Lasagna Roll Ups

This is a fun new way to make Lasagna! You can even double the recipe & put your 2nd pan in the freezer for another night!

Lasagna Roll Ups

Ingredients

  • 8 oz box Lasagna Noodles
  • 1 box frozen Spinach
  • 1 lb ground beef
  • 16 oz Ricotta Cheese
  • 2 cups Mozzarella Cheese
  • 1 jar Pasta Sauce (use red or Alfredo sauce)

Instructions

  1. Preheat oven to 350 degrees F
  2. Bring a large pot of water to a boil. Add lasagna pasta and cook for 10 minutes or until al dente & drain
  3. In skillet pan cook ground beef
  4. Lay out 1 noodle on flat surface (cutting board works great)
  5. Layer filling (1/10 of each item in each noodle) ricotta cheese, spinach, ground beef, mozzarella cheese
  6. Roll up noodle
  7. Repeat until used all noodles
  8. Pour 1/2 cup of pasta sauce in bottom of 9x13
  9. Place each roll up in baking dish
  10. Pour pasta sauce mixture over lasagna rolls
  11. Sprinkle with mozzarella cheese and your favorite cheese
  12. Bake for 40 minutes.
  13. Serves 6

  1. I use the 2 cups ground turkey, chicken, or ham and leave out the spinach.
    Additionally I replace the mozzarella with monteray jack. I saute 1/3 cup onion, 3 cloves garlic in butter, add 1/4 cup dried parsely, 1 egg and 1/2 cup parmesan cheese. I set aside 1/2 the monteray jack for sprinkling on to before rolling them up and combine the rest of ingredients and spread on noodles. To save time I use the noodles that do not have to precolonial. Just dip in hot water till they soften.
