Quick and Easy Slow Cooker Chicken and Potatoes

I love this slow cooker chicken and potatoes recipe! Not only because it is cooked in the Crock-Pot, but also because you can make endless meals with it! The chicken is so versatile.

You can make chicken salad sandwiches, chicken salad, chicken enchiladas, chicken broth, chicken noodle soup, chicken tortilla soup, and the list goes on. Depending on how many people are in your family will determine how long you can spread out the meals.

Weight Watchers Modification – Only 6 Points!

If you’re whipping this up as a weight watchers meal, you can make a small modification to bring this recipe down to just 6 points! Just make sure you eat the Chicken Breast portion of the whole chicken (or bake with chicken breasts instead) and only use 5 small red potatoes. Easy, right!?

Only 10 Minutes to Prepare

One of my favorite things about this recipe is that it only takes about 10 minutes to prepare! After that, you can just throw it in the slow cooker and wait for your delicious meal to be ready. Do the minimal prep in the morning, and dinner will be ready to go by evening. It’s so convenient!

The Perfect One-Pot Meal!

Adding the potatoes is optional, but they sure are delicious! They end up with a great flavor and are very tender after being cooked right along with the chicken in the slow cooker.

Speaking of tender, the chicken is so much so that it practically falls apart. The meat falls right off the bones! And I usually end up with leftover chicken that I can use in a ton of different chicken recipes later or just eat it as is!

Plus, with these slow cooker chicken and potatoes, you get the main dish and side dish all in one pot! So easy!

Chicken Recipe Directions:

  • Rinse chicken inside and out; pat dry with paper towels. Place chicken on plate; set aside.
  • In a small bowl, stir together olive oil, garlic, oregano, basil, rosemary, salt, and pepper. With basting/pastry brush, spread mixture all over the chicken. Transfer bird to Crock-Pot. Cook on high for 4-5 hours or on low for 8-10 hours.

Optional Potato Recipe Directions:

  • In a large Ziploc bag or large bowl, add potatoes, olive oil, garlic, oregano, basil, rosemary, salt, and pepper; mix to coat. Transfer potatoes to Crock-Pot, and pour over bird. Cook with bird as directed above.
