The best thing about this recipe is that the dough is so versatile. You can use this dough to make rolls, hoagies or loaves. I use it to make the Ham & Broccoli Spiral Rolls and the Cheesy Ham & Broccoli Braid. It can be used to substitute for 2 cans of Pillsbury crescent roll dough too. If you have some time to wait for rising, you can just whip up this dough from scratch.

French Bread Recipe

Ingredients

  • 1 Tbsp active dry yeast
  • 1 1/2 c warm water
  • 1 1/2 Tbsp sugar
  • 1 tsp salt
  • 4-5 1/2 c flour
  • 3 Tbsp vegetable oil
  • 1 egg, separated
  • 2 Tbsp cold water

Instructions

Combine yeast, water, and sugar in large mixing bowl and allow to stand 10 minutes or until bubbly.

Add salt, vegetable oil, and egg yolk (set white aside for later) and combine. Add 3 c. flour and mix well until combined. Add enough flour until the dough pulls away from the sides of the bowl and is soft, smooth, just barely tacky. Knead for another 5 minutes in the mixer (a little longer if by hand).

Cover and let rise until double (about 1-1 1/2 hrs).

Punch down dough. Shape into rolls, buns, or loaves. Cover and allow to rise another 1-1 1/2 hours or until doubled. Keep an eye on it.

Preheat oven to 375. You can slash the top of the loaf if using a razor sharp knife. Mix egg white with water and gently brush over dough. Bake for 10 minutes and repeat brushing the dough with the egg wash. Rotate pan, if needed for even browning. Bake an additional 8-12 minutes or until bread is golden brown. Cooking time may vary with the size of your rolls or loaves.

If you want to try to freeze the dough, put it in a greased resealable bag after the first rise. Then, take it out of the freezer about 6-8 hours beforehand. Then shape, let it rise, and bake.

You can freeze the baked product as well.

My daughter wants these ALL the time, but they are especially fun for Easter!
Using my favorite Sour Cream roll recipe, I call this my Walk Away Bunny Biscuits Recipe (even though they are really rolls-I guess I could call them Rabbit Rolls, but that’s not as fun!).  I call them Walk Away because you do a step and then can walk away for a few minutes, and when they are done, they just disappear!  Just remember to set your timer!

Walk Away Bunny Biscuits Recipe

Ingredients

  • 1 cup (8 ounces) sour cream
  • 1/4 cup water
  • 2 tablespoons butter
  • 2-1/2 to 3 cups all-purpose flour
  • 2 tablespoons sugar
  • 1 package (1/4 ounce) active dry yeast
  • 1 teaspoon salt
  • 1 egg

Instructions

Put the butter, the sour cream and water in a small saucepan and heat over medium until melted, but do not cook (about 5 minutes if directly from fridge).

Cool to tepid (about 10 minutes)

Add the remaining ingredients into your Kitchen Aid w/Bread Hook attachment , then add sour cream mixture to top. Mix until blended and then let knead on medium speed for 5-8 minutes

Let it rise to double the size (about 45 minutes) and cut into 16 or 32 equal parts. I flop the whole thing out onto a floured counter, and cut it into fourths, then each fourths into fourths. If I want smaller rolls, I cut each 4th in half.

Place on baking tray lined with baking paper or Sil Pat and cut the ears with scissors. Use the scissor points to make the eyes

Bake at 375° for about 10 minutes or until golden brown.

When I have leftover ham I like to make the Cheesy Ham & Broccoli Braid and/or the savory Spiral Roll recipe below. You can certainly substitute turkey or chicken for the ham, if that’s what you have.

Ham & Broccoli Spiral Rolls Recipe

Ingredients

  • 1 recipe roll or french bread dough or pre-made roll dough (yielding about 12 rolls)
  • 12 oz cream cheese, softened
  • 1/4 c (1/2 stick) butter, softened
  • 2 c chopped ham
  • 1 1/2 c finely chopped broccoli
  • 2 c shredded cheese (Swiss or cheddar, etc)
  • 1 c Parmesan
  • 1 c finely chopped green onions

Instructions

Follow the recipe for your dough until the dough has risen. Punch it down and roll the dough out into a large rectangle about 1/2-inch thick.

In a small bowl, cream together the butter and cream cheese. Spread the butter/cream cheese mixture onto the rolled out dough. Sprinkle the ham, broccoli, cheese, Parmesan cheese, and green onions onto the dough. Roll the dough up (like cinnamon rolls), pinching the seam to seal. Slice the roll into about 1-inch segments (I like to use floss to cut rolls of dough). Place the rolls on a lightly greased baking sheet (or use a silicone baking mat) and cover with plastic wrap. Let the rolls rise until nearly doubled and bake at 350 degrees for about 20 minutes, until lightly browned and bubbly.

I usually bake all of the rolls and freeze the leftover ones.

Quick & Easy Cinnamon Butter Recipe

Directions

Place all ingredients into a medium size mixing bowl and beat until smooth. Serve right away with hot rolls or fresh bread. (I actually prefer to chill about 30 minutes first, but you don’t need to). Store in an air tight container in the refrigerator. Yields about 1 1/2 cups.

