Lasagna Cupcakes…

These tasty lasagna cupcakes are a snap to make!

Ingredients

  • 1 cup marinara sauce
  • 3/4 pound ground beef
  • 12 wonton wrappers
  • 8 ounces shredded mozzarella
  • 3 ounces Parmesan cheese
  • 4 ounces Ricotta cheese
  • (optional) basil for garnish

Directions

  1. Preheat oven to 375 degrees. Spray muffin tin with cooking spray.
  2. Brown beef and season with salt and pepper. Drain.
  3. Cut wonton wrappers into circle shapes using a biscuit cutter or using the top of a drinking glass. You can cut several at a time.
  4. Reserve 6 tablespoons Parmesan cheese and 6 tablespoon mozzarella for the top of you cupcakes. Start layering your lasagna cupcakes. Begin with a wonton wrapper and press it into the bottom of each muffin tin. Sprinkle a little Parmesan cheese, Ricotta cheese, and mozzarella cheese. Top with a little meat sauce and marinara sauce. Use around 1-2 teaspoons of all the ingredients depending on your personal preference.
  5. Repeat layers ending with marinara sauce. Top with reserved Parmesan and mozzarella cheese.
  6. Bake for 18-20 minutes or until edges are brown. Remove from oven and let cool for 5 minutes. To remove use a knife to loosen the edges then pop each lasagna out.
  7. Garnish with basil and serve.

  3. Hi, I live in Montana, and I went to pick up some doubler coupons, and they now have behind the desk at customer service. They are saying only one per customer…so sad. Any words of advice I could use to talk to a manager? It is ok to ask for more as long as I am going to use them. I would never be rude, but I bought coupons to use with these doublers so I feel like I am getting a bum deal

    • Hi Robyn, I have gotten to know the people at Albertsons just over time and here in WA they have given me extras. It seems true that they are one per customer and sometimes per day but being friendly sometimes does help. How I got to know the people was ask for advice or where something is located or got to know the deli/ seafood folk. They told me most people just get in and get out and no-one really stops to talk or ask questions and that I was “rare?” so they helped me with a few more papers. But even so I still buy 4 regular papers each week for the inserts anyway. Hope that helps. : )

  4. Mavis!! Where do you find the wonton wrappers? I looked at both Winco and Albies with no luck…. but I suspect I might just not know what section to look in :)

  5. planning to make these tonight, but don’t see why the wrappers need cut in circles? In picture, they still look pointy like wonton wrappers. Am I missing something? Help!!
