Sausage and Lentil Soup (Crockpot)

I love this recipe!  It’s delicious, hearty, and easy to make!

Freezer Meal: Sausage and Lentil Soup

Ingredients

  • 1 lb ground Italian sausage or turkey sausage
  • 2 cups green lentils, rinsed
  • 1 large diced onion
  • 4 stalks diced celery
  • 3 diced carrots
  • 1 diced eggplant
  • 3 large cloves minced garlic
  • 1 teaspoon freshly ground black pepper
  • 1 tablespoon dried basil
  • 1 tablespoon dried oregano
  • 1/2 tablespoon dried thyme
  • 8-10 cups chicken broth
  • 2 (15 ounce) cans diced tomatoes, undrained
  • grated Parmesan

Instructions

    Prepare for Freezing:
  1. Cook the Italian sausage in a large frying pan over medium heat until it is cooked through.
  2. Add all ingredients to crockpot except garlic and Parmesan.
  3. Cook on low for 8-10 hours or on high for 4-5 hours.
  4. Add the garlic an hour before soup is finished.
  5. Once the soup is finished top it with shredded Parmesan.
  6. Portion into ziploc freezer bags or individual containers, lay flat and freeze.
  7. Prepare after Freezing:
  8. Defrost in the fridge for up to 24 hours, and reheat in large stock pot (or microwave if in containers).
