Tomato Green Bean Soup

Tomato Green Bean Soup

Ingredients

  • 1 cup chopped onion
  • 1 cup chopped carrots
  • 2 teaspoons butter
  • 2 cups chopped chicken
  • 6 cups chicken or vegetable broth
  • 1 pound fresh green beans, cut into 1-inch pieces
  • 1 garlic clove, minced
  • 3 cups diced fresh tomatoes
  • 1/4 cup minced fresh basil or 1 tablespoon dried basil
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Instructions

In a large saucepan, saute onion and carrots in butter for 5 minutes. Stir in the broth, beans and garlic; bring to a boil. Reduce heat; cover and simmer for 20 minutes or until vegetables are tender.

Stir in the tomatoes, basil, salt and pepper. Cover and simmer 5 minutes longer. Yield: 9 servings.

One of the gals in my Mom’s Group makes this soup all the time for her family.  I tried it this week for the first time, and it’s amazing!  Not a normal creamy potato soup, but the lack of dairy makes it different and fab!

Potato Bacon Soup

Ingredients

    Soup
  • 12 Slices Bacon (I use Zaycon)
  • 1/2 Cup Celery, chopped
  • 1 Large Onion, chopped
  • 5 lbs red or yellow potatoes, skins on, cubed
  • Water
  • 1 tsp Salt
  • 1/2 tsp Nutmeg
  • 1/2 tsp Celery Salt
  • 1/2 tsp Pepper
  • 1/2 tsp Marjoram
  • 1 tsp Worcestershire Sauce
  • 1 tsp Parsley
  • 1 Cup Milk
  • Garnishes
  • Sour Cream
  • Cheddar Cheese
  • Broccoli
  • Peas

Instructions

To Make Soup

Saute Bacon, Celery and Onion in stock pot

Add potatoes and cover with water

Add Salt, Nutmeg, Celery Salt, Pepper, Marjoram

Bring to a boil, reduce heat, simmer 15 minutes

Mash the potatoes with Potato Masher

Add milk, Worcestershire, and Parsley

Bring to a boil, and then remove from heat

Garnish with any combination of Sour Cream, Cheddar Cheese, Broccoli, or Peas

To Freeze Leftovers

Separate cooled soup into Rubbermaid Containers or Ziplock bags (lay flat) and freeze.

Thaw in fridge or under running water.

Transfer to microwave soup and re-heat in microwave or on stove top.

This is such a wonderful recipe for using fresh spinach, your family is sure to love it as much as mine!

Spinach Tortellini Soup

Ingredients

  • 4 cans (14.5 oz) Chicken Broth
  • 4 cans Water (refill broth cans with water)
  • 2 (9 oz) bags of Cheese Tortellini
  • 3 cups chopped Fresh Spinach (can substitute 1 box frozen spinach)
  • 1 fresh minced Garlic Clove
  • 1 tsp Black Pepper

Instructions

In stock pan add broth, water, & spinach, bring to boil.

Then add garlic, pepper, & tortellini.

Turn heat down to medium, cook 15 minutes.

As an alternative, you can also add shredded chicken.

Serve with your favorite rolls.

Serves 6

Chipotle Chicken and Rice Soup

Chipotle Chicken and Rice Soup

Ingredients

  • Chicken and Rice Soup with Crispy Tortillas
  • Makes about 16 cups If you don't want to poach the chicken, use 3 cups cooked and shredded chicken. One rotisserie yields about 3 cups meat.
  • 2 tablespoons canola oil
  • 1 large onion, peeled, diced
  • 1 large green pepper, diced
  • 2 large chicken breast halves, each cut in half
  • 4 cups water, divided
  • 8 cups (or more as needed) homemade chicken stock or fat-free, less-sodium broth
  • 1 can (28 ounces) stewed tomatoes
  • 1 can (4 ounces) diced green chilies
  • 1 chipotle chili in adobo sauce, diced
  • 2 tablespoons chili powder or more to taste
  • 1 1/2 to 2 teaspoons favorite all purpose seasoning
  • 1 1/2 cups cooked Spanish-style rice
  • Salt to taste
  • For Serving
  • Baked tortilla strips (see note)
  • Shredded Mexican-style cheese, optional
  • Diced avocado, optional

Instructions

1. In a large stock pot heat the oil over medium heat. Add the onion and pepper and saute until translucent, about 5 minutes. Add the chicken breast pieces and 2 cups water. Reduce heat to a simmer. Cover the pot and poach the chicken about 15 minutes or until cooked and tender.

2. Remove the chicken (leave remaining ingredients in pot) and use two forks to shred the chicken. Return shredded chicken to the pot. Add the remaining 2 cups water, chicken stock, tomatoes, green chilies, chipotle in adobo sauce, chili powder and all-purpose seasoning. Simmer the soup about 45 minutes, uncovered. Taste and season with salt to taste. Stir in the cooked rice and simmer about 10 minutes more.

Serve the soup topped with baked tortilla strips and, if desired, shredded cheese and avocado.

I love this recipe!  It’s delicious, hearty, and easy to make!

Freezer Meal: Sausage and Lentil Soup

Ingredients

  • 1 lb ground Italian sausage or turkey sausage
  • 2 cups green lentils, rinsed
  • 1 large diced onion
  • 4 stalks diced celery
  • 3 diced carrots
  • 1 diced eggplant
  • 3 large cloves minced garlic
  • 1 teaspoon freshly ground black pepper
  • 1 tablespoon dried basil
  • 1 tablespoon dried oregano
  • 1/2 tablespoon dried thyme
  • 8-10 cups chicken broth
  • 2 (15 ounce) cans diced tomatoes, undrained
  • grated Parmesan

Instructions

Prepare for Freezing:

Cook the Italian sausage in a large frying pan over medium heat until it is cooked through.

Add all ingredients to crockpot except garlic and Parmesan.

Cook on low for 8-10 hours or on high for 4-5 hours.

Add the garlic an hour before soup is finished.

Once the soup is finished top it with shredded Parmesan.

Portion into ziploc freezer bags or individual containers, lay flat and freeze.

Prepare after Freezing:

Defrost in the fridge for up to 24 hours, and reheat in large stock pot (or microwave if in containers).

Ingredients

  • 1 (15-ounce) can white kidney or canellini beans, drained and rinsed
  • 1 tablespoon olive oil
  • 1/2 large onion, diced (about 1 cup)
  • 2 carrots, diced (about 1/2 cup)
  • 2 stalks celery, diced, (about 1/2 cup)
  • 1 small zucchini, diced (about 1 1/2 cups)
  • 1 clove garlic, minced
  • 1 tablespoon chopped fresh thyme leaves (or 1 teaspoon dried)
  • 2 teaspoons chopped fresh sage leaves (or 1/2 teaspoon dried)
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 32 ounces low-sodium chicken broth or vegetable broth
  • 1 (14.5-ounce) can no salt added diced tomatoes
  • 2 cups chopped baby spinach leaves
  • 1/3 cup freshly grated Parmesan, optional
  • 2 cups chunked chicken

Instructions

In a small bowl mash half of the beans with a masher or the back of a spoon, and set aside.

Heat the oil in a large soup pot over medium-high heat. Add the onion, carrots, celery, zucchini, garlic, thyme, sage, 1/2 teaspoon of salt and 1/4 teaspoon of pepper, and cook stirring occasionally until the vegetables are tender, about 5 minutes.

Add the broth and tomatoes with the juice and bring to a boil. Add the mashed and whole beans and the spinach leaves and cook until the spinach is wilted, about 3 minutes more.

Serve topped with Parmesan, if desired.
