We love to make homemade pizza. I got this pizza dough recipe from my mom years ago. I taught my husband how to make it when we were first married. I really should teach him more recipes. :)  Because when it is time to make pizza he is willing to make the pizza dough. He does a great job and it is nice to have his help in the kitchen.

I like to mix my pizza dough in my Bosch mixer or a Kitchen Aid.
You can certainly mix it by hand, but it is MUCH easier in a mixer.

Homemade Pizza Recipe

Yield: One 15 inch pizza crust

Ingredients

    homemade pizza dough:
  • 3 ¼-4 Cups Flour
  • 2 Tablespoons Oil
  • 1 Teaspoon Salt
  • 1 Tablespoon Yeast
  • 1 ¼ Cups Warm Water
  • 1 Tablespoon cornmeal (optional)
  • Pizza Topping:

Instructions

Mix flour, salt, and yeast. Add warm water and mix. Then add oil and mix.

Knead dough until smooth and roll it out in a circle and place it on a pizza pan.

Before placing the dough on the pizza pan, lightly spray pan with cooking spray and sprinkle it with flour or cornmeal.

Score the dough with a fork many times across the surface.

Bake dough for 10 minutes at 375°.

Pizza Toppings:

3/4 Cup Pizza sauce (I used Prego)

1 ½ Cups of Mozzarella Cheese (Cheese Coupon)

Pepperoni

Olives

Sausage

Mushrooms

Onions

Peppers

Pineapple

Ham

Bacon

Chicken

Cover pizza crust with sauce, then cheese, and then add your desired toppings.

Bake pizza at 375º for an additional 15 minutes or until cheese is bubbly.

Coconut Crunch Cookies Recipe

This is a new recipe I tried a few weeks ago from the upcoming Taste of Home Best Loved Recipes Book. I had some chocolate chips and butter in my freezer, some slivered almonds and coconut from Vitacost (If you haven’t already, get a free $10 credit to Vitacost.)  and all the other baking items as staples in my pantry.  I took these cookies to a football party and they got devoured by my friends and family.

Ingredients:

1 cup butter, softened
¾ cup sugar
¾ cup packed brown sugar
2 eggs
2 teaspoons vanilla extract
1 teaspoon almond extract
2 cups flour
1 teaspoon baking soda
¾ teaspoon salt
2 cups flaked coconut (I got mine from vitacost)
¾-1 package milk chocolate chips
1 ½ cups finely chopped almonds  (I got mine from vitacost)

Preparation:

1. In a large bowl, (I like to use my Bosch) cream butter and sugars until light and fluffy. Beat in eggs and extracts. Combine flour, baking soda and salt; gradually add to the creamed mixture and mix well. Stir in coconut, chocolate chips and almonds.

2. Drop by rounded teaspoonfuls 2 in. apart onto ungreased baking sheets. (I love to use my silpat). Bake at 375º for 9-11 minutes or until lightly browned. Cool the cookies for 1 minute before removing from pans to wire racks.

For a shortcut on finely chopping my almonds I used my vitamix on a low setting.

I love to mix my cookies in my bosch mixer. I would love to try the cookie whip paddles. Anyone know if they are worth it?

Ready to bake on the Silpat liner. You do not have to use a silpat. I like mine because it evenly bakes the cookies and they seem to just turn out a little bit better.

Potato Dinner Roll Recipe

This is my families favorite roll recipe. My dad has been making these rolls since I was little. We would always have them when ever we had company for dinner. Everyone always loved the dinner rolls. I hope you love them too.

Ingredients:

1 Cup Instant Mashed Potatoes
2 Eggs
1 Tablespoon Instant Active Yeast (I use the Saf Instant Yeast)
1 ½ Cup Hot Water
2/3 Cup Butter plus 1/4 Cup
2/3 Cup Sugar
1 ½ Teaspoons Salt
4-6 Cups of Flour
Make 1 cup of mashed potatoes or instant mashed potatoes. Mix with eggs, yeast and hot water. Add 2/3 cup melted butter, sugar and salt. Mix in 4 cups of flour.

