Healthy Banana Blueberry Muffins

If the bananas start getting a little too ripe, I gladly turn to this Banana Quinoa Waffle recipe or this yummy muffin recipe. They both freeze well too! These muffins are moist and delicious, yet healthy enough that you could get away with serving them for breakfast or a snack.

Banana Blueberry Muffins

Yield: 12 muffins

Ingredients

Preheat oven to 375. Lightly grease 12-cup muffin tin with cooking spray. Set aside.

In a large bowl, beat together the butter, yogurt and sugars until light and fluffy. Add the eggs and applesauce and beat well. In a blender or food processor, process the oats until they are finely ground. Add the wheat flour, baking soda and salt and pulse one or two times until the dry ingredients are lightly combined. Pour the dry mixture into the wet mixture and mix until just combined.

Mix in the lightly mashed bananas. Sitr in the milk and vanilla. Toss the blueberries with the 2 tsps flour and then very gently fold them into the muffin batter. Divide the batter evenly among the 12 muffin cups. Bake for 20-22 mins or until a toothpick inserted in the center comes out clean. Let the muffins cool in the pan for about 5 mins, then turn out onto a wire rack to cool completely.

Almond Oat Pumpkin Cookie Recipe {Healthy}

I’m still keeping an eye out for fun pumpkin recipes, obviously. ;) These cookies are dense, moist, and nutritious. They reminded me slightly of chocolate chip pumpkin bread. Mmm. My kids loved them too! These are great for healthy treat, snack, or even a breakfast on-the-go.

Almond Oat Pumpkin Cookies

  • 1 c quick oats
  • 2 c oat flour (about 2 c oats in food processor until a powder)
  • 1/2 c finely ground raw almonds (about 1/2 c raw almonds in food processor)
  • 1 1/2 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/8 tsp of salt
  •  1/2 c pure maple syrup
  • 1/4 c honey
  • 1 c pure pumpkin puree
  • 1 large very ripe banana, mashed
  • 2 egg whites
  • 1 tsp pure vanilla extract
  • 1/2 c chocolate chips (I used half white and half dark chocolate)

Get your food processor out and process the oats and then the almonds. (See my ground almonds pictured above.)

Preheat the oven to 350 degrees.

In a medium bowl, gently whisk together the oats, oat flour, almonds, cinnamon, nutmeg, baking soda, baking powder, and salt until combined. Set aside.

In another medium or large bowl, whisk together the maple syrup, honey, pumpkin, banana, egg whites, and vanilla until combined.

Stir the dry ingredients into the wet. Stir in the chocolate chips.

Use a cookie scoop to place scoopfuls of batter on a cookie sheet lined with parchment or a silicone baking mat. Bake for about 10 minutes total. Half-way through, flatten the cookies a bit with the back of a spoon, then continue to bake until the cookies are set and a soft golden color on top. Let cool on the cookie sheet for 5 minutes, then finish cooling on a wire rack. I think these are especially yummy when served warm.

Veggie Pita Pizza Recipe

I was surprised to find that I really liked this Veggie Pizza. We got to make it with the Supervalu team in June at a blogger event. Cathy and I could not get enough of it. We could hardly believe that it had no cheese in it, was filled with edamame and was healthy!  Try this recipe out for your next party. You and your friends will love it!

Ingredients:

1 cup Fat Free Cottage Cheese
½ (8 ounce) package Cream Cheese, softened
½ (1 ounce) packet Dry Ranch Seasoning Mix
4 whole wheat pitas
1 cup Shredded Reduced Fat Sharp Cheddar Cheese
4 cups fresh veggies (shredded carrots, chopped broccoli, chopped cauliflower, chopped red and
yellow bell pepper, shredded zucchini)

Directions:

1. Combine cottage cheese, neufchâtel cheese and ranch seasoning mix in a food processor or
blender.
2. Purée until well combined and smooth. Spread over pitas.
3. Top with shredded cheese and veggies. Cut each pita in quarters.

Easy Cheesy Quinoa Bites

Lets me start out by saying, I heart Quinoa! (Pronounced ki-nwa) It is a whole grain substitute for rice and just as easy to cook. It’s very versatile (more so than rice in my opinion) so there are a ton of great recipe ideas out there or you can just eat it plain. It’s gluten-free, low glycemic, high in fiber and provides the 8 essential amino acids creating a complete protein. Basically its a superfood! Here’s one of our new favorite ways to use it!

Ingredients

2 cups quinoa, cooked (Usually found near the other grains/rice at the store, I buy mine at Costco.)
2 large eggs, beaten
1 cup finely shredded carrot
1/2 cup finely chopped spinach (I use my food chopper)
2 cloves garlic, minced
1/2 cup fresh grated Parmesan cheese printable coupons
2 Tbs. all purpose flour
1/2 tsp. seasoning salt
1/4 tsp. fresh ground pepper

Directions

Preheat oven to 350 degrees. Coat a mini muffin pan with cooking spray. I usually get my quinoa started first it takes about 15 min to cook. Meanwhile I get the other ingredients ready. When the quinoa is done, mix together all ingredients in a large mixing bowl.

Scoop into mini muffin pan. I like to use a small ice cream scoop for even distribution. This batch size fills my 24 ct mini muffin pan perfectly!

Bake for 15-20 minutes or until firm but not crispy! Let cool. Enjoy with your favorite dipping sauce!

My kids love to dip these in French’s Honey Mustard and I’m a hot sauce girl myself. This recipe could be altered in so many different ways it’s awesome. I plan on trying it with cilantro (instead of the spinach) and shredded grilled chicken next time!

Coupons.com - Our favorite site to print coupons is Coupons.com . They often have coupons for organic brands like Muir Glen, Newman’s Own,  Seed’s of Change, Cascadian Farms, Snikiddy, and more.  They also offer coupons for milk. yogurt, cheese, organic agave nectar, organic sweeteners and Dole Salad blends. One secret I like to share in our coupon classes is that if you use zipcode 90210 on Coupons.com you can often find more coupons for organic brands.

Coupon Database – Our coupon database is a great resource for coupons. If you search the word organic you can find a huge list of organic coupons.

Facebook – Organic food manufacturers want people to buy their organic products just as much as other manufacturers. Think of your five favorite organic food companies and  go like them on facebook. Then see if they are offering any coupons.

Manufacturers - Organic manufacturers are a great source for organic coupons. Organic manufacturers will often offer organic coupons on their websites. You can also write to organic manufacturers and ask for coupons! This is also a good way to get high value coupons.
