Tilapia with Lemon Cream Sauce Recipe

Tilapia is one of the least expensive fish you can buy, and I think it is delicious. I have seen frozen tilapia fillets for as low as $2.98/lb and I think Costco sells them for around $5.99/lb. Fresh tilapia can also be found for cheap, especially if you have a Hispanic market to shop. I recently decided to keep fish on-hand and cook it regularly for my family, so I was happy to find this recipe on Pinterest. Thanks to Get Off Your Butt and Bake for sharing this one because it is a keeper, husband-approved!

Tilapia with Lemon Cream Sauce

  • 2 Tbsp flour Flour Coupons
  • 1 tsp lemon pepper seasoning
  • 1 c Panko bread crumbs Panko Coupons
  • 1 egg Egg Coupons
  • 4 tilapia or other white fish fillets
  • 4 Tbsp oil for frying Oil Coupons (Peanut, grapeseed, canola, safflower, sunflower, or other oil with high smoke point)

Mix flour and seasoning together on a plate or shallow dish. In bowl, beat egg with a fork or whisk. Place the bread crumbs on second plate or dish.
Coat fish with flour mixture. Dip into egg, then coat well with bread crumbs. Heat the oil in a large skillet. Add fish fillets, and cook about 3 minutes on each side until golden brown. Fish should flake easily with a fork. Be careful not to overcook.

Lemon Cream Sauce:

  • 3 Tbsp butter Butter Coupons
  • 2 Tbsp flour
  • 1 1/2 c milk Milk Coupons
  • 1/4 tsp onion powder
  • 1/4 tsp sugar Sugar Coupons
  • Salt and pepper to taste
  • fresh lemon juice from 1/2 lemon (add the zest from the lemon as well if you want more lemon flavor)
Tip: Before you juice a lemon, zest it. Add a little bit of water to the zest and freeze it in an ice cube tray or small container for a later time.

On low heat, melt butter in saucepan. Then quickly stir in the flour. Stir until bubbly and creamy. Whisk in the milk slowly, and continue whisking so that no lumps are visible. Stir in the onion powder and sugar. On medium heat, continue stirring until sauce has thickened. Remove from heat and squeeze in the fresh lemon juice. Stir well.

It is wonderful to think of the amazing women in my life on Mother’s Day and always. Here I am pictured with my paternal and maternal grandmothers. Both women are amazing. They raised large families on small incomes and had to be resourceful and hard working. They are both loving, charitable women whom I look up to very much. I am so grateful for their examples and many lessons they have taught me. My grandmother on the right with the beautiful silvery white hair is the one who taught me how to make these recipes…

This Zucchini Bread recipe is fabulous because it was passed down from my great-grandma to my grandma to me! I love my grandmothers cooking. She is wonderful at cooking from scratch and using ingredients from her garden!

Now this woman in the middle pictured between my two grandmothers  is not my sister, she is my mother. Doesn’t she look fab? She is a strong, independent caring woman. She would do anything for her children. Here is a recipe that she passed down to my little sister.

I remember my mom making these when I was a child, but it was not a recipe I gleaned before I left the house. Sure glad my sister posted it for all of us to enjoy!

Broiled Salmon 5 Simple Ingredients

My grandfather was an avid fisherman and this is the recipe that my grandmother used to cook up his salmon catch. My grandparents used to be hunting guides and would feed this fish recipe to the hunters. It was always a camp favorite. I had some slamon in my freezer from Zaycon so I was excited to try out this recipe again!

It does not take very many ingredients to make a tasty salmon. Hopefully you already have all of these in your pantry.

Ingredients:

Salmon {I for my salmon from Zaycon}
Soy Sauce {Kikkoman Coupon}
Lemon Pepper
Seasoning Salt
Miracle Whip

Start by drizzling with soy sauce

Sprinkle with a layer of lemon pepper

Sprinkle with a layer of seasoning salt. I used Johnny’s we have also used Lawrys.

Spread a thin layer of miracle whip over the top.

Be sure that you have put a layer of foil down for easy clean up. Now it is ready to broil. Place it in your oven on the top rack and broil on low-med for 15-20 minutes. Or bake for 10-15 at 350º. How do you know when Salmon is done?  Look for a change in color from a translucent bright pink to a more opaque whiter pink. When it’s somewhat firm to the touch, pull it out. Feel the salmon when its raw, and you should be able to see the texture of it, when its cooked its not soft and spongy anymore, its firm, but still has some give to it. Test it with a fork and it should be flaky and easy to open. If your fork comes out wet keep baking.

Fish Tacos

It is time to use up what is left from your Cinco de Mayo stockpile! If you do not have guacamole in your fridge or freezer but have some avocados try my guacamole recipe.

I pulled this Tilapia out of the freezer, and baked it in the oven. I got it a while back at Fred Meyer with coupons. White fish tends to be best for fish tacos. Do you have any in your freezer?