Potato Dinner Roll Recipe

This is my families favorite roll recipe. My dad has been making these rolls since I was little. We would always have them when ever we had company for dinner. Everyone always loved the dinner rolls. I hope you love them too.

Ingredients:

1 Cup Instant Mashed Potatoes
2 Eggs
1 Tablespoon Instant Active Yeast (I use the Saf Instant Yeast)
1 ½ Cup Hot Water
2/3 Cup Butter plus 1/4 Cup
2/3 Cup Sugar
1 ½ Teaspoons Salt
4-6 Cups of Flour
Make 1 cup of mashed potatoes or instant mashed potatoes. Mix with eggs, yeast and hot water. Add 2/3 cup melted butter, sugar and salt. Mix in 4 cups of flour.

Refrigerate dough for two hours. Knead in the remaining 2 cups of flour after refrigerating.

Roll out dough and lightly butter the a baking sheet. My favorite Jelly Roll Pan!

Use round cups to cut out the dough. Melt 1/4 cup butter in a bowl. Lightly brush the inside and top with butter. Check out these great cups for kids that are perfect for cutting dough.

Fold dough in half and place on the lightly buttered baking sheet.

Rolls are ready to rise.

Cover rolls with a clean towel and allow them to rise until doubled. To speed up rising time you can place them in the oven at the lowest temperature. No more than 170º. Rising time can take about an hour, depending on the warmness of your kitchen.

Bake in oven 350º for 15-20 minutes until tops are golden brown. (Optional) Brush with any additional butter when they come out of the oven.

Homemade Hamburger/Hot Dog Buns

I looove me some good rolls (well any carb really, but who’s counting), so I am always disappointed in the buns I buy for my BBQs. They almost lessen the deliciousness of a good burger! Jenn over at A Cook’s Quest has solved that problem! These homemade rolls are PERFECT (and delicious to boot!).

**Cook’s Note-When I first made these I was afraid of making them too thin.  Wrong thing to worry about!  They get nice and fluffy so if you make them too thick you will end up with bread bowls and not buns.  Still tasty but, a bit bulky for burgers!**

Ingredients:

1 cup milk
1/2 cup water
1/4 cup butter
4 1/2 cups all-purpose flour
1 (.25 ounce) package instant yeast
1 tablespoons white sugar
1 1/2 teaspoons salt
1 egg

Directions:

In a small saucepan, heat milk, water and butter until very warm, 120 degrees F (50 degrees C).

In a large bowl, mix together 1 3/4 cup flour, yeast, sugar and salt. Mix milk mixture into flour mixture, and then mix in egg. Stir in the remaining flour, 1/2 cup at a time, beating well after each addition. When the dough has pulled together, turn it out onto a lightly floured surface, and knead until smooth and elastic, about 8 minutes. Let rest for about 45 minutes to an hour (longer if you have used regular yeast instead of instant).  Punch down.

Divide dough into 12 equal pieces. Shape into smooth balls, and place on a greased baking sheet. Flatten slightly. Cover, and let rise for 15 to 30 minutes. Remember you don’t want tall dinner rolls so this is just a rest!

Just before the rolls going into the oven you can brush them with egg wash and sprinkle with sesame seed if you like. Bake at 400 degrees F (200 degrees C) for 10 to 12 minutes, or until golden brown.

**For Hot Dog Buns: Shape each piece into a 6×4 inch rectangle. Starting with the longer side, roll up tightly, and pinch edges and ends to seal. Let rise about 20 to 25 minutes. Bake as above. These buns are pretty big. I usually make 16 instead of 12.

Quick & Easy No Knead Yeast Rolls

Last Sunday was rainy and cold.  Just the right kind of day for my favorite Quick Comforting Chicken Noodle Soup.  As usual, I didn’t plan ahead, and I really wanted some rolls to go with the soup.  I’m not a patient one either, so I didn’t want to wait for rolls that had to rise twice.  After a quick little google for “Quick and Easy Rolls” I found this gem of a recipe from Confessions of a Pagan Soccer Mom.  I made it, and we loved it!  They weren’t pretty, but they sure tasted good and really were easy!!

Quick & Easy No Knead Yeast Rolls

2 1/2 tsps (2 envelopes) yeast
2 cups warm (not hot) water
1/2 cup sugar
1/4 cup canola oil
1 egg
2 tsp salt
6 cups bread flour (or all-purpose)

Preheat oven to low heat (180-200 degrees). Mix yeast in 2 cups warm (not hot) water and stir until completely dissolved. Add sugar, oil, egg and salt; stir well. Add flour. Stir well. Dough will be stiff and sticky. Brush the top of the dough with canola oil and set on the back of the warm stove. Let set until doubled in size. (I turned the oven off, covered the dough with a damp towel and let it rise for about 90 minutes).

Punch dough down one time and reform into a ball. Grease a 9″x13″ pan. Turn oven up to 350 degrees. Grease your hands and form dough into 20-24 balls. Bake for 20-30 minutes.  (We got about 28 balls out of ours).
