Ham & Broccoli Spiral Rolls Recipe

When I have leftover ham I like to make the Cheesy Ham & Broccoli Braid and/or the savory Spiral Roll recipe below. You can certainly substitute turkey or chicken for the ham, if that’s what you have.

Ham & Broccoli Spiral Rolls Recipe

Ingredients

  • 1 recipe roll or french bread dough or pre-made roll dough (yielding about 12 rolls)
  • 12 oz cream cheese, softened
  • 1/4 c (1/2 stick) butter, softened
  • 2 c chopped ham
  • 1 1/2 c finely chopped broccoli
  • 2 c shredded cheese (Swiss or cheddar, etc)
  • 1 c Parmesan
  • 1 c finely chopped green onions

Instructions

Follow the recipe for your dough until the dough has risen. Punch it down and roll the dough out into a large rectangle about 1/2-inch thick.

In a small bowl, cream together the butter and cream cheese. Spread the butter/cream cheese mixture onto the rolled out dough. Sprinkle the ham, broccoli, cheese, Parmesan cheese, and green onions onto the dough. Roll the dough up (like cinnamon rolls), pinching the seam to seal. Slice the roll into about 1-inch segments (I like to use floss to cut rolls of dough). Place the rolls on a lightly greased baking sheet (or use a silicone baking mat) and cover with plastic wrap. Let the rolls rise until nearly doubled and bake at 350 degrees for about 20 minutes, until lightly browned and bubbly.

I usually bake all of the rolls and freeze the leftover ones.

Pumpkin Bars Recipe

Ingredients

Bars:

  • 4 eggs
  • 1 2/3 cups granulated sugar
  • 1 cup vegetable oil
  • 15-ounce can pumpkin
  • 2 cups sifted all-purpose flour
  • 2 teaspoons baking powder
  • 2 teaspoons ground cinnamon
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1 cup semi sweet chocolate chips

Icing:

  • 8-ounce package cream cheese, softened
  • 1/2 cup butter or margarine, softened
  • 2 cups sifted confectioners’ sugar
  • 1 teaspoon vanilla extract

Directions

1. Pre-heat oven to 350 degrees.

2. Combine the eggs, sugar, oil and pumpkin and beat with an electric mixer on medium speed until fluffy. Combine dry ingredients in separate bowl then slowly mix into the pumpkin mixture until batter is nice and smooth. Spread batter into a greased and floured cookie sheet or 13×10 pan depending on how think you want your bars to be. Sprinkle as many (I use about 1 cup) chocolate chips as you like on top of the batter.

3. Bake for 30 minutes. Let completely cool before frosting. Cut into bars.

To make the frosting:

Beat the cream cheese and butter in a medium bowl with an electric mixer until smooth. Add the sugar and mix until well combined. Stir in vanilla and mix well again. Spread on completely cooled pumpkin bars. Enjoy!

Simple Fruit Dip Recipe {Only 3 Ingredients}

This is a quick and easy recipe to help you jazz up any fruit you may be serving. This dip is especially great for parties. I was surprised how easy it was to make and thrilled that I had all the ingredient in my pantry.

Ingredients:

7 oz  Marshmallow Creme

8 oz  Softened Cream Cheese

1 tsp Vanilla

Veggie Pita Pizza Recipe

I was surprised to find that I really liked this Veggie Pizza. We got to make it with the Supervalu team in June at a blogger event. Cathy and I could not get enough of it. We could hardly believe that it had no cheese in it, was filled with edamame and was healthy!  Try this recipe out for your next party. You and your friends will love it!

Ingredients:

1 cup Fat Free Cottage Cheese
½ (8 ounce) package Cream Cheese, softened
½ (1 ounce) packet Dry Ranch Seasoning Mix
4 whole wheat pitas
1 cup Shredded Reduced Fat Sharp Cheddar Cheese
4 cups fresh veggies (shredded carrots, chopped broccoli, chopped cauliflower, chopped red and
yellow bell pepper, shredded zucchini)

Directions:

1. Combine cottage cheese, neufchâtel cheese and ranch seasoning mix in a food processor or
blender.
2. Purée until well combined and smooth. Spread over pitas.
3. Top with shredded cheese and veggies. Cut each pita in quarters.

No Bake Cheesecake Recipe


Last week I shared my baked cheesecake recipe. When you are in a hurry or your house is hot this no bake cheesecake is a great alternative.

INGREDIENTS for Cheesecake crust:

2 Cups Graham Cracker Crumbs (about 22 squares)
3 Tablespoons Sugar
4 ½ Tablespoons melted Butter or Margarine

INGREDIENTS for Cheesecake filling:

24 oz Cream Cheese (3 packages)
1 Tub Whip Cream (8 oz)
1 can sweetened condensed milk (14 oz)
2 Tablepoon  lemon juice (optional)

INGREDIENTS for Cheesecake topping:

2 ½ Quarts Strawberries
1 Cup Sugar
2 Tablespoons Cornstarch
1 Cup Boiling Water
1 (3 oz) package of Strawberry flavored Gelatin (Jell-o)

Crush your graham crackers. Crushing graham crackers can be really easy with this simple tip. Place graham crackers in a Ziploc bag and crush with a rolling pin. I always use my pastry pin which I love! In a bowl, mix together graham cracker crumbs, sugar and butter. Press  into the bottom of a 13×9 pan.Bake for 10 minutes at 350º. Let cool.


Soften cream cheese. Use a hand mixer and mix softened cream cheese until smooth. Add sweetened condensed milk until creamy. Add lemon juice (optional). Stir in whip cream and mix until fluffy. Pour mixture into prepared crust and refrigerate for 2 hours until set.

Layer strawberries on top of the cream once set. Cut berries to desired size. I cut mind in thirds length wise.

To make the gelatin berry topping. In a saucepan, mix together sugar and corn starch, until well blended. Add boiling water, and cook over medium heat until mixture thickens. Remove from heat. Add gelatin mix, and stir until smooth. Let mixture cool to room temperature. Pour gelatin mixture over strawberries until well covered and beautiful. Refrigerate for 2 hours or until set.

This recipe could also be topped with raspberries, cherries or blueberries.

Basic Cheesecake Recipe with Strawberry Topping

When Fred Meyer had cream cheese for $0.99 I stocked up! A few weeks ago I made homemade cheesecake for a dinner we were having with friends a few weeks ago and it was a HUGE hit! Everyone loved it. It was pretty easy too. You just have to plan ahead so the cheesecake can bake for an hour and cool sufficiently before topping and serving. I baked my cheesecake the night before to give it plenty of time to cool.

INGREDIENTS for Cheesecake crust:

1 ¼ Cups Graham Cracker Crumbs (about 15 squares)
2 Tablespoons Sugar
3 Tablespoons melted Butter or Margarine

INGREDIENTS for Cheesecake batter:

19 oz Cream Cheese (2 ½ packages)
1 Cup Sugar
1 Teaspoon Vanilla
2 Teaspoons grated lemon peel (optional)
3 Eggs

INGREDIENTS for Cheesecake topping:

2 ½ Quarts Strawberries
1 Cup Sugar
2 Tablespoons Cornstarch
1 Cup Boiling Water
1 (3 oz) package of Strawberry flavored Gelatin (Jell-o)

Keep in mind that this is a basic cheesecake recipe and you can top it with pretty much anything you like. So if strawberries are not your thing you can use another berry or chocolate or caramel or whipped topping. Top with anything you like.
