Sweet & Sour Meatballs Recipe

I love this dinner. Easy and delicious! I must confess that I have never made meatballs from scratch though. The frozen meatballs from Costco are sometimes about the same cost as ground beef. So, I just whip up the sauce recipe below and pull out big bag of delicious frozen meatballs for this meal. If the next time I need some meatballs, the frozen ones are not comparable in price, I would not hesitate to try this meatball recipe though. ;)

Sweet and Sour Meatballs

Meatballs:

  • 1 1/2 lbs lean ground beef
  • 3/4 c quick oats
  • 2 eggs, slightly beaten
  • 1/2 c finely chopped onion
  • 1/2 c milk
  • 1 tsp salt Salt Coupons
  • 1/2 tsp pepper
  • 1 tsp Worcestershire sauce Worcestershire Coupons

Combine all of the ingredients and mix well. Form into about 12 balls, each about 2 inches in diameter. Place in a casserole dish. Cover with sauce (below). Bake at 350 degrees for about 30 minutes. Serve over rice. Serves 4-6.

Sauce:

Combine ingredients and blend thoroughly. Heat in a small saucepan until combined and sugar is dissolved and pour over meatballs. (If you enjoy things a bit saucier, double the sauce ingredients.)

Freezable Meal: After covering the meatballs with sauce, cover the pan with two layers of aluminum foil and freeze. To bake, preheat the oven to 350 degrees and bake covered without thawing for 1 hour. Uncover and bake 20-30 minutes more, until meatballs are cooked through.

Meatballs!

I recently purchased Don’t Panic-Dinner’s In The Freezer from Amazon and I am in LOOOOVE! It has tons of great recipes and tips for making meals ahead of time. One of my new favorites is the meatball recipe! They’re delish and great to have on hand because there’s so many different ways to use them!

Ingredients

1 1/2 lbs. ground meat
1/4 cup dry bread cumbs
1/3 cup onion, chopped
1/4 cup milk
1 egg
1 Tbs. parsley flakes
1 tsp. salt
1/8 tsp. pepper
1 Tbs. Worcestershire sauce

Cooking Day Instructions

Combine all ingredients and mix together gently. Shape into balls and arrange on cookie sheet. Cover meatballs and flash freeze. (place in freezer for short period of time to freeze so they hold they’re shape and don’t stick together.) Remove them from the freezer and place into ziploc freezer bags. Remove as much air as possible and seal. Place back in the freezer to use later!

Serving Day Instructions

Thaw meatballs completely and cook for 30 minutes at 350 degrees.  Remove from pan and allow to cool.

Yields 20 meatballs.

These are great because they can be used in a variety of different meals. They can be served as an appetizer with BBQ sauce, cooked for sandwiches, served with spaghetti sauce, or covered with a cream sauce and placed over pasta/rice and lots more!!

Now the trick is just remembering to take them out of the freezer to thaw ;)
