My littles love this sweeter version of enchiladas because it’s not “picy” which makes it a regular at our house!  Sometimes I sneak in corn, beans and even finely chopped bell peppers as well. It makes a great freezer meal too!

Honey Lime Enchiladas Recipe

Ingredients

  • 1 lb. Ground Beef (you can also use cooked shredded chicken)
  • 1/2 Cup Onions, finely chopped
  • 4 Tbsp. Honey
  • 4 Tbsp. Lime Juice
  • 1 Tbsp. Chili Powder
  • 1/2 Tbsp. Paprika
  • 1/2 Tsp. Garlic Powder
  • 1 10 oz. Can Red or Green Enchilada Sauce
  • 1 Cup Heavy Cream
  • 10 oz. Cheese, grated
  • Green onions or chives for garnish, (optional)
  • Tortillas (I like to use whole wheat :))

Instructions

1. Pre-heat oven to 350 and spray pay lightly with cooking spray.

2. Brown ground beef and onions together in large skillet. Drain excess grease.

3. In a large bowl, combine cooked ground beef, onions, honey, lime juice, chili powder, paprika, and garlic powder.

4. Spoon the mixture into the tortillas. Roll them up and place the seam side down on the bottom of the pan.

5. In a separate bowl, mix together the heavy cream and enchilada sauce. Pour over tortillas.

6. Spread the grated cheese evenly over the top and garnish with green onions/chives. (optional)

To bake immidiately

Cover with foil and bake for 20-25 min. Remove foil and bake an another 5 minutes until cheese is completely melted and bubbly.

To Freeze:

After placing cheese on top, cover dish tightly with foil (I use two layers) and freeze for up to two months. To prepare after freezing, remove from freezer, let thaw completely then bake at 350 degrees for 20-35 minutes or until warmed all the way through.

Shepard’s Pie Recipe

Great way to use mashed potatoes Simple Shepard’s Pie!

I had leftover mashed potatoes this week. I could not let them go to waste so I made a Shepard’s pie out of them. I was pleased with how it turned out. I added a bag of frozen vegetables to make it healthier for my family.

Shepard’s Pie Recipe

Ingredients

  • 4 large potatoes, peeled and cubed
  • 1 tablespoon butter
  • 1/2 cup sour cream
  • salt and pepper to taste
  • 1 onion, chopped
  • 1 pound lean ground beef
  • 2 tablespoons all-purpose flour
  • 1 tablespoon ketchup
  • 1 cup beef broth
  • 1 small bag mixed vegetables frozen
  • 1 1/2 cups shredded Cheddar cheese

Instructions

1. Boil potatoes in a large pot of salted water. Cook until tender but still firm, about 15 minutes. Drain and mash. Mix in butter, and sour cream. Season with salt and pepper to taste; set aside.

2. Bring a large pot of salted water to a boil. Add carrots and cook until tender but still firm, about 15 minutes. Drain, mash and set aside. Preheat oven to 375 degrees F (190 degrees C.)

3. Add ground beef and onion to a large frying pan and cook until meat is well browned and onion is clear. Pour off any excess fat, then stir in flour and cook 1 minute. Add ketchup and beef broth and frozen vegetables.. Bring to a boil, reduce heat and simmer for 5 minutes.

4. Pour ground beef in the bottom of a 2 quart casserole dish and spread out.Top with the mashed potato mixture and sprinkle with shredded cheese.

5.Bake in the preheated oven for 20 minutes.

Lasagna Roll Ups

This is a fun new way to make Lasagna! You can even double the recipe & put your 2nd pan in the freezer for another night!

Lasagna Roll Ups

Ingredients

  • 8 oz box Lasagna Noodles
  • 1 box frozen Spinach
  • 1 lb ground beef
  • 16 oz Ricotta Cheese
  • 2 cups Mozzarella Cheese
  • 1 jar Pasta Sauce (use red or Alfredo sauce)

Instructions

Preheat oven to 350 degrees F

Bring a large pot of water to a boil. Add lasagna pasta and cook for 10 minutes or until al dente & drain

In skillet pan cook ground beef

Lay out 1 noodle on flat surface (cutting board works great)

Layer filling (1/10 of each item in each noodle) ricotta cheese, spinach, ground beef, mozzarella cheese

Roll up noodle

Repeat until used all noodles

Pour 1/2 cup of pasta sauce in bottom of 9x13

Place each roll up in baking dish

Pour pasta sauce mixture over lasagna rolls

Sprinkle with mozzarella cheese and your favorite cheese

Bake for 40 minutes.

