Mango Freezes Easily

I love mango! When I buy a big box of mangoes my family can not eat all of them before they start to get old, so it works really well to freeze them. Then I can use my frozen mango to make smoothie recipes. When I was in the Philippines I learned how to properly cut a mango. It can be a little tricky because of the large seed in the center of the mango, so there really is a best way to cut a mango.

How to Freeze Mango

Freezing mango is very simple.

  • Cut it out and arrange it on a baking sheet or a 13×9 pan depending on which pan fits in your freezer.
  • Cover the top and bottom of the pan with plastic wrap.
  • Let fruit freeze for 24 hours.
  • Then transfer mango from the pan to a freezer bag and return to the freezer for long term freezing.

    We have two large mango trees in our back yard and right now the mangoes
    are falling off like crazy. We didn’t know we could cut up and freeze them until
    we read your comments on this web sight.
    One thing we do to make it easier to section a mango is to use a potato peeler
    to remove the skin. It works great and there’s less waste.

  • Wi have eaten mangos in South America and in the USA. They are always great. They make wonderful jam or syrup instead of the usual maple syrup. We wash our whole mangos in vinegar water, put each one, unpeeled in a vacuum seal bag (they never turn colors on the peel), and when we want one we take it out, leave it for abou 15 minutes to thaw slightly and peel with a vegetable peeler. After they set for another 15-30 minutes, hold the mango with tongs and slice along the seed to remove the flesh. Cube the still frozen mango and enjoy. Very refreshing in hot or cold weather.

  • Thanks for the info! Question, for freezing, why can’t I put the cut mango directly into a freezer bag, why go the extra step of putting on a tray first?

    • Great question, Mike! The extra step is similar to “flash freezing”… if you throw all the fruit in a freezer bag right after cutting, it will freeze in a large lump of fruit. Take the time to freeze them individually first, then throw them in a freezer bag. When you are ready to use some frozen mango for a smoothie or something, you can just grab what you need from the bag. Hope that helps!

  • I use to cut my Mangos the way you showed here, but I have found a way to get better and bigger pieces from the Mango. I cut it off the seed the same way you show, but instead of cutting squares and turning it inside out I actually slice the pieces into strips and then slide my knife between the skin and the fruit(kinda like you get the skin off a fish.) I end up with a lot bigger pieces that you can slide a popsicle stick into it so the kids’s hands stay alot cleaner too. I hope this helps other Moms with the mess kids can make .
