These burritos are great for mornings on the go! I often warm them up for my husband as he’s getting ready for work. You could also send them off with your kids before school. Customize them however you like, there are all kinds of options!

Freezer Meal Recipe: Breakfast Burritos

Yield: 12-18 burritos

Ingredients

  • 1 pound ground pork sausage
  • 1 lb. frozen cubed Ore Ida potatoes
  • 12 eggs, beaten
  • 2 T. milk
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 2 T. butter
  • 2 10 oz. cans green chili sauce
  • 12-16 burrito sized flour tortillas (I used regular size whole wheat tortillas this time and was able to make about 10 burritos.)
  • 2 cups cheddar cheese, grated

Instructions

To prep the burrito ingredients:

In a large skillet, brown the sausage. Remove from heat and drain excess fat. Set aside. Brown potatoes in oven by placing them on a baking sheet and broiling according to package instructions until crisp. Meanwhile, mix eggs, milk, salt and pepper together in a medium mixing bowl. Over medium heat, melt the butter in separate large skillet. Add egg mixture to skillet and scramble the eggs, removing from heat once the eggs are cooked but still moist. Warm green chili sauce over medium heat in saucepan until warmed through.

To assemble the burritos and prep to freeze:

Warm the flour tortillas on skillet or in the microwave until soft and flexible. Fill tortillas with 1/3 cup scrambled eggs, 2-3 T. sausage, and 1/3 cup potatoes. Top with cheddar cheese and green chili sauce according to taste. Fold tortillas snuggly into burritos. Wrap each burrito in plastic wrap, then place in freezer bags. Freeze.

On serving day:

Remove burrito from freezer and remove plastic wrap. Wrap in a paper towl and place in microwave on defrost for 3 minutes, then on high for 1 minute. Let cool and enjoy with sour cream or salsa!

Buttermilk Oatmeal Bread Recipe

Fresh, warm, home baked bread… YUM! This is my new favorite recipe!

Buttermilk Oatmeal Bread Recipe

Ingredients

  • 2 tsp. yeast
  • 1/3 cup warm water
  • 1 1/2 cup rolled oats
  • 1 cup boiling water
  • 1 1/2 cups buttermilk (If you don't have buttermilk, regular milk will work too)
  • 1/2 canola oil
  • 1/2 brown sugar
  • 2 1/2 cups whole wheat flour
  • 2 1/2 cups bread flour
  • 1 Tbs. salt

Instructions

1. Proof the yeast (optional) and 1/3 cup warm water. In a separate bowl, combine the oats and boiling water. Let both mixtures stand 8-10 minutes. The yeast should look creamy and foamy.

2. Place all ingredients except salt into a mixer. Knead with dough hook for 2-3 minutes, then let rest for 20 minutes. Add salt and knead with dough hook in mixer on medium for an additional 15 minutes.

3. Turn the dough out into a well oiled bowl. Turn the dough to coat it, then cover and let rise for approx. 1 hour or until it has doubled.

4. Punch down the dough and cut in half. Talk one half and place on a clean, lightly floured surface and press into a rectangle shape. Now roll into a larger rectangle. Fold into thirds, letter-style, then roll up. Pinch the seams closed and place seam side down into your prepared loaf pan. You can also just set on a baking sheet to bake if you don't mind it taking on it's own shape. Repeat with the other half of the dough.

5. Lightly brush with water and sprinkle a few additional oats onto the top of the loaf. Very gently press into place. Let rise in a warm place for an additional 30-60 minutes.

6. Bake in a pre-heated 375 degree oven for 30-40 minutes, or until crust is golden brown and the internal temp reaches 190-200 degrees.

Fresh Ground Whole Wheat Flour

My husband and I received a Wonder Junior Deluxe Hand Grain / Flour Mill for Christmas. I thought I’d break it in and grind my very first batch of whole wheat flour for this recipe. Cranking that grain mill to make only a small amount of flour took some work! While grinding, I thought of the pioneers and our ancestors who had to work that hard everyday for their food. Though I was super excited to enjoy the fruit of my own labors, it made me really appreciate the many wonderful conveniences we have in our lives today!

Slow cooker recipes are my favorite! I love that I can assemble the recipe in the morning, turn on the slow cooker and let it do the rest! Come dinner time the house smells wonderful and the food is ready to be served! I love this creamy chicken recipe because it only call for 4 ingredients! Add some rice or noodles and you’ve got a yummy main dish!

Creamy Slow Cooker Chicken

Yield: 6 servings

Ingredients

  • 1 envelope dry onion soup mix
  • 2 cups sour cream
  • 10 3/4 oz. can Cream of Mushroom soup
  • 6 boneless, skinless chicken breast halves (I like Zaycon chicken!)
  • ground black pepper to taste

Instructions

1. Combine soup mix, sour cream, and cream of mushroom soup in slow cooker. Add chicken. Make sure you push it all down so it is completely submerged in the sauce.

2. Cover. Cook on Low 8 hours. Depending on your slow cooker, you may need to adjust this slightly so be sure to check on it around hour 7.

