Gluten Free Recipes: Pizza Stuffed Chicken Breasts

 This is an easy and delicious twist on old favorites…pizza and chicken!

Pizza Stuffed Chicken

This is also super easy to adapt to gluten free diets.

Pizza Stuffed Chicken Breasts

Ingredients

  • 1 lb. boneless, skinless chicken breasts
  • 2 oz. mozzarella cheese
  • 1.25 oz. (approx. 16 slices) pepperoni
  • 1 large egg
  • 1/2 c Gluten Free flour (can use regular)
  • 1/2 c Gluten Free breadcrumbs (can use regular)
  • 6 Tbsps vegetable oil
  • salt and pepper to taste
  • Pizza or marinara sauce for serving

Instructions

STEP 1: Trim the chicken breasts. Slice each breast in half diagonally to create two diamond-like shaped pieces. Using a small, sharp knife, cut a pocket into the side of each breast piece. This can be slightly tricky on thinner pieces so be careful. Be sure not to cut all the way through the meat but rather just into one side so that the fillings will stay in.

STEP 2: Stuff each piece of chicken with 1/2 oz. of cheese and about 4 slices of pepperoni. Lightly season each piece with salt and pepper. Set the stuffed chicken aside.

STEP 3: Preheat your oven to 350 degrees and line a baking sheet with aluminum foil. Begin to heat a large skillet with 6 Tbsp of vegetable oil over medium/high heat. Collect three shallow dishes and put the flour in one, the egg in another and the bread crumbs in the third (Pampered Chef Coating Trays would be great for this). Beat the egg until it is an even consistency (adding a 1/2 tsp of water helps break it up).

STEP 4: One by one, coat each piece of chicken in the flour, then the egg then the bread crumbs. Use your hands so that you can keep the open side of the pocket pinched closed and keep the fillings in. The flour helps the egg adhere and the egg keeps the bread crumbs in place. This is a basic bread coating.

STEP 5: Test the oil in the skillet to see if it is hot enough by dropping a small pinch of bread crumbs in. The bread crumbs should sizzle and dance A LOT. It is very important that the oil is hot enough or else the breading will soak up a lot of oil and you’ll end up with some really greasy chicken!. Place all four pieces of chicken in the skillet and cook until it is golden brown and crispy on each side. This should take no more than 2-3 minutes.

STEP 6: When you remove the chicken pieces from the skillet, transfer them to the baking sheet and place it in the oven. Finish baking the chicken (to cook the inside) for about 25 minutes (longer if you have larger pieces). Remove from the oven (check to make sure the chicken is cooked through) and serve immediately with marinara or pizza sauce!

7 Fast and Easy Freezer Meals Using Chicken

I ordered a 40 lb case of chicken from Zaycon Foods and it is coming this week!

I usually package my chicken in freezer bags like you see in our youtube video below. But with so many freezer meal recipes on Fabulessly Frugal and my dire need for time saving meals in my freezer, this time I am going to take the time to prep some freezer meals with my Chicken!

My Chicken Freezer meal recipes of choice:

A 40 lb box of chicken should contain about 80 breasts of chicken so I have a lot of meat to work with for my recipes. I am going to double each one of my recipes.  Once you put the effort into making one you may as well make two. You can use these ingredients to make your own grocery shopping list. Don’t forget to see what you have in your pantry from couponing!

1 pizza crust (store bought or homemade)
2 c. mozzarella cheese
½ Red onion
2 Chicken breasts cut into small slices or shredded
2-3 c. BBQ Sauce
Cilantro

4 Boneless, skinless chicken breasts
1/2 Can Bread crumbs
6 Eggs
2 c. Shredded mozzarella cheese

What I need to know to make 14 freezer meals:

My Shopping list: I have most of the ingredients on hand to make these meals, but I will need a few things from the store. Your shopping list may have a few more items depending on how much couponing and stockpiling you have been doing.  I have doubled the ingredients to make two of each meal.

Creamy Chicken, Pasta & Veggie Skillet Recipe

Ingredients

  • 1 pound boneless, skinless chicken breast, cut into bite sized pieces
  • 1 (14.5 oz) can petite diced tomatoes, undrained
  • 1 medium onion, chopped
  • 8 oz. dry Penne, Rotini, or Rigatoni Pasta (I like Ronzoni Garden Delight Rotini)
  • 1 cup frozen green peas, unthawed
  • 1 (10 3/4 oz) can Cream of Mushroom Soup
  • Grated Parmesan cheese as topping (optional)

Instructions

1. Cook pasta according to box instructions. Meanwhile, cook the onions and chicken in a non-stick skillet over med-high heat for 5 minutes or until there is no more pink in the centers.

2. Stir in the un-drained tomatoes and soup. Cook for 5 minutes or until heated all the way through. Stir occasionally. Add in the peas and mix well.

3. Drain the pasta and place in a large serving bowl. Add tomato mixture and toss to thoroughly coat. Top with Parmesan cheese.

Serve warm.

Mushroom Chicken with Lemon Butter Sauce

This recipe was inspired by two of my favorite restaurant recipes. The Chicken Costaletta at The Cheese Cake Factory and Pollo Rosa Maria Chicken from Carrabbas Italian Grill.  I love a good lemon butter sauce. So I decided I would come up with my own.

