Super easy and quick, these egg muffins were a hit with my family. Especially yummy served with ketchup or salsa. I forgot to move my oven rack from the middle position with this batch, so my muffins peaked a little more than they should have. Oops. Still good though!

Freezer Meal Recipes: Scrambled Egg Muffins with Sausage

Yield: 12 Muffins

Ingredients

Instructions

Adjust oven rack to lower-middle position and heat oven to 450. Grease a 12-cup muffin tin (baking spray with flour is recommended).

Microwave sausage in uncovered bowl until fat begins to render, about 1 minute. Drain the fat. In a separate bowl, whisk crackers, eggs, half and half together until combined. Stir in cheese, scallions, and drained sausage.

Slowly pour egg mixture into prepared muffin tin. Bake until the tops are set and lightly golden, 8-10 minutes, rotating halfway through. Let cool slightly, then loosen and remove the muffins from tin. Serve plain, with ketchup, or salsa.

Variations: Scrambled Egg Muffins

...with Sun-dried Tomatoes, Boursin, and Basil

Sub 3 Tbsp chopped oil-packed sun-dried tomatoes, patted dry, for sausage; do not microwave tomatos. Substitute Boursin Garlic and Fine Herbs cheese (5.2 oz), crumbled, for cheddar, and 1/2 cup chopped fresh basil for scallions.

...with Kielbasa, Pepper Jack, and Scallions

Sub 4 oz kielbasa sausage, cut into 1/3-inch pieces, for breakfast sausage; microwave as directed. Sub 1 cup shredded pepper Jack cheese for cheddar.

Preparing For the Freezer:

Let the muffins cool. Put them in a resealable freezer bag, remove as much air as possible, and freeze!

Prepare after Freezing:

Place 1 - 4 on a plate and microwave on medium-high (70%) power for 1 1/2 - 4 minutes (depending on how many) or until hot. For larger amounts, preheat oven to 325. Place muffins on baking sheet and reheat in the oven for about 15 - 20 minutes, until heated through. Keep an eye on them so they don't overcook.

These burritos are great for mornings on the go! I often warm them up for my husband as he’s getting ready for work. You could also send them off with your kids before school. Customize them however you like, there are all kinds of options!

Freezer Meal Recipe: Breakfast Burritos

Yield: 12-18 burritos

Ingredients

  • 1 pound ground pork sausage
  • 1 lb. frozen cubed Ore Ida potatoes
  • 12 eggs, beaten
  • 2 T. milk
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 2 T. butter
  • 2 10 oz. cans green chili sauce
  • 12-16 burrito sized flour tortillas (I used regular size whole wheat tortillas this time and was able to make about 10 burritos.)
  • 2 cups cheddar cheese, grated

Instructions

To prep the burrito ingredients:

In a large skillet, brown the sausage. Remove from heat and drain excess fat. Set aside. Brown potatoes in oven by placing them on a baking sheet and broiling according to package instructions until crisp. Meanwhile, mix eggs, milk, salt and pepper together in a medium mixing bowl. Over medium heat, melt the butter in separate large skillet. Add egg mixture to skillet and scramble the eggs, removing from heat once the eggs are cooked but still moist. Warm green chili sauce over medium heat in saucepan until warmed through.

To assemble the burritos and prep to freeze:

Warm the flour tortillas on skillet or in the microwave until soft and flexible. Fill tortillas with 1/3 cup scrambled eggs, 2-3 T. sausage, and 1/3 cup potatoes. Top with cheddar cheese and green chili sauce according to taste. Fold tortillas snuggly into burritos. Wrap each burrito in plastic wrap, then place in freezer bags. Freeze.

On serving day:

Remove burrito from freezer and remove plastic wrap. Wrap in a paper towl and place in microwave on defrost for 3 minutes, then on high for 1 minute. Let cool and enjoy with sour cream or salsa!

