Amber’s Holiday Breakfast Menu: Waffle Quiche, Blueberry French Toast & Creamy Nutella Cocoa!

A reader asked for some Christmas Breakfast recipes. Here’s what’s on the menu at our house Christmas morning:

Waffle Quiche

  • 6 frozen waffles
  • 1 cup cooked  & chopped ham or crumbled bacon
  • 1 1/2 cups shredded cheese (Cheddar, Monterrey Jack, Swiss, Mozza, Havarti- I’ve used all sorts!)
  • 1/4 cups finely diced onions*
  • 1/8 cup finely diced red peppers*
  • 1 clove garlic*
  • 1 tsp butter*
  • 3 eggs, beaten
  • 1/3 cup heavy cream
  • 1/2 teaspoon salt
  • 1/8 teaspoon black pepper
  • 4 tablespoons grated Parmesan cheese

Preparation:

Preheat oven to 350 degrees F

In a small pan, saute onions and garlic in butter until translucent. Add red peppers and continue cooking for 1 min.

Toast waffles until crisp (soggy waffles will not work!). Spray a baking sheet (must use one with sides)  if you don’t have a Silpat w/ nonstick cooking spray and place the waffles on the sheet. Sprinkle ham and cheese over the waffles. In medium bowl combine onion mixture, eggs, heavy cream, salt, and pepper and beat until combined. Spoon egg mixture over each waffle. You may get some spillage, hence the reason for the sides on the baking sheet!

When the waffles are covered with the egg mixture, sprinkle with Parmesan cheese.

Bake for 18-24 minutes or until egg mixture is puffed and set and cheese is lightly browned. Let cool for 5 minutes, then serve.

*You can eliminate the onions/garlic/peppers completely from this recipe if you prefer. When we make them without, we actually cover them with maple syrup!

Blueberry Baked French Toast

This is a family favorite that needs to be prepared tonight if you plan on serving it Christmas morning.  Check out the Blueberry Baked French Toast recipe and instruction HERE!

Creamy Nutella Hot Cocoa

  • 1 can sweetened condensed milk
  • 1 can evaporated milk
  • 1/2 cup semi-sweet chocolate chips
  • 1 tablespoon Nutella
  • 8 cups water
  • mini marshmallows

Preparation:

Heat chocolate chips, Nutella and condensed milk in pot until melted. Add evaporated milk and water. While waiting for mixture to boil, write letter to Amber thanking her for giving you the most magical cocoa recipe EVER! Serve with mini marshmallows. Enjoy!

Confetti Crisps {Easy Crispy, Crunchy, and Colorful Christmas Treat}

A friend brought these over to our home and after having just one bite I was in heaven!  It’s the perfect combination of crispy, sweet, and chewy with just a hint of salt.  And chances are you have everything you need for this in your pantry!!

Confetti Crisps

40 square (about 2×2″) saltine crackers
3/4 cup packed brown sugar
3/4 cup butter (not margarine!)
1 teaspoon vanilla
1 cup semi-sweet chocolate morsels
1 cup mini-twist pretzels, broken into small pieces (my friend just used sticks)
1/3 cup chopped peanuts
1/3 cup Mini M&M’s (my friend used regular sized… Christmas colors would be super cute too!) – here is a coupon!
1/3 cup raisins (optional)

  • Preheat oven to 350 degrees.  Arrange crackers side by side in single layer on large bar pan or jelly roll pan (make sure you use parchment paper or non-stick spray).
  • Combine brown sugar, butter and vanilla in 2-quart saucepan.  Cook over medium heat, stirring occasionally with a whisk, until mixture comes to a full boil across the surface.  Boil, stirring constantly 4 minutes.
  • Immediately pour sugar mixture over crackers and spread evenly with a spreader or rubber spatula.  Bake 10 to 12 minutes or until bubbly and lightly browned.  Remove pan from oven to cooling rack.
  • Immediately sprinkle baked crackers with chocolate morsels.  Let stand 3 minutes, allowing morsels to soften, then spread evenly over surface.  Sprinkle with pretzels, peanuts and mini M&M’s.  Lightly press toppings into melted chocolate using back of a spatula.  Let stand at room temperature to cool completely.  Refrigerate 20 minutes to firm chocolate.  Cut into squares (my friend just broke hers up).
  •  Makes about 40 squares.  These are so good, you’d be wise to double this recipe – just use a full sized cookie sheet instead.
  • Store in tightly covered container in a cool place at room temperature so they will stay crisp.