Mushroom Chicken with Lemon Butter Sauce

Ingredients

  • 2 Breasts Chicken
  • 1 Cup of sliced mushrooms
  • 1/2 Cup Mozzarella Cheese
  • 1 Tsp Minced Garlic
  • Sauce:
  • 1 med-large lemon
  • 1/2 Cup Heavy Whipping Cream
  • 3/4 Cup Butter (1 1/2 Sticks)

Instructions

Butterfly your chicken breast so that you have 4 think breasts of chicken.

Start grilling your chicken on a low- med heat.

Juice lemon into a large saute pan and med heat.

Add mushrooms and garlic and let simmer for only 1 minute.

Remove mushrooms and add them to a smaller sauce pan with 1/4 cup of butter.

Saute the mushrooms in the butter.

Add whipping cream to lemon juice in the large sauce pan. whisk together.

Add in 1/2 cup of butter a tablespoon at a time. Continue to whisk together.

When chicken is cooked through add it to the lemon butter sauce.

Cover the chicken with cheese and mushrooms.

Cover ingredients with a lid and let cook on med heat for 5-10 minutes.

Serve with rice and vegetables.

The second day we had leftovers so I cut up the chicken and mixed it with the lemon butter sauce rice and peas and we ate it like a casserole. This was very delicious too.

There is nothing like having left over dishes especially when it comes to having turkey! Normally I use chicken with this recipe, but turkey is just as good.

Green Chile Turkey Enchiladas Recipe

Ingredients

  • 2 Bell Peppers, yellow, orange, red, diced
  • 1 medium onion, diced
  • 2 cups turkey or chicken, cooked, bite size
  • 1 (15 ounce) black beans, drained and rinsed (Bean Coupons)
  • 1 package Mexican blend cheese
  • 1 (28 ounce) Green Chile Enchilada Sauce
  • 1 package Tortillas of your choice (I used multi-grain) (Tortilla Coupons)
  • Sour Cream (optional) (Sour Cream Coupons)

Instructions

In a Dutch oven or large frying pan, cook peppers and onions in olive oil until soft. Once vegetables are soft add meat, mix, cook about 1-2 minutes. Then add beans and mix. Transfer pan to counter. Layer bottom of 9x13 pan with 1/2 the enchilada sauce. In tortilla, add mixture and cheese, roll, and place in pan. Pour enchilada sauce on top of enchiladas and top with cheese. Bake 375 degrees for 40-45 minutes. Top with sour cream. (Note: If you are cooking with uncooked chicken cook meat first then add vegetables.)

Cream Cheese Chicken Chili Recipe

You MUST try this delicious Cream Cheese Chicken Chili Recipe!!!

Not only is it amazingly easy and simple to make… it’s incredibly delicious!!!  My friend Renee shared this recipe on her blog and I made it one night (I had everything in my stockpile!) and my kids AND my hubs loved it!  I’m highly considering making it for our traditional Christmas Eve Dinner (we have bread bowls and soup!).

Cream Cheese Chicken Chili

  • 2 chicken breast, (still frozen works)
  • 1 (10 oz.) can Rotel tomatoes (I like the mild stuff for my wimpy taste buds)
  • 1 (15 oz) can whole kernel corn, do not drain
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 package Ranch dressing mix or (3 Tablespoons)
  • 1 Tablespoon cumin
  • 1 teaspoon chili powder
  • 1 onion, chopped or (1/3 cup minced onion)
  • 1 (8 oz.) package cream cheese, cubed
Put the chicken in the crockpot.  Top with undrained tomatoes, corn, and rinsed black beans.  Add ranch dressing, cumin, onion and chili powder.  Stir to combine then top with cubed cream cheese.  Cook on low for 6-8 hours, stirring once or twice to blend in the cheese (if you’re like me and don’t do well planning ahead, you can just do this on the stove top with cooked chicken).  Before serving remove the chicken and chop to bite size pieces.  Serves 4.

Crock-Pot Herb Garlic Chicken with Potatoes

I absolutely love this chicken recipe! Not only because it is cooked in the Crock-Pot, but you can make endless meals with it! You can make chicken salad sandwiches, chicken salad, chicken enchiladas, chicken broth, chicken noodle soup, chicken tortilla soup, and the list goes on. Depending on how many people are in your family will determine how long you can spread out the meals.

Chicken Recipe

Ingredients:

  • 1 3- to 3 ½- pound whole broiler-fryer chicken
  • ¼ – ½ cup olive oil
  • 2 clove garlic, minced
  • 1 tablespoon dried oregano, crushed
  • 1 tablespoon dried basil, crushed
  • 1 teaspoon dried rosemary, crushed
  • Salt
  • Pepper

Directions:

  1. Rinse chicken inside and out; pat dry with paper towels. Place chicken on plate; set aside.
  2. In a small bowl, stir together olive oil, garlic, oregano, basil, salt, and paper. With basting/pastry brush, spread mixture all over bird. Transfer bird to Crock-Pot. Cook on high for 4-5 hours or on low for 8-10 hours.

Optional Potato Recipe

Ingredients:

  • 5-8 red potatoes, quartered
  • ¼- ½ cup of olive oil
  • 2 cloves garlic, minced
  • 5 shakes dried oregano
  • 5 shakes dried basil
  • Hand full rosemary, crushed
  • Salt
  • Pepper
  1. In a large Ziploc bag or large bowl, add potatoes, olive oil, garlic, herbs, and spices; mix. Transfer potatoes to Crock-Pot, and pour over bird. Cook with bird as directed above.