Freezer Meal Recipe: Pizza Breadstick Casserole

This casserole delight brings the best flavors of pizza to the table: bread and cheese! Oh and tomatoes, sausage, and veggies too. Another great thing about this meal is that you can adapt the filling ingredients to what is in season and to what you have. No zucchini? Easily sub in a different vegetable (corn, winter squash, green beans, etc.). The meat can also easily be subbed with ground beef or turkey, pepperoni, cooked chicken, etc.

I use my favorite breadstick recipe for the full 9×13 pan. When I am only making a 8×8 or 9×9 pan of it, I use half of the breadstick dough for the top of the casserole and make breadsticks with the other half. We love breadsticks! But you can even use just 1/2 of the breadstick dough recipe for a full 9×13 pan, if that suits you better.

Pizza Breadstick Casserole Recipe

Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 1 bell pepper, green, red or yellow, diced
  • 2 medium zucchini, cut into rounds
  • 2 cloves garlic, chopped
  • 1 jar red pasta sauce or homemade sauce
  • 9-12 ounces fully cooked chicken or turkey sausage, sliced
  • 1/4 cup grated Parmesan cheese, divided
  • 2 cups shredded mozzarella cheese, divided
  • 1 recipe homemade breadstick dough or refrigerated breadstick dough
  • Homemade Sauce:
  • 2 14.5-oz cans diced tomatoes, drained
  • 16 ounces tomato sauce
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

Preheat oven to 350. Grease a 9x13 baking dish and set aside.

Heat oil over medium heat in a large nonstick skillet. Add the onion and diced pepper. Cook, stirring occasionally, for 4-5 minutes, until the onion is translucent and the pepper is tender. Add the zucchini and garlic. Cook for 2-3 minutes, until just tender. Stir in the pasta sauce (or all ingredients for the homemade sauce) and the sausage. Cook for 5 to 7 minutes until the liquid is somewhat reduced. Stir in 2 Tbsp of Parmesan. Spoon half of the mixture into the prepared dish. Sprinkle 1 cup mozzarella cheese over the top. Spoon the other half of the sauce over the cheese and sprinkle another 1/2 cup mozzarella over the top. Arrange bread sticks in a lattice pattern on the top, trimming to fit, if necessary. Sprinkle remaining Parmesan and mozzarella over dough.

Bake 25-30 minutes, until the breadsticks are golden brown and the filling is hot and bubbly. Let stand 5-10 minutes before serving. Serves 8-10.

Preparing for the Freezer:

The sauce mixture with sausage, veggies and cheese freezes well. Prepare it and split it between two 8x8 or 9x9 pans. (If you don't have pans to spare, you could probably just freeze it in gallon resealable freezer bags.) We get about 5-6 servings from each pan.

Preparing after Freezing:

Let it thaw in the refrigerator for about 24 hours. Then prepare the breadstick dough and place it on top of the mixture before baking.

We love to make homemade pizza. I got this pizza dough recipe from my mom years ago. I taught my husband how to make it when we were first married. I really should teach him more recipes. :)  Because when it is time to make pizza he is willing to make the pizza dough. He does a great job and it is nice to have his help in the kitchen.

I like to mix my pizza dough in my Bosch mixer or a Kitchen Aid.
You can certainly mix it by hand, but it is MUCH easier in a mixer.

Homemade Pizza Recipe

Yield: One 15 inch pizza crust

Ingredients

  • 3 ¼-4 Cups Flour
  • 2 Tablespoons Oil
  • 1 Teaspoon Salt
  • 1 Tablespoon Yeast
  • 1 ¼ Cups Warm Water
  • 1 Tablespoon cornmeal (optional)
  • Pizza Topping:

Instructions

Mix flour, salt, and yeast. Add warm water and mix. Then add oil and mix.

Knead dough until smooth and roll it out in a circle and place it on a pizza pan.

Before placing the dough on the pizza pan, lightly spray pan with cooking spray and sprinkle it with flour or cornmeal.

Score the dough with a fork many times across the surface.