My Favorite Broccoli & Beef Stir Fry

I have a great Broccoli & Beef stir fry recipe that I made for years. Then I finally decided to get the oyster sauce, sesame oil, and rice vinegar to try this recipe and it was worth it! This is now my go-to recipe for Broccoli and Beef. It could be served at a restaurant, a really good restaurant anyway. ;)

The Best Broccoli & Beef

Ingredients

    Sauce:
  • 1 Tbsp rice wine vinegar or rice vinegar
  • 2 Tbsp low-sodium chicken broth
  • 5 Tbsp oyster sauce
  • 2 Tbsp light brown sugar
  • 1 tsp toasted sesame oil (I just use sesame oil)
  • 2 tsp cornstarch
  • Beef & Broccoli:
  • 3 Tbsp low-sodium soy sauce
  • 1 1/2 lbs flank steak
  • 6 medium cloves garlic, minced (about 2 Tbsp)
  • 1-inch piece fresh ginger, minced (about 1 Tbsp)
  • 1 tsp peanut oil or vegetable oil, plus about 2 Tbsp extra for cooking
  • 1 1/2 lbs fresh broccoli, cut into bite-sized pieces
  • 1/3 c water
  • 3 medium scallions, sliced 1/2-inch thick on diagonal (optional)
  • cooked rice

Instructions

Note: I like to add chopped yellow or sweet onion instead of the scallions, because I usually have a onion on-hand. I just add the chopped onion to the skillet with the broccoli.

Cut the steak into 2-inch-wide strips with the grain, then slice across the grain into 1/8-inch-thick slices. (You can use skirt, hanger, or flatiron steaks as a substitute for flank. I have also used top round.)

In a medium bowl, combine beef and soy sauce. Cover with plastic wrap and refrigerate at least 10 mins or up to 1 hr. Meanwhile, whisk the sauce ingredients together in a liquid measuring cup or small bowl. In another small bowl, combine garlic, ginger, and 1 tsp peanut oil. Set aside.

Heat 1-2 tsp peanut oil in 12-in nonstick skillet over medium-high heat, until hot and rippling. Add half of beef to skillet and break up clumps; cook, without stirring, for 1 minute, then stir and cook until beef is browned around edges and cooked through, about 1-2 mins. Don’t overcook the meat – cook until just barely cooked through so meat stays tender. Transfer beef to a medium bowl and cover with a lid and foil. Heat another 1-2 tsp peanut oil in the skillet and repeat with remaining beef.

Add 1 Tbsp peanut oil to now-empty skillet; heat until rippling and hot. Add broccoli and cook 30 seconds; add water, cover pan, and reduce heat to medium. Steam broccoli until tender-crisp, about 2 mins. Push broccoli to the sides of skillet and add garlic/ginger mixture. Cook, mashing the mixture with a spoon, until fragrant, about 15-30 secs. Stir mixture into broccoli. Add beef back to skillet and toss to combine. Whisk the sauce to recombine, and add to skillet. Cook, stirring constantly, until sauce is thickened and evenly distributed, about 1-2 mins. Sprinkle with scallions, and serve with rice, if desired.

Super Moist Hamburgers

I found myself making the same ol burgers every time so I decided to mix things up. These started to come apart on the grill a little bit but they were SOOO moist and delish!

Ingredients

1 lb. ground beef (I used my Zaycon beef.)
1/4 cup dry bread crumbs
1 egg, beaten
2 tbs. mustard
2 tbs. Worcestershire sauce
1 tbs. liquid smoke
tabasco sauce to taste (optional)
garlic salt to taste
salt & pepper to taste

(The meat isn’t pictured and I doubled my batch so I used two eggs.)

Directions

Mix all ingredients together in large bowl.

Form into hamburger patties. Season with salt & pepper and garlic salt.

