Freezer Meal and Crockpot meal all in one!

PINEAPPLE PEPPER CHICKEN


FOR ONE FAMILY
2 cups unsweetened pineapple juice
1 cup sugar
1 cup vinegar
3/4 cup water
1/2 cup packed brown sugar
1/3 cup cornstarch
1/4 cup ketchup
3 Tbls soy sauce
1 tsp. chicken bouillon granules
1/2 tsp. ground ginger
4 chicken breasts
1 can (8 oz.) pineapple chunks, drained
1 medium green pepper, julienned (optional)

FOR SIX FAMILIES

12 cups unsweetened pineapple juice
6 cup sugar
6 cup vinegar
4 1/2 cups water
3 cups packed brown sugar
2 cups cornstarch
1 1/2 cups ketchup
18 Tbls soy sauce
6 tsp. chicken bouillon granules
3 tsp. ground ginger
24 chicken breasts
6 cans (8 oz.) pineapple chunks, drained
6 medium green pepper, julienned (optional)

TO PREPARE FOR FREEZING:
In a gallon size freezer bag combine the first 10 ingredients, then add chicken. Seal and freeze. Set aside pineapple for pantry and freeze sliced pepper in a separate bag.

Freezer Cooking for a group tip: Place freezer bags in a large bowl so you can fill more than one at a time and keep them from spilling.

TO PREPARE AFTER FREEZING: Thaw ingredients enough to place in crock pot. Cook on low for 5-6 hours. 30 minute before it is finished add pineapple and green pepper, cook an additional 30 minutes. Serve over rice.

OR: Place chicken in a 13x 9 pan. Heat sauce on stove until it starts to thicken. Pour sauce over chicken. DO NOT over fill the pan. There will be extra sauce. Pour sauce in a container and freeze so you can make this dish again later! Place pan in oven at 350° and bake for 30 minutes. Remove from oven place peppers and pineapple on top and bake for an additional 15 minutes.

    How many does this recipe feed?

    • If you do it with 4 breasts of chicken it will feed 4-6 people. My two kids usually eat a half breast so I can feed my family of 4 plus have leftovers for lunch.
      You can easily add more chicken and still have plenty of sauce. Plus serving over rice makes it more filling.
      How many people do you usually cook for?

        Between 4-6 people is the perfect amount I needed. Thank you. I noticed on the bottom picture there are red bell peppers and onions added to the meal. Do you add the onions in when you add the green bell pepper? Also, how much onion would you add?

        • 1 onion would be sufficient. Yes, you add it in with the peppers. We love this recipe so much I have used photos from making it at several different times.

  2. What kind of vinegar do you use?

  3. This may be a dumb question, but do you mix all of your ingredients before you put them into the Ziploc, or just dump them in and then mix after thawing (when it’s in the crock pot)? Just curious if it’s necessary to dirty a bowl if I don’t have to…

  4. Stupid question…do you buy a can of unsweetened pineapple juice and would it be in the same section as the pineapple chunks?

  5. I made this dinner tonight with raw, frozen chicken. I also didn’t freeze beforehand, I just prepared, and it was a big hit! My husband loved it! Thanks for the recipe :)

    Made this for my honey for dinner last night… I’ve been sick the last couple of weeks, and he’s had a crazy week at work, but when I’m sick, he’s in charge of cooking dinner… so at 3:14 I threw everything into the crockpot (substituting ketchup and soy sauce for BBQ sauce because I was out of both) on a quick 4 hour cook (he gets home at 7 pm) and it was FANTASTIC!! He gave it an A+, which he never does :)
    He’s actually looking FORWARD to eating leftovers tonight!

    Do you add uncooked chicken breast into the sauce when preparing to freeze it or do you cook the chicken first?

      great question!

      We usually just add frozen chicken. You could add raw chicken as well if that is how you bought it.
