I have a freezer full of Zaycon chicken and bacon and a desire to cook as much soup as possible to ward off the dropping temps! I found this recipe over on A Cook’s Quest and it has become a family favorite. I always make one modification: I add bacon! My husband is a lover of bacon & I have to say I love the added flavor. Here is the original recipe:

Chicken Corn Chowder

Ingredients

1 1/2 pounds chicken breast
1 T granulated garlic
1 T onion salt ( I added finely diced onions)
1 3/4 c chicken broth
2 cups of diced potato (make the cubes small so your potatoes cook faster)
2 cans of corn (can use fresh corn in season)
2 cups of milk (I used 1/2 & 1/2)
Salt and Pepper to taste
Dry parsley for the top

Add the first four ingredients to a slow cooker ( I added cooked bacon here!). Cook 3-4 hours on high or 5-6 on low or until your chicken is cooked enough that you can shred it easily.

After shredding the chicken, add the potatoes and continue cooking until they are tender. Add milk and corn and cook until warmed through.

**If desired, you can thicken with a little cornstarch and water or with a tablespoon of softened butter combined with 2 tablespoons of butter. Add your thickener and cook into the chowder on high until thick and creamy**

Total Cost $4.04 (a bit more if you add bacon!)-This made a full crock in my slow cooker so we had a full meal for 4 with leftovers.
Chicken 1 1/2 pounds @ $1.49 per pound $2.24
Seasonings $.50
Chicken Stock $.50 (1/2 of a carton that I purchased for $1)
Potatoes $.30 (part of the bag I bought for .79)
Corn $.20 (Got each can on sale for $.10!)
Milk approx. $.30

Chicken and Black Bean Chili

(recipe from my family cookbook)

Ingredients:

1 Tbs. Vegetable Oil
1 Medium Onion, chopped (I used a red onion)
4 boneless, skinless chicken breast halves, cooked and shredded (I used my Zaycon chicken!)
(2) 14 1/2 oz. cans diced tomatoes (undrained)
(1) 15 oz. can black beans, rinsed and drained
1 Tbs. chopped fresh Cilantro
Hot Sauce or Chili powder to taste (or whatever seasonings you like)

Directions:

In deep pot/skillet, heat oil. Add onion and saute until tender and translucent. Add all remaining ingredients except cilantro. Bring to a boil. Reduce heat and simmer uncovered 20 minutes, stirring occasionally. Stir in cilantro. Makes aprox 5 1/2 cups.

(To make a bigger batch, sometimes I’ll add in a second can of black beans or canned corn.)

Top with grated cheese and/or sour cream and serve hot with warm rolls, corn bread or tortilla chips!

It’s a good thing I don’t work for Martha Stewart. The pumpkin you see above was the largest one I grew this year.  Sadly there will be no overflowing wheelbarrows of pumpkins and gourds to photograph this year.  No big weigh ins.  Nothing to enter in the county fair. But on the plus side, I also don’t have to worry about my front porch pumpkin display being vandalized by hooligans.

Then the following day I used my $5.00 off coupon (from my preferred savings card) and my $3.00 off catalina from my Nature Valley Granola Thins deal and rolled my coupon & catalina and picked up 8 lbs of sugar, 2 free Dr. Pepper, 1 bottle of vegetable oil and 1 grape for a mere $.02 oop!

I used 2 $2.00 off one (NLA) printable coupons and paid only $1.00 for 2 Digiorno pizzas.

I scored 12 bottles of Clorox Toilet Bowl Cleaner (I love this stuff!) for free with an Amazon.com gift card I earned via Swagbucks.

15lbs. of yummy Zaycon bacon $44.55 (I split an order with my neighbor).

Update: I called my local Albertsons store and they said as soon as they receive conformation of my prize the store director will call me.  She also added that the confirmations are just starting to come in and I should be expecting a call soon.

How was your week?  Did you find any FAB deals?

Start with 1 pound of new potatoes.  Garden fresh is best.

Quarter the potatoes, toss in olive oil and fire up the bbq.  I prefer to grill my potatoes in something similar to this.

Next, fry up about 8 slices of Zaycon bacon in your favorite cast iron skillet.

When the bacon is about 2/3rds cooked, add 1 finely chopped onion.  The smell of onions cooking in bacon grease is heavenly.  Continue to cook until the onions are browned and the bacon is near crispy.  Set aside. When the bacon has cooled, chop it into 1/2″ bits.

Next, puree 1 1/2 cups of corn (I used frozen corn).

After you have grilled your potatoes, fried your bacon and onions, and pureed your corn add 1 cup of corn kernels, a pinch of dried thyme, a pinch of salt and a pinch of pepper.

Add 5 cups of milk (I used 2%) and simmer for 20-30 minutes.  Call your family to the dinner table, and dig in!

Corn Chowder w/ Bacon & Potato

1lb new potatoes

8 slices bacon

2 1/2 cups of corn

1 finely chopped onion

5 cups of milk (I suggest 2% milk)

Dried thyme, salt & pepper

2 tablespoons olive oil

What do we do when we get a great deal on chicken?

Since we always tell you to stock up when you get a great deal, you’re going to want to stock up on some delicious chicken!  Here is a 3 minute video of the ever so lovely Monica showing you what to do with cheap fresh chicken!

To recap the video, here are a few tips for storing cheap and fresh chicken breasts!

• Use kitchen shears to trim the chicken… super easy!
• Bag the chicken breasts side by side in a gallon sized bag.  Makes for simple storage!
  • Only need one or two breasts?  Simply toss the bag of 6 frozen chicken breasts on a concrete floor (patio/garage floor) so the chicken breaks apart.  Open the bag, pull out a breast or two, reseal the bag and put it in the freezer! (I took video of me doing this, but can’t get it off my phone!).
• You can also cook chicken (I like to do it in the crock pot), let it cool a bit, shred it or cube it, and the bag it.  Great to use for casseroles, salads, and soups!
• Put some FREE salad dressing (Ranch or Italian – yummy!) or BBQ Sauce or a favorite marinade in the bad with the chicken!  Then when you’re ready to eat it, pull it out the night before and it will soak and marinade all day long while it thaws!
