Shrimp Curry Recipe

shrimp curry I’m very new to the world of curry or any Indian food. In fact, this is the first curry recipe I’ve made. My taste buds are fairly simple and plain overall. ;) I really love this dish though. It is the reason I have turmeric, curry powder, and coriander in my pantry. It is almost like a stew and it provides a comforting combination of delicious, subtle flavors. A nice way to diversify the menu! I have made this for a few different groups of people and they all loved it!

Shrimp Curry

Ingredients

    Shrimp Marinade:
  • 1/2 tsp kosher salt
  • 1/4 tsp ground black pepper
  • 1/8 tsp cayenne pepper
  • 2 Tbsp freshly squeezed lemon juice (from about 1 lemon)
  • 1-2 lbs medium or large shrimp, peeled and deveined
  • Sauce:
  • 1 Tbsp canola oil
  • 1 medium red or yellow onion, finely chopped
  • 1 tsp ground pepper
  • 1 Tbsp minced fresh ginger, from about a 1-inch peeled piece of ginger
  • 1/2 - 1 Tbsp kosher salt
  • 2 garlic cloves, finely minced
  • 2 tsp ground coriander
  • 1/2 tsp turmeric
  • 1 tsp curry powder
  • 1 (14.5-oz) can diced tomatoes, undrained
  • 1 can coconut milk, light or regular (See canned coconut milk on Amazon)
  • 1 c chopped fresh cilantro

Instructions

(It is usually cheaper if you do the peeling and deveining of the shrimp yourself.)

Note: I have used 1 tsp dried ground ginger because I did not have fresh ginger. But for the best flavor, use fresh ginger. You can freeze fresh ginger! Peel it and wrap it in plastic wrap. Then put it into a plastic bag and freeze it. When you need to use it, just grab it out of the freezer and grate the ginger with a fine grater. Easy way to keep “fresh” ginger on hand all the time.

For the shrimp marinade: Toss the shrimp with the salt, pepper, cayenne and lemon juice in a resealable large bag or bowl. Refrigerate for 15-20 minutes.

Meanwhile, in a medium-sized pot, heat the oil over medium heat until rippling and hot. Add onion and cook for 2-3 minutes. Stir in pepper, ginger, salt, garlic, coriander, turmeric and curry powder. Continue cooking over medium heat, stirring often, until the mixture is fragrant and the onion is soft and translucent, about 5-7 minutes. Add the undrained tomatoes to the pot and cook, stirring and scraping up the browned bits from the bottom, for about 1 minute. Increase the heat to medium-high and simmer for 5-10 minutes, stirring often. Add the coconut milk, stirring to combine. Bring the mixture to a boil and add the shrimp and any accumulated juices from the marinade. Bring the mixture to a simmer and cook until the shrimp are curled, lightly pink and cooked through, about 2-4 minutes. Stir in the cilantro. Serve over hot, cooked rice, if desired.

Chicken, Broccoli and Rice Bake { 7 Easy Steps }

Being the oldest of 5 children I had to make many meals to help my mom. This is the first real dinner (other than macaroni and cheese from a box or hot dogs in the microwave)  I learned to make when I was about fourteen. My family always loved it. My children now love it too. It is so simple even a teenager could make it.

Ingredients:

1 cup rice Rice Coupon

1 T Butter Butter Coupons

2 cups water

1 cup chicken chicken deal

1 can cream of chicken Condensed Soup Coupon

1 ½ cups of Shredded Cheddar Cheese Cheese Coupon

1/2 cup Milk Milk Coupon

1 1½ cups of broccoli

salt/pepper to taste

Preparation:

1. Cook chicken or turkey and cube.

2. To prepare rice. Bring water and butter to boil, add rice and cover. Cover and place heat on low. Simmer for 20 minutes.

3. Steam broccoli until tender.

4. Shred cheese.

5. Mix together rice, cream soup, milk and salt/pepper. Add chicken/turkey and 1/2 cup of cheese.

6. Place in 13×9 pan and add broccoli on top. Gently press broccoli into rice mixture. Top with cheese.

7. Bake uncovered at 350° for 20-25 minutes.

Chicken and Rice Soup Recipe

Quick and easy comfort soup. I made this soup with ingredients that I had on hand in my pantry. You can dress it up more with more vegetables to make it more hearty, healthy and filling. Remember cooking from your pantry is fun because you can be flexible and add more ingredients to use up in your pantry or use less if that is what you have on hand and it still turns out great!

Ingredients:

2-3 Cups of Chicken ( I get mine from Zaycon)
1 cup (before Cooking) White Rice
8 Chicken Bouillon Cubes
2 quarts  Water for soup stock
2 cups water for rice
1 cup corn
3 carrots
1/4 cup Onion
1/4 cup Bell Pepper
1/4 cup Celery
7 Tablespoons Butter ( Coupons for Butter )
4 Tablespoons Flour ( Coupons for Flour )


Start by cooking your chicken. You can do this in your crock pot or in a stockpot. Add chicken to 2 quarts of water, add chicken bouillon and cook in crock pot on low for 3-4 hours or in stockpot bring water to a boil and reduce heat cooking chicken for about 20 minutes or until done.

Cook your rice. In a pan bring 2 cups of water and 1 T of butter to a boil. Add rice and reduce heat to low and cover. Cook white rice for 20 minutes or brown for 40 minutes. I did brown rice in this recipe because it is healthier than white rice. My family prefers white rice, but will eat the brown rice with our complaint.


Slice your vegetables of choice and saute in a pan with 2 tablespoons of butter. Add to chicken.

Melt 4 T butter in sauce pan and add 4 T flour to make a roux!
Stir until thickened, than add it to the chicken in your stock pan or crock pot. Add rice and stir soup until uniform.

Chicken & Rice Bowl

 

 

4 Chicken Breasts
1/2 Cup Yoshidas Original Sauce
1 t – 1 T Tabasco Sauce (optional)
1 cup uncooked white rice
2 cups water
1 T butter or margarine
Stir Fry Vegetables: Broccoli, peppers, onions (optional)

  • Grill or bake chicken until cooked through.
  • To cook rice bring 2 cups of water to boil. Add butter. Add rice and cover. Turn heat down to low and simmer covered for 20 minutes.
  • Slice chicken into long thin slices.
  • Top with Yoshidas sauce. If your family likes spice, add Tabasco sauce according to spicy preference.

Easy Crockpot Italian Chicken and Rice

Thanks to our reader Nora for submitting this recipe!  I’ve got some some Italian Salad Dressing in my stockpile that needs to be used (plus a freezer full of Zaycon chicken), so this is a perfect solution!  Nora says this is her family’s favorite recipe.

Easy Crockpot Italian Chicken and Rice

  • Place desired amount of Chicken (whichever cut your family prefers)
  • Pour 1-2 bottles of Italian Salad Dressing over the chicken (depending on how much chicken you have in there)
  • Cover and cook until the chicken either pulls away from the bone or the breasts start to separate.
  • Just before serving,  cook rice
  • Serve chicken over rice.
