 3-4 hours.

 

 

Step 5: Right before the soup is done place 2 cups of extra wide noodles into crockpot. Cook until noodles are soft (about 14 minutes).

How to Make Cranberry Sauce

It sounds like many of you like the canned cranberries. But I much prefer these homemade ones!

Last year I learned how to make cranberry relish. My father-in-law taught me how to make it. I have cranberries and pineapple that I got for free at Albertsons that I can use to make this. So I am making this today. It is best if it sits a few days in the fridge before Thanksgiving day. It is nice to be able to make something ahead of time before Thanksgiving and cross it off your list.

 

Ingredients:
2 (12 oz) bags of cranberries
1 (12 oz) can  crushed pineapple
1 cup of sugar
1/2 teaspoon of salt
1/4 cup water

In a food processor or Vitamix blender grind up the cranberries and pineapple. Grind them to your desired chunkiness or smoothness.

Put the sugar, salt and water in a sauce pan over med heat and wisk until it boils and runs clear. Then add the cranberries. Stir over med heat until it gets a pretty red color pictured below. Then chill until Thanksgiving.

Makes 1.5 quarts.

Note: Depending on how sweet/tart you like your sauce taste test and add more sugar water if needed.

How to Make Homemade Gravy

I absolutely love my mom’s homemade gravy! It is something I look forward to every Thanksgiving!  It is so full of flavor, and so much better for you than store bought.

Ingredients:

  • 1 turkey neck, heart, and gizzard
  • ½ cup onion, diced
  • 1 stalks celery, chopped
  • 1 carrot, peeled and chopped
  • 1 tablespoon chicken base or chicken bouillon
  • Salt
  • Pepper
  • 3-5 tablespoons flour
  • Water

Directions:

Step one: For the turkey stock, in a medium sauce pan combine the turkey neck, heart, and gizzard (If cooking a turkey breast, remove some cooked meat from the thigh and place in sauce pan). Add the onions, celery, carrots, chicken base, salt, and pepper. Cover with 5-6 cups of water. Bring to a boil over high heat; reduce heat and let simmer, partially covered, on very low heat for 2 hours. Remove from heat.

 

 

Step two: Remove turkey neck, heart, and gizzard from sauce pan, cool slightly. Take the meat off the turkey neck, and chop neck, heart, and gizzard into small pieces.

Step three: Transfer turkey stock and meat into a frying pan on moderate heat.

Step four: In a glass measuring cup, add one cup of cold water and 3 tablespoons of flour. Stir with a Wisk or fork until it’s completely mixed. Slowly pour into stock. Let it simmer 5-10 minutes, stirring frequently, until slightly thickens.

If you want it thicker add 1 or 2 tablespoons more flour (see above)(Note: If you put flour directly in hot gravy it will be lumpy), or thin the gravy by adding more water. Season to taste with salt and pepper. Keep gravy warm over low heat, stirring occasionally, until ready to serve. Transfer to serving bowl.

Grandma Ople’s Apple Pie

Although I rarely make apple pie from scratch because a) it’s not my favorite pie and b) it is so much work, this recipe makes it all worth it. The pie is so delicious,  it makes the labor involved not seem so bad! I’ve tried a few different apple pie recipes over the years but I always come back to this one.

Ingredients

  • 1 recipe pastry for a 9 inch double crust pie
  • 1/2 cup unsalted butter
  • 3 tablespoons all-purpose flour
  • 1/2 cup white sugar
  • 1/2 cup packed brown sugar
  • 1/4 cup water
  • 8 Granny Smith apples – peeled, cored and sliced

Directions

  1. Melt butter in a sauce pan. Stir in flour to form a paste. Add white sugar, brown sugar and water; bring to a boil. Reduce temperature, and simmer 5 minutes.
  2. Meanwhile, place the bottom crust in your pan. Fill with apples, mounded slightly. Cover with a lattice work crust. Gently pour the sugar and butter liquid over the crust. Pour slowly so that it does not run off.
  3. Bake 15 minutes at 425 degrees F (220 degrees C). Reduce the temperature to 350 degrees F (175 degrees C), and continue baking for 35 to 45 minutes.

Farmer’s Pie

So, maybe I’m spoiled, or deprived, (one or the other… right?) but I don’t usually have Thanksgiving leftovers (we go to my parents and in-laws every year)… Well, once we had it at my house, but I sent all the leftovers home with my guests :) .  So when given the task of “what to do with those leftovers”, it kind of stumped me!  But then I asked an amazing chef friend of mine, who is blessed to have a husband that cooks even better than she does!  This is one of the many things they do with their leftovers:

Ingredients:

Leftover Turkey (about 1 cup)
Leftover Green Bean Casserole (about 2 cups)
Onion Soup Mix (1 package)
Leftover Gravy (about 1/2 cup)
Leftover Mashed Potatoes (about 3-4 cups)

The great thing about this dish, is just throw in what you have… if you have tons of turkey left over, and not a ton of casserole, that’s great too!

Directions:

Shred the turkey up and add it to your green bean casserole, with a package of dry onion soup mix, leftover gravy, and about 1/2 a cup of water.  Stir together and put in the bottom of a 9×9 pan (or casserole dish if you have lots of leftovers!) and put the mashed potatoes over it.  Bake at 350 for 30 minutes, or until slightly brown on top.

Turtle Pumpkin Pie

I love easy recipes, especially on a day like Thanksgiving!
Anything, like this dessert, that can be done ahead is FAB!

 

Ingredients:

1/4 cup plus 2 Tbsp. caramel ice cream topping, divided
1 Graham Pie Crust (6 oz.)
1/2 cup plus 2 Tbsp. chopped Pecans, divided
2 pkg. (3.4 oz. each) Jell-O Vanilla Flavor Instant Pudding
1 cup cold milk
1 cup canned pumpkin
1 tsp. ground cinnamon
1/2 tsp. ground nutmeg
1 tub (8 oz.) Cool Whip  Whipped Topping, thawed, divided

Directions:

  1. Pour 1/4 cup caramel topping into crust; sprinkle with 1/2 cup nuts.
  2. Beat next 5 ingredients in large bowl with whisk until well blended. Stir in 1-1/2 cups Cool Whip; spoon into crust.
  3. Refrigerate 1 hour. Top with remaining Cool Whip, caramel topping and nuts just before serving.
