Hot Chicken Salad

One Family

2 lbs chicken cooked and cubed

2 Tablespoons lemon juice

1/4 cup slivered almonds (may be toasted)

1 cup mayonnaise

1 cup grated cheddar cheese

2 cups finely chopped celery

1 cup cream of chicken soup

1 teaspoon minced onion

1 1/2 oz crushed potato chips or corn flakes

6 Families

12 lbs chicken cooked and cubed

3/4 cup lemon juice

1 1/2 cup slivered almonds (may be toasted)

6 cup mayonnaise

6 cup grated cheddar cheese

12 cups finely chopped celery

6 cup cream of chicken soup

6 teaspoon minced onion

1 bag crushed potato chips or corn flakes

Toast almonds on cookie sheet in a 350 degree oven for 5 to 7 minutes. Mix all the ingredients except cheese and potato chips. Place in baking dish and add cheese, then chips to the top of mixture. Bake at 400 degrees for 20 minutes Serve with croissant rolls.

FM Prep: 6 gallon bags. 12 lbs. chicken cubed- cooked, toast almonds, 12 c. chopped celery, 6 tsp. onion.

Nevertheless think of if you added some great graphics or video clips to give your posts more, “pop”!     If I prepare this recipe and freeze it for later use, shoul I still bake it at 400 degrees> Do I have to extend baking time?

    • Actually this is good baked or not. But yes, bake it after thawing, it sounds weird baked because it did to me at first but it is really good.

  4. I found your blog tonight (from the weigh I am), found this recipe and made it tonight – awesome! We halved the ‘one family’ recipe and made it 4 servings. We put it in wraps – SO good.