Cook in a skillet over medium heat (to desired doneness, approx 10-15 min) or throw on the BBQ! Serve with your favorite buns and fixin’s. Enjoy!

Super Simple Beef Stroganuff

 

Meat Cream Sauce:

1 lb ground beef
1 small diced onion {optional for extra flavor}
1 tablespoon of minced garlic {optional for extra flavor}
2 cans cream of mushroom soup
1 cup sour cream
1/2 cup milk
salt and pepper to taste

  1. Cook ground beef on stove with onion and garlic. The garlic and onion add extra flavor, but I make this dish with out if I am short on time or do not have the ingredients on hand.
  2. Add mushroom soup, milk and sour cream. Stir until smooth. Add salt and pepper to taste.
  3. Optional. If I have cream cheese  or mozzarella on hand I add it to the sauce until smooth.

You can use your own egg noodles if you have some on hand, but when I saw that my favorite egg noodles were not on sale and I did not have a coupon I decided to make my own. These are super yummy, easy and fun! This is the same noodle recipe from our favorite Comforting Chicken Noodle Soup.

Making Homemade egg noodles:

  • 2 cups flour
  • 2 eggs
  • 1 full egg shell of milk
  1. Put a pot of water on the stove to boil.
  2. Place flour in a small bowl, making a dent in the center. Carefully the crack egg shell- put egg in the center of the flour. Use 1/2 of the egg shell you just cracked, fill it with milk and stir into the flour and egg mixture using a fork. Dough needs to be slightly sticky and form a ball, so if needed, add just a touch more milk until the right consistency.
  3. On a well floured bread board or surface, carefully roll out the dough until very, very thin (almost paper thin). Dough will be stretchy and very tender. Using a Pizza cutter, cut the dough into thin noodles -length of your choice. It is okay if the noodles are not perfect and it is not necessary to dry the noodles. We like to lay them over a bowl so until the water is boiling.
  4. Slowly sprinkle and stir the cut noodles into rapidly boiling water it is important to put the noodles in this way – so they do not stick together in a lump. Turn down heat to a low boil and cook noodles until tender (approx 20-30 minutes). Stir every so often to prevent noodles from sticking.

I am considering getting a pasta maker to speed the process up even more. This is the best rated one for under $30!

How it works:

1 FAMILY

Herb-garlic butter:
3 Tbs finely chopped, mixed fresh herbs: parsley, basil, oregano, chives &/or tarragon leaves
1 clove garlic, minced
½ c salted butter, softened

Burgers:
1 ½ lbs ground sirloin or ground round or ground chuck
coarse salt
black pepper
6 deli hamburger buns (such as Kaiser)
melted butter (to brush buns with)

6 FAMILIES

Herb-garlic butter:
12 Tbs finely chopped mixed fresh herbs: parsley, basil, oregano, chives &/or tarragon leaves
6 garlic cloves, minced
2 c. salted butter, softened

Burgers:
6 lbs ground sirloin, ground round, or ground chuck
coarse salt
black pepper
24 buns
melted butter (if desired to brush buns with)
Butter Preparation: Place all the herbs, garlic, pepper, and butter in a small mixing bowl and beat with a wooden spoon until slightly fluffy. (can be done w/food processor) Place a 12″ square piece of plastic wrap or parchment paper on your work surface and mound the flavored butter in the center. Roll herb butter into cylinder shape within plastic, twisting the ends to compress the butter. Chill the butter in the refrigerator or freeze until firm. Butter will keep for up to 5 days in the refrigerator or up to 3 months in the freezer.

Burger Preparation: Make hamburger patties, but for each one place your thumb in the middle and press an indentation almost through (but not quite) to the other side of the meat.
Unwrap formed butter and cut crosswise into 1/4-1/2″ discs. (You will be using approx. 4 tablespoons Herb-Garlic Butter per 1 1/2 pound of ground meat)
Form hamburger patty fully around one butter disc, pressing gently to seal the disc into the dead center of the meat. (too much pressing will make your burgers dense and tough) Grill burgers until cooked to doneness, (about 5 to 7 minutes per side for medium-done). Do not serve for about 5 minutes, to allow flavors to fully meld.