Bake dough for 10 minutes at 375°.

Pizza Toppings:

3/4 Cup Pizza sauce (I used Prego)

1 ½ Cups of Mozzarella Cheese (Cheese Coupon)

Pepperoni

Olives

Sausage

Mushrooms

Onions

Peppers

Pineapple

Ham

Bacon

Chicken

Cover pizza crust with sauce, then cheese, and then add your desired toppings.

Bake pizza at 375º for an additional 15 minutes or until cheese is bubbly.

Freezer Meal Recipe: Baked Pasta with Chicken Sausage

Baked Pasta with Chicken Sausage

  • 1 Tbsp olive oil Olive Oil Coupons
  • 1 medium red onion, chopped
  • 4 cloves garlic, minced
  • 1 (14.5 oz.) can diced tomatoes Tomatoes Coupons
  • 1 (14.5 oz.) can crushed tomatoes
  • 1/2 tsp dried oregano
  • 1/2 tsp dried basil
  • 1/2 c heavy cream
  • 1 lb rigatoni Pasta Coupons
  • 10 oz frozen baby spinach, thawed and drained well (or substitute 1 9-oz. bag fresh spinach)
  • 12 oz precooked smoked chicken (or turkey) sausage, halved lengthwise and sliced 1/4 inch thick Sausage Coupons
  • 8 oz mozzarella cheese, 4 oz cut into 1/2-inch cubes and 4 oz shredded (I just used all shredded) Cheese Coupons
  • 1/4 c grated Parmesan cheese

Bring a large pot of salted water to a boil for the pasta. Heat oil in a large skillet over medium heat. Add onion; cook until translucent, about 3 minutes. Stir in garlic. Cook for another minute.
Stir in tomatoes, oregano and basil; simmer for 8-10 minutes. Add cream; cook until warmed through, about 5 minutes. Season sauce with salt and pepper to taste.
Meanwhile, preheat oven to 400 degrees. Cook pasta in the boiling water until al dente, according to package instructions. (If using fresh spinach, add it to the pot of boiling pasta right at the end and cook until wilted.) Drain, and return contents to pot.
Add tomato sauce, sausage, spinach and cubed mozzarella to the pot; toss to coat. Season with salt and pepper. Scoop pasta into lightly greased 9×13 pan (or divide evenly between two 8×8-inch pans). Top with grated mozzarella and Parmesan. Bake until browned and edges are crisp, 20 to 30 minutes.

With my smaller family, it works well to save half of this dish as a freezer meal.
Freezer Meal: Prepare recipe right up until the baking step and then cover with a double layer of aluminum foil. Freeze. Thaw in the refrigerator for 1 to 2 days. To bake, increase baking time to 1 to 1 1/4 hours. If baking from frozen, bake covered for 1 hour and 15 minutes, uncover and bake 30 minutes longer.

Freezer Meals : { Sausage Hash }

Sausage Hash is one of the favorite freezer meals in our group. Everyone seems to love it, even the picky eaters! If you do not have time to start a freezer meal group you DO have time to cook this meal triple and freeze two for later! This recipe is so easy…

I love that this recipe calls for carrots! Sneak some veggies in my families diet! Doesn’t that orange color look beautiful?

In order to make Sausage Hash triple batch for freezer meals, you will need…

  • 3 lbs ground sausage
  • 3 c. shredded carrots (about 3 carrots)
  • 1½ c. finely chopped onion (or 1½ t onion powder if you do not have onion on hand)
  • 9 c. frozen potatoes cubes (this is the easy way, you can also bake potatoes and cube them, that is the frugal way!)

Cook ground sausage thoroughly in pan. Add onion and carrots and cook for 5 more minutes.

Add potatoes and simmer for 20 minute. Check and stir often. Add salt and pepper to taste.

Set aside 2/3 or your meat mixture and let it cool.

Sprinkle sausage and potatoes with cheese.

Let melt and serve.
