How to Roast Pecans Quickly and Perfectly!

This cinnamon roasted pecans recipe is the best! The pecans turn out exactly as they should, coated in sweet, salty, crunchy crystals of sugar. Not soggy, not bland. Quite the opposite!

Ingredients

The ingredients are super simple and easy – pretty standard for cinnamon sugar pecans. However, there really are quite a few variations out there!

Some change up the ingredients a bit, some are on the stovetop (find stovetop instructions below), some require boiling the sugar mixture first. A lot of recipes require baking for 1 hour.

One of my priorities, while I tried out several cinnamon roasted pecan recipes, was that it would not take an hour. I want the same yummy results in less time!

When I tasted these roasted cinnamon pecans, I knew this was the recipe I was looking for. A perfect combo of soft and crunchy, sweet and salty. With that cinnamon sugar flavor, you can almost taste as they bake and the aroma fills the room. Yum!

Stovetop Instructions

If you want to roast your pecans on the stovetop rather than in the oven, no problem! Start by adding egg white, water, sugar, cinnamon, and salt to a non-stick skillet, and cook over medium heat for 1-2 minutes until the sugar is dissolved and the mixture bubbles.

Then, add pecans and cook for about 3 minutes, until they’re coated and caramelized. Finally, remove from heat and pour the pecans onto wax paper to cool.

Pecans vs Almonds

This recipe is good with raw pecans or almonds, so you can do a mix of both or pick whichever is your favorite! Pecans are my first choice because of that soft and crunchy factor.

Final Thoughts

Cinnamon sugar pecans are a fun gift idea for neighbors, family, and friends, as long as there are no nut allergies, of course. Package them in a cute cellophane bag with a bow or a festive treat box!

Candied pecans also make a delicious salad (check out this other pecan salad topping) or dessert topping (try them on some homemade ice cream, yum)! But, I love to eat them just as they are for a sweet snack.

Note: Let the pecans cool before storing or they could become soggy.

Instructions

  • Preheat oven to 300°F/150°C. Line a rimmed baking sheet with parchment paper or a silicone baking mat.
  • In a large bowl, whisk egg white and water until frothy, about 30 seconds.
  • Add pecans to egg white mixture and gently stir until pecans are well coated.
  • In a small bowl, combine sugar, cinnamon, and salt. Pour over pecan and stir until pecans are well coated.
  • Spread pecans in an even layer on the prepared baking sheet. Bake for 10 minutes, then stir pecans. Bake for another 10 mins, or until the sugar has caramelized.
  • Let cool. Enjoy!
  • Store in an airtight container at room temperature for 2-3 weeks.
