Swedish Pancakes and Caramel Syrup Recipe {Yoder Family Sunday Night Dinner}

For the past few months, our family has enjoyed this homemade Swedish Pancakes recipe on Sunday night!  They are a thin and delicious pancake, much like a crepe, but not so complicated to handle.  We pull out our large skillet (like this one) and cook 8 at a time.   This recipe makes enough for our family of 9 (each person can easily eat 4-6 because they are so thin).   So if you have a smaller family, you may want to only mix up half the batch.

Swedish Pancakes

Ingredients

  •  3 cups flour
  • 2 TBSP sugar
  • 1 tsp baking powder
  • 1 tsp salt
  • 4 cups milk
  • 4 eggs
  • 1 tsp vanilla
  • 4 TBSP melted butter

Directions

Stir all dry ingredients and then add the eggs, milk, vanilla, and melted butter.  Mix it well (it can be lumpy… I mixed it for quite awhile in my KitchenAid and now I just mix it up in my BlendTec).  Cook on a hot griddle or skillet (we set ours at 340 degrees).  Serves 9 with a few extra for tomorrow!

Half my family loves to put our homemade jam on top (see my homemade freezer jam recipe) and the other half LOVE this easy and delicious Caramel Syrup recipe that I got out of one of my favorite cookbooks, Our Best Bites!

Caramel Syrup

Ingredients

  • 3/4 cup buttermilk (Now I never have buttermilk on hand, so I use this substitution:  Put 3/4 of a Tablespoon of white vinegar  in a 1 cup measuring cup, then fill to 3/4 full with milk… let it sit for 5 minutes and then you’re good to go!)
  • 1 1/2 cups sugar
  • 1/2 cup real butter
  • 2 TBSP corn syrup
  • 1 tsp baking soda
  • 1 tsp vanilla

Directions

Combine “buttermilk”, sugar, butter, corn syrup, and baking soda in a 4 quart pot.  Bring mixture to a boil adn reduce heat to low (just make sure it’s still bubbling).  Cook, stirring very frequently, for 7-9 minutes or until the syrup reaches a rich golden brown.  Remove from heat and stir in vanilla.

Trust me, you’ll LOVE this syrup!  I gave some to a friend and she and her family put a little in their oatmeal each morning (great idea for using the leftovers!).

    Oh my, these are so good–especially that carmel sauce. My family is always trying out new pancake recipes so I made these this morning. Every one loved them and hubby had (at least) three stacks! Hubby and kids also requested sliced apples to dip in the carmel while they waited for each batch of hot pancakes. Delish! THX for sharing the recipe!
