Recipe: Yummy Homemade Chicken Pot Pie

Hey Y’all! I’m going to share with you my favorite Chicken Pot Pie recipe. It is super easy and doesn’t take long to throw together. My little sister gave me the recipe and we make it all the time! All of my kids love it and eat it up when I make it.

Here is what you need to make it:

2 Pie Crusts {you can make your own}

1/3 cup of Butter

1/3 cup of chopped onion {I love frozen onions for this}

1/3 cup of flour

1/2 tsp salt

1/4 tsp pepper

1 1/4 cup of chicken broth {I make my own with chicken base & water}

1/2 cup of milk

2 1/2 cups of shredded chicken

1 bag of mixed veggies

This is my favorite way to shred chicken. I boil it until it is done, then while it is still warm put some chicken breasts in the Kitchen Aid and use the flat beater. It shreds it perfectly in about 30 seconds. it saves so much time! I boil up a lot of chicken at once and then freeze in Ziploc bags what I don’t need to save for other recipes.

Melt the butter, then add the onion. I love using frozen onions because I don’t have to chop them up {and cry} and it is a bit of a time saver.

Cook the onions until they are translucent

You can use a can of chicken broth if you want, I love the chicken base, it is a lot cheaper to make broth with it. I just heat the water up in the microwave, add the base and stir and it is ready to use.

Once the onions are cooked, add the flour and salt and pepper. Cook for a couple of minutes.

Add the chicken broth, I use a whisk to get rid of any lumps.

veggies. Use whatever kind of veggies your kids will eat.

Mix it up until warm.

Roll out a pie crust into your pie plate {I got this lovely one from my mother in law for Christmas, I love it!}. If you are good at making pie crusts then make your own. I am not good at pie crusts so I buy them. It also saves time to use premade crusts for me.

Put the filling in the pie crust.

Roll the other pie crust on top of the pie and filling

Seal and crimp the edges. If I think about what I am doing I mess up so I can’t really tell you how to do this part, sorry!

Cut vent holes in the top of the pie. I usually do slits, but you can get fancy if you want.

Bake at 425 degrees for 30–40 minutes. I have this nifty crust shield that keeps the edges from getting burned. You can find one here.

Doesn’t that look good? It is so yummy! I let it sit for 5-10 minutes before serving it. It is easy to double the recipe and make it in a cake pan or 2 pie plates and freeze one. I’ve frozen an extra one before and it still tastes as good cooking from frozen. Just wrap it good in saran wrap and foil before you freeze it.

Friptura Recipe {Romanian Baked Chicken}

We were in Seattle this past week, and while there my sweet friend taught me how to make this AMAZING traditional Romanian dish. It’s called Friptura, (Pronounced Free Too Ra), which translated means Baked Chicken (or roast, or basically, baked food.  They are super literal over there-which you’ll notice in the directions.)  Romanians are very loose about their cooking, and usually just throw whatever tastes good into a pot.

Ingredients

  • Chicken Thighs/Legs (You can also use  turkey or pork)
  • (2) Tomato Sauce 29 oz cans
  • 3-5 Cloves Garlic (Romanians eat a lot of garlic-proves they aren’t vampires :) )
  • 1/8 tsp Salt (or, to taste)
  • 1/4 tsp fresh ground Pepper (or, to taste)
  • 4-5 Bay Leaves

Directions

Place chicken in ungreased 9×11 pan, cover with foil and place in preheated oven.   Bake chicken at 375 for 40 minutes (or 400 for 25-30 minutes, 350 for about 60 minutes).   Chicken will not be done, but should be starting to brown.

Meanwhile, prepare sauce.  Pour both cans tomato sauce into medium size bowl.  Mince garlic and stir into sauce.  Add salt and pepper, stir.  Add the bay leaves and stir gently.  Cover and refrigerate.

Chicken should be almost done.  Not quite falling off the bone.  Drain grease (we did this by removing the chicken, then draining, and adding it back). Add sauce and bake, covered,  for another 20 minutes.  When done, you’ll be able to peel it off the bone with a fork.  Spoon sauce over chicken and serve.  The extra sauce makes an insanely good sauce for potatoes!

Money Saving Tips: Homemade Fat-Free Chicken Broth



Are you looking for some simple ideas to save money? We have simple solutions that you can easily apply to your lifestyle to save money!

Chicken broth is really easy to make and there are several way to do it.  You can save a lot of money by making it at home, but what if you want it to be fat free?

Here is a quick and easy way to make broth.

Just boil a chicken with a bit of salt, onions, garlic and other spices of your choice:

However, once you’re done boiling the chicken, the fat is released into the broth, making it tasty but oily.

If you want it to be fat free, just refrigerate your broth for a couple of hours.   Once it’s cold the fat will rise to the top and harden.  It will look like this:

For the fat-free version of the broth, skim the fat off the top like this:


After skimming the fat off the broth, you can use the broth however you want!  I love to make a big batch of broth and freeze portions of it in tupperware.  That way, when I have a recipe that calls for chicken broth, I can just pull it out and use it.

