Taco Soup Recipe

Oh, Taco Soup. It’s always easy and always good. Like many soups, it is very flexible too. You can use the stuff that you already have in your pantry. Substitute different beans, if desired. Use ground turkey instead. Sometimes I add a small can a green chilies too. If you want to fatten it up a bit, serve it with shredded cheese and sour cream. The possibilities are endless!

To make this TERRAfit-friendly, use homemade taco seasoning!

Taco Soup

  • 1 can garbonzo beans
  • 1 can kidney beans or pinto beans
  • ½ to 1 lb lean ground beef
  • Onion, chopped
  • Taco seasoning, to taste
  • 2 cans diced tomato (I often dump 1 can into my food processor to make the tomato pieces smaller)
  • 1 can corn (optional)

Brown the ground beef. Mix everything together in a pot and heat it up. You don’t even have to drain any of the cans or the meat.

  1. My family LOOOOVES this soup! We usually put in 2 jalepeno peppers to spice it up (seeds and all) and if we have leftovers we make scrambles taco eggs – super yummy!

  3. Might be a silly question but I was just wondering what the difference of diced tomato and blended tomato is?
