Cutting the Dough

Use heart-shaped cookie cutters to cut hearts out of the pie crust dough. The cutters that I use are about 2 inches wide and they seem to work well for this task.

Roll out the dough scraps and cut out a few more hearts, then you’re ready to add the filling onto half of them.

Filling the Mini Heart Pie Cookies

I used homemade raspberry freezer jam and Nutella spread as the fillings. I just happened to have them on hand, they are super easy to use, and also yummy.

Some other options that might be good are lemon curd, fudge filling, apple pie filling, or any pie filling that can be baked. Let me know what you use!

The amount of filling that you use for each heart will vary depending on the size of your dough cut-outs and on the thickness of your filling. You can use more filling if it is thicker because it won’t gush out the sides as much. Use less between the heart pieces if your filling is on the thin side.

Either way, be sure to leave room around the edges of the cut-out in order to crimp the dough pieces together.

Finishing the Heart Pies

To finish up, brush some milk over the tops of your mini heart pies and sprinkle on a nice layer of sugar. Bake just until the crust is beginning to lightly brown.

The crusts will bake better if they are at room temperature before baking, but that should happen anyway with the time it takes to assemble it all.

Recipe Yield & Kitchen Recommendations

You should be able to get about 12-15 mini heart pie cookies from each pie crust, but it will vary depending on the size of your heart cut-outs. By the way, aren’t they adorable?

I love my silicone baking mat:

Artisan baking mats

Silicone baking mats are awesome for keeping the pie crust from sticking to the counter and for baking the hearts too! We can recommend Artisan, Silpat, and MIU brands from personal experience. There are probably other brands that work well too, just look for lots of high customer reviews.

Best cookie cutter set:

Wilton 2304-1050 101-Piece Cookie Cutter Set Amazon Deal

This cookie cutter set is really similar to the one that I have had for years. It contains the same heart cookie cutters that I use for these mini heart pies!