Party Chicken Kebabs Recipe

These yummy Mediterranean-inspired chicken kebabs are sure to please at your next cookout.

Party Chicken Kebabs

4 Servings

  • 1/4 c fresh lemon juice
  • 3 1/2 Tbsp fresh minced garlic
  • 2 Tbsp extra-virgin olive oil (Oil Coupons)
  • 2 Tbsp fresh rosemary, finely chopped
  • 1 1/2 tsp fresh sage, finely chopped
  • 1 1/2 Tbsp honey (Honey Coupons)
  • 1 1/2 tsp coarsely ground black pepper
  • 3/4 tsp salt (Salt Coupons)
  • 1 lb trimmed boneless skinless chicken breasts, cut into 1 1/2″ cubes (Zaycon Chicken!)

In a small bowl, whisk (my favorite whisk) together the lemon juice, garlic, olive oil, rosemary, sage, honey, pepper, and salt. Place the chicken in a resealable plastic bag or container, add the marinade, and toss to coat. Cover and marinate in the fridge for at least 6 hours or overnight, turning the chicken at least once.

Preheat grill to high. Soak 4 wooden skewers in water for at least 30 minutes (or have metal skewers ready).

Thread the chicken cubes onto the skewers. Place the kebabs on the grill and reduce heat to low. Grill for 2 minutes and rotate a quarter-turn. Continue to grill, turning, for 1-2 minutes per side, or until the chicken is cooked through and juices run clear.

Almond Chicken with Apricot Sauce

This is a new recipe I tried this week from the upcoming Taste of Home Best Loved Recipes Book. I had some apricot sauce from my apricot tree, chicken from zaycon and some almonds from Vitacost that I wanted to use so this recipe was perfect. We really liked how it turned out. It was a very good way to prepare chicken.

Ingredients:

  • 1 Cup of Apricot Spreadable Fruit
  • 3 Tablespoons Soy Sauce (Soy Sauce Coupons)
  • 2 Tablespoons finely chopped onion (I used minced dry)
  • 4 Teaspoons Cider Vinegar (Vinegar Coupon)
  • 1 Teaspoon Ground Mustard
  • 4-6 Breast of Chicken
  • 1/2 Cup Sliced Almonds (Free from Vitacost)
  • 1 Tablespoon Butter (melted)

To Prepare:

In a shallow bowl mix apricot, soy sauce, onion, cider vinegar and ground mustard. Set aside 1/2 cup. For best results tenderize yout chicken with a meat mallet. Dip chicken breasts in sauce. Place in 13 x 9 baking dish coated with cooking spray.

Sprinkle the almonds over the chicken and drizzle with melted butter. Bake uncovered , at 350° for 30-35 minutes or until the thermometer reads 170°. Serve with reserved apricot sauce.

Chicken & Veggie Mini Pies

Ingredients

Meat & veggie mixture

  • 1 Tbs. vegetable oil
  • 2 large uncooked chicken breasts, cut into small pieces (I use Zaycon chicken!)
  • 1 can corn, drained
  • 1 cup frozen peas (we like peas at our house so I used 2 cups! You can pretty much use whatever veggies you like.)
  • 1/2 medium onion, chopped
  • 1 cup shredded Cheddar cheese (I only used about 1/2 a cup in this batch because that’s all I had)
  • 1 tsp. parsley flakes (optional)
  • 1 tsp. garlic, minced (optional)
  • Salt & Pepper to taste

Baking mixture

  • 1/2 cup Bisquick Baking Mix
  • 1/2 cup milk
  • 2 eggs

A few coupons that might be helpful…

Directions

1) Heat oven to 375 degrees and spray regular size 12 ct muffin tin with cooking spray.

2) In a non-stick skillet, heat vegetable oil over medium/high. Cook chicken 5-7 minutes or until there is no pink left in the middle. Add chopped onion and cook another 2 or 3 minutes. Add corn and peas until mixture is heated through. Cool 5 minutes then stir in grated cheese and let melt.

3) In a medium bowl, stir baking mixture ingredients with a whisk until blended. Spoon about 1 tablespoon of the baking mixture into each muffin cup. Top with about 1/4 cup of the chicken/veggie mixture. Spoon 1 tablespoon of the baking mixture on top of the chicken/veggie mixture in each cup.

4) Bake for about 25-30 minutes or until a toothpick comes out clean and tops are slightly golden brown. Cool 5 minutes. Using a knife, loosen the pies from the pan and place on cooling rack. Cool another 10 minutes and serve! I topped mine with a little more grated cheese to melt. Delish!

I haven’t done it myself yet, but Betty Crocker says these little babies can be frozen! Perfect for quickly heating up in the microwave on the go, after school snacks or last minute dinners! You could even make a breakfast version. I’m thinking I’ll try a taco version next time…
