Dinner Meal Plan

Wednesday: Chicken Ranch Tacos & Spanish rice
Freezer: 3 cups shredded Zaycon chicken
Pantry: 1 packet taco seasoning, 1/2 cup light ranch dressing, taco shells, and 1 box Spanish rice
Fridge: Shredded cheddar cheese
Shopping List: lettuce & tomatoes for tacos; tomatoes, cilantro, onions, jalapenos and limes for homemade salsa

Thursday: Crunchy Seafood Pop-ems (coat cubed firm, white fish w/ fat-free mayo & salt/pepper, roll in crushed Rice Krispies & bake 20 min on 400) and steamed broccoli/zucchini/peppers.
Pantry: Rice Krispies, salt, pepper, Fat-free mayo, salad dressing, ketchup
Shopping List: Firm, white fish (think tilapia, halibut or cod for example) and produce to steam

Friday: Fundraiser Spaghetti Feed at my daughters’ school.

Saturday: Beef and Broccoli Stir Fry (adapting the recipe because I have a stir fry seasoning packet on hand and I use brown rice)

Planning with the Fabs {Amber’s Valentine’s Day Menu}

You won’t see a Winco shopping trip post from me this week, and perhaps not for awhile. I will still shop there & still post if I have a knock-your-socks-off trip, but my focus each week is shifting towards meal planning.  So in place of my “Shopping with the Fabs” post each Wednesday, you will now see a “Planning with the Fabs” post where I will outline my weekly meal plan using my stockpiled ingredients.

So now that we’ve established the new norm, I’m going to deviate from it (seriously people, if you follow me you have to do so at your own risk.  I once served apple pie and ONLY apple pie to my family for dinner, so I’m not sure I can be trusted with this task. But to be fair it was THIS apple pie, so I think I should be forgiven) and present my Valentine’s Day menu.

Amber’s Valentine’s Day Menu

This menu involved pie and simplicity. What more can a girl ask for, really? See at the heart of it I have this overwhelming desire to be this rock star of a mom, but at the core of it I don’t have the time/energy/creativity to be Martha Stewart incarnate. So I simplify everything, dumb it down if you will. And eliminating the bells and whistles works for me. I can be in awe via Pintrest of the creative wizards around me, while I sprinkle a bit of powdered sugar dust on my day and call it good.

1. I Heart You French Toast: Make french toast. Rummage around in your utensil drawer until you’ve located last year’s heart-shaped cookie cutter. Place it on french toast and sprinkle powdered sugar inside the cutter. Wallah. Love Toast.

2. Hearty Eggs: Crack eggs into metal heart cookie cutter in small sauce pan and cook until white jiggly bits stop being jiggly.

3. Good-Till-the-Last-Bite Strawberry Pie: Bake frozen pie crust. While crust is baking, microwave frozen bag of strawberries until mashable, mash to desired chunky consistency & set aside (for a sweeter pie, you can add sugar to the strawberries at this stage. We’re dealing w/ a diabetic over here, so we don’t). Dissolve one small box of strawberry (or raspberry) Jell-O (we use sugar-free) into 1/3 cup boiling water. Mix Jell-O/water  w/ crushed strawberries & pour into now-baked pie shell. Refrigerate until solid. Serve w/ whipped cream.

4. Tickle Me Pink Smoothie: Throw some fruit, yogurt and juice in a blender. Blend. Pour into glasses and garnish w/ strawberries.
