Chicken, Broccoli and Rice Bake { 7 Easy Steps }

Being the oldest of 5 children I had to make many meals to help my mom. This is the first real dinner (other than macaroni and cheese from a box or hot dogs in the microwave)  I learned to make when I was about fourteen. My family always loved it. My children now love it too. It is so simple even a teenager could make it.

Ingredients:

1 cup rice Rice Coupon

1 T Butter Butter Coupons

2 cups water

1 cup chicken chicken deal

1 can cream of chicken Condensed Soup Coupon

1 ½ cups of Shredded Cheddar Cheese Cheese Coupon

1/2 cup Milk Milk Coupon

1 1½ cups of broccoli

salt/pepper to taste

Preparation:

1. Cook chicken or turkey and cube.

2. To prepare rice. Bring water and butter to boil, add rice and cover. Cover and place heat on low. Simmer for 20 minutes.

3. Steam broccoli until tender.

4. Shred cheese.

5. Mix together rice, cream soup, milk and salt/pepper. Add chicken/turkey and 1/2 cup of cheese.

6. Place in 13×9 pan and add broccoli on top. Gently press broccoli into rice mixture. Top with cheese.

7. Bake uncovered at 350° for 20-25 minutes.

1. Cook chicken or turkey and cube. I like to cook several breasts in the crock pot at the beginning of the week and then use them for various recipes through out the week. I also used this chicken to make my favorite Homemade Chicken Noodle Soup!

2. To prepare rice. Bring water and butter to boil, add rice and cover. Cover and place heat on low. Simmer for 20 minutes. I usually use white rice for this recipe, but it is also good with brown rice. Brown rice has more fiber in it! Be sure to plan for time to cook brown rice for 40 minutes.

3. Steam broccoli until tender. Be careful not to over cook the broccoli. It will get more baking time in the oven.

4. Shred cheese. Sorry no picture for shredding cheese. I bet your heart broken? I used the pre-shredded kind on this recipe. 🙂

5. Mix together rice, cream soup, milk and salt/pepper. Add chicken/turkey and 1/2 cup of cheese.  I like to mix these ingredients in the rice pan so I do not have to dirty any other dishes. 

6. Place in 13×9 pan and add broccoli on top. Gently press broccoli into rice mixture. Top with cheese. It is best to press the broccoli into the rice rather than mixing it in to keep it from falling apart.

7. Bake uncovered at 350° for 20-25 minutes. TaDa… a meal your whole family is sure to love!
