<p>I have a freezer full of <a href="https://www.zayconfoods.com/refer/zf14239" target="_blank">Zaycon chicken and bacon </a>and a desire to cook as much soup as possible to ward off the dropping temps! I found this recipe over on <a href="http://acooksquest.blogspot.com/2010/02/recipe-7-chicken-corn-chowder-easy-way.html" target="_blank">A Cook&#8217;s Quest</a> and it has become a family favorite. I always make one modification: I add bacon! My husband is a lover of bacon &amp; I have to say I love the added flavor. Here is the original recipe:</p>
<h1><strong><strong>Chicken Corn Chowder</strong></strong></h1>
<p><strong>Ingredients</strong></p>
<p>1 1/2 pounds chicken breast<br />
1 T granulated garlic<br />
1 T onion salt ( I added finely diced onions)<br />
1 3/4 c chicken broth<br />
2 cups of diced potato (make the cubes small so your potatoes cook faster)<br />
2 cans of corn (can use fresh corn in season)<br />
2 cups of milk (I used 1/2 &amp; 1/2)<br />
Salt and Pepper to taste<br />
Dry parsley for the top</p>
<p>Add the first four ingredients to a slow cooker ( I added cooked bacon here!). Cook 3-4 hours on high or 5-6 on low or until your chicken is cooked enough that you can shred it easily.</p>
<p>After shredding the chicken, add the potatoes and continue cooking until they are tender. Add milk and corn and cook until warmed through.</p>
<p><em>**If desired, you can thicken with a little cornstarch and water or with a tablespoon of softened butter combined with 2 tablespoons of butter. Add your thickener and cook into the chowder on high until thick and creamy**</em></p>
<p><strong>Total Cost $4.04 (a bit more if you add bacon!)</strong>-This made a full crock in my slow cooker so we had a full meal for 4 with leftovers.<br />
Chicken 1 1/2 pounds @ $1.49 per pound $2.24<br />
Seasonings $.50<br />
Chicken Stock $.50 (1/2 of a carton that I purchased for $1)<br />
Potatoes $.30 (part of the bag I bought for .79)<br />
Corn $.20 (Got each can on sale for $.10!)<br />
Milk approx. $.30</p>

<h2 style="text-align: center;">Chicken and Black Bean Chili</h2>
<p style="text-align: center;">(recipe from my family cookbook) <img src='http://fabulesslyfrugal.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> </p>
<p><strong>Ingredients:</strong></p>
<p>1 Tbs. Vegetable Oil<br />
1 Medium Onion, chopped <span style="color: #d63e4d;"><em>(I used a red onion)</em></span><br />
4 boneless, skinless chicken breast halves, cooked and shredded <span style="color: #d63e4d;"><em>(I used my Zaycon chicken!)</em></span><br />
(2) 14 1/2 oz. cans diced tomatoes (undrained)<br />
(1) 15 oz. can black beans, rinsed and drained<br />
1 Tbs. chopped fresh Cilantro<br />
Hot Sauce or Chili powder to taste <span style="color: #d63e4d;"><em>(or whatever seasonings you like)</em></span></p>
<p><strong>Directions:</strong></p>
<p>In deep pot/skillet, heat oil. Add onion and saute until tender and translucent. Add all remaining ingredients except cilantro. Bring to a boil. Reduce heat and simmer uncovered 20 minutes, stirring occasionally. Stir in cilantro. Makes aprox 5 1/2 cups.</p>
<p><span style="color: #d63e4d;"><em>(To make a bigger batch, sometimes I&#8217;ll add in a second can of black beans or canned corn.)</em></span></p>
<p>Top with grated cheese and/or sour cream and serve hot with warm rolls, corn bread or tortilla chips!</p>

<p>When the bacon is about 2/3rds cooked, add 1 finely chopped onion.  The smell of onions cooking in bacon grease is heavenly.  Continue to cook until the onions are browned and the bacon is near crispy.  Set aside. When the bacon has cooled, chop it into 1/2&#8243; bits.</p>

<p>Next, puree 1 1/2 cups of corn (I used frozen corn).</p>

<p>After you have grilled your potatoes, fried your bacon and onions, and pureed your corn add 1 cup of corn kernels, a pinch of dried thyme, a pinch of salt and a pinch of pepper.</p>

<li>Bag the chicken breasts side by side in a gallon sized bag.  Makes for simple storage!

<li>Only need one or two breasts?  Simply toss the bag of 6 frozen chicken breasts on a concrete floor (patio/garage floor) so the chicken breaks apart.  Open the bag, pull out a breast or two, reseal the bag and put it in the freezer! (I took video of me doing this, but can&#8217;t get it off my phone!).</li>

<li>You can also cook chicken (I like to do it in the crock pot), let it cool a bit, shred it or cube it, and the bag it.  Great to use for casseroles, salads, and soups!</li>