Refrigerate dough for two hours. Knead in the remaining 2 cups of flour after refrigerating.

Roll out dough and lightly butter the a baking sheet. My favorite Jelly Roll Pan!

Use round cups to cut out the dough. Melt 1/4 cup butter in a bowl. Lightly brush the inside and top with butter. Check out these great cups for kids that are perfect for cutting dough.

Fold dough in half and place on the lightly buttered baking sheet.

Rolls are ready to rise.

Cover rolls with a clean towel and allow them to rise until doubled. To speed up rising time you can place them in the oven at the lowest temperature. No more than 170º. Rising time can take about an hour, depending on the warmness of your kitchen.

Bake in oven 350º for 15-20 minutes until tops are golden brown. (Optional) Brush with any additional butter when they come out of the oven.

Blackberry Cobbler Recipe

This week I pulled a bag of blackberries I had picked over the summer from the freezer and whipped up quick and easy individual cobblers for my family.  This recipe is short and sweet!

Ingredients

3 cups frozen blackberries
1/4 cup flour
1/3 cup sugar
3 tablespoons butter
2 tablespoon brown sugar
2 packets Oat Revolution Instant Oatmeal {or 2/3 Quick Oats}

In a bowl combine frozen berries, flour, sugar and 1 tablespoon butter {cut into chunks}.  Combine and place in a 8 oz ramekins.

In another bowl combine brown sugar and remaining butter and microwave until soft.  Add instant oats to brown sugar mixture and combine.  Top blackberries with oatmeal mixture.  Place ramekins on a lined cookie sheetand bake at 350º until the berry juices are bubbling and oats are lightly browned {about 30 minutes}.  Cool slightly and serve warm.

Perfect Peach Pie

Last week I was craving peach pie. I had some beautiful Zaycon peaches to use so I pulled out my recipes. I get around to making a pie about once a year, so when I pulled my Crisco out of the pantry it was RANCID. Yuck. I guess I have no other uses for Crisco. What do you use it for? I had already prepared my peaches and my craving was not going away so I decided to try making a crust with butter. Well, it turned out fabulous!

Pie Crust Recipe

2 ½ Cup Flour

½ teaspoon salt

1 cup of chilled diced butter

½ cup water

This makes a double pie crust.

In a large bowl combine flour and salt. Cut in butter until you get course crumbs. I like to use a pastry blender. You can also use two forks, but it is much easier with the pastry blender. Once you have a crumb like mixture mix in cold water 1 Tablespoon at a time, until it forms a ball. Do not allow the crust to get too wet. You may not use all of the water. It is recommended to refrigerate dough for 4 hours covered. I only did about 20 minutes because I did not want to wait until 1 am to eat my pie. My crust turned out fine, but possibly could have had an even more improved texture with refrigeration.

 When it comes time to roll out the pie crust this is my favorite method by far. I have tried using a pastry cloth and it worked well, but not as well as my Silpat.

 

Transfer is easy with the Silpat too. Simply turn the Silpat upside down and peel away. For perfect crust.

The other tool that I love when I bake is my french pastry pin, it is so nice to roll with. You can see it pictured next to my pie in the photo below.

Pie Filling

6 pitted and sliced peaches

1/3 cup flour

1/2 cup brown sugar

1/2 cup white sugar

1/4 cup butter

1 t cinnamon

1/4 t nutmeg

Slice peaches set aside. Mix flour, sugar and butter to crumb stage. I used my pastry blender, but you could use two forks. Layer peaches in crust then sprinkle butter mixture and continue layering until you use all for the crumbs and peaches.

So my tip for cutting the pie crust into the lattice strips is to use a dough or pastry scraper. This tool is also really fab when rolling pizza or bread dough. It makes it easier to handle and easier to clean up!

Bake your pie for 45 minutes at 350° until crust is golden. Sometimes peach pie can turn out  runny. Especially if your peaches are really juicy. So to avoid a really runny pie you can either add a tablespoon of corn starch to your filling topping mixture or when the pie is done turn off the oven and leave your pie inside to cool down.  I was out of cornstarch so I tried the oven trick for this pie.
