With my son allergic to dairy products & my mom allergic to eggs, it makes it very hard (impossible) to find a pie for Thanksgiving they can both share. I researched pie recipes a ton this year trying to find the perfect one. I was so excited when I found this one on allrecipes.com. I worried that the pie would be flavorless or not hold up after it was cooked. It was so great tasting! I am so pleased with this recipe! It is the perfect solution to our problem in finding a great pie to share as a family full of allergies! Enjoy!
Crust:
1 1/2 cups gluten-free all purpose baking flour
1 teaspoon salt
1/2 cup vegetable oil
2 tablespoons french vanilla soy creamer
Pie Filling:
2 cups canned pumpkin
1 cup french vanilla soy creamer
3/4 cup brown sugar
1/4 cup cornstarch
1 tablespoon dark corn syrup
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/2 teaspoon ground nutmeg
1/2 teaspoon salt
1/8 teaspoon ground cloves
Directions
Preheat an oven to 425 degrees F (220 degrees C).
Stir together all purpose gluten-free flour and 1 teaspoon salt. In a separate bowl, whisk together the vegetable oil and soy creamer until creamy. Pour oil mixture into flour mixture, stir with fork until blended. Pat the crust into the bottom and sides of a 9-inch pie pan. Bake for 15 minutes in preheated oven. Remove and set aside.
Decrease oven to 350 degrees F (175 degrees C). Place pumpkin, soy creamer, brown sugar, cornstarch, corn syrup, cinnamon, ginger, nutmeg, salt, and cloves in a mixer. Mix until combined. Pour into prebaked pie crust. Place foil around the edges of the pie crust and bake for 60 minutes or until a knife inserted 1 inch from crust comes out clean. Cool pie on counter for 2 hours then refrigerate overnight before serving. Serves 8.

Are you over whelmed about cooking your Turkey this year?
I just throw mine in the roaster & leave it! Here’s how to make a moist turkey with little effort!
Ingredients:
Turkey (your choice of size needed for all the ‘turkies’ you will be feeding)
1 stick Butter
Seasoning Salt (or Mrs. Dash)
3 Oranges
2 Yellow Onions
4 cups Water
Cut Oranges & Onions into 1/8 pieces. Place in a bowl & mix. (I take the skin off the onions but leave it on the oranges.) The benefit for putting these items in your turkey is that it flavors the meat from the inside, it adds a great touch to it!
Remove everything from the ‘butt’ of the Turkey, then put turkey in Roaster. You don’t need to line the roaster or put the Turkey in a bag, just stick in right in the roaster insert. Then stuff turkey with orange/onion mix. Pour 4 cups of water in roaster next to turkey. Pour melted butter over all the meat you can see. Then season with Seasoning Salt or Mrs. Dash as desired. Turn roaster on 320 degrees & let cook for 8 hours. The purpose in cooking it so long is so the meat literally will fall off the bone, your family carver may just be out of a job. (my husband is glad for this!) The turkey will taste moist through out.
I love cooking in my Roaster! Then my oven is free for everything else!
Use the juice to make your Homemade Gravy instead of water.

Cranberry Sauce
Ingredients:
12 ounces cranberries
1 cup white sugar
1 cup orange juice
Directions:
In a medium sized saucepan over medium heat, dissolve the sugar in the orange juice. Stir in the cranberries and cook until the cranberries start to pop (about 10 minutes). Remove from heat and place sauce in a bowl. Cranberry sauce will thicken as it cools. Serves between 8 – 12.