3. Serve hot over noodles or rice. Season with ground black pepper if desired.

My littles love this sweeter version of enchiladas because it’s not “picy” which makes it a regular at our house!  Sometimes I sneak in corn, beans and even finely chopped bell peppers as well. It makes a great freezer meal too!

Honey Lime Enchiladas Recipe

Ingredients

  • 1 lb. Ground Beef (you can also use cooked shredded chicken)
  • 1/2 Cup Onions, finely chopped
  • 4 Tbsp. Honey
  • 4 Tbsp. Lime Juice
  • 1 Tbsp. Chili Powder
  • 1/2 Tbsp. Paprika
  • 1/2 Tsp. Garlic Powder
  • 1 10 oz. Can Red or Green Enchilada Sauce
  • 1 Cup Heavy Cream
  • 10 oz. Cheese, grated
  • Green onions or chives for garnish, (optional)
  • Tortillas (I like to use whole wheat :))

Instructions

1. Pre-heat oven to 350 and spray pay lightly with cooking spray.

2. Brown ground beef and onions together in large skillet. Drain excess grease.

3. In a large bowl, combine cooked ground beef, onions, honey, lime juice, chili powder, paprika, and garlic powder.

4. Spoon the mixture into the tortillas. Roll them up and place the seam side down on the bottom of the pan.

5. In a separate bowl, mix together the heavy cream and enchilada sauce. Pour over tortillas.

6. Spread the grated cheese evenly over the top and garnish with green onions/chives. (optional)

To bake immidiately

Cover with foil and bake for 20-25 min. Remove foil and bake an another 5 minutes until cheese is completely melted and bubbly.

To Freeze:

After placing cheese on top, cover dish tightly with foil (I use two layers) and freeze for up to two months. To prepare after freezing, remove from freezer, let thaw completely then bake at 350 degrees for 20-35 minutes or until warmed all the way through.

Freezer Meals: Whole Wheat Pancakes

Healthy Whole Wheat pancakes are a great way to start off every morning!

Whole Wheat Pancakes

I love making these pancakes they use real whole wheat. Make the recipe 3 times to have enough extra to freeze. It then makes a healthy & fast breakfast that you can just pop in the toaster or the microwave.

Whole Wheat Pancakes

Ingredients

  • 1 cup whole wheat
  • 1 1/2 cups milk
  • 1/2 cup oil
  • 2 Tbsp baking powder
  • 2 Tbsp sugar (for sugar-free version add splenda instead)

Instructions

Put 1 cup wheat & 1 cup milk in blender for 3 minutes.

After first 3 minutes add an additional 1/2 cup milk.

Blend for additional 2 minutes.

Add 1/2 cup oil, 2 Tbsp baking powder, and 2 Tbsp sugar to blender until mixed.

Pour onto skillet (size that you want pancakes to be), cook on medium.

Makes 12 pancakes.

Colored Spaghetti noodles

Colored Noodles

Ingredients

  • 1 pack Spaghetti Noodles
  • 4 Ziplock Bags
  • 4 Food Colors

Instructions

Cook noodles as directed on package.

Drain & run under cold water.

Divide noodles into 4 parts (or more if you want more colors).

Fill ziplock bag with 1/4 of noodles & 1 cup of water.

Add 7 drops of 1 color of food coloring into bag.

Mix bag.

Repeat until all noodles are colored into different bags & colors.

Drain each bag.

Mix all noodles into large bowl.

Serve with warm spaghetti sauce.

Ingredients

  • 3 Eggs
  • 4 drops Green Food Coloring
  • 1/2 cup Diced Ham

Instructions

Add all ingredients into a bowl.

Stir with a fork until mixed well.

Cook in frying pan on medium heat until eggs are fully cooked.

Slide the Spaghetti noodles through the uncooked hot dogs.

Hot Dog Noodles

Ingredients

  • 1 box Spaghetti Noodles
  • 1 pack Hot Dogs

Instructions

Start pan of water boiling.

Cut each Hot Dog into 5 pieces.

Slide uncooked Spaghetti Noodles through hot dog pieces. (as many or as few noodles as you want)

When all pieces are put together add to boiling water.

Boil for 10 - 15 min or until noodles are cooked.

Serves 6

One of my favorite, and probably the easiest Freezer Meal recipe I make, Ham and Scalloped Potatoes is simple, fast and nutritious!

Freezer Meal Recipe: Ham and Scalloped Potatoes

Ingredients

    For 1 Meal
  • 6 Potatoes, Fresh, Sliced (about 1/4 inch thick)
  • 1 10 3/4 oz cans Cream of Chicken Soup (can substitute any Cream of Soup you have, it all tastes great!)
  • 1 1/3 C Water
  • 1.25 lbs Ham
  • 2 cups broccoli (this is 1/2 bag frozen broccoli (16 oz) if you want to save time)
  • Salt and Pepper
  • 4 oz Cheddar Cheese, Shredded
  • 1 Gallon size Freezer Bags
  • For 4 Meals
  • Because this is so simple, it only takes about 5 extra minutes to make 4 instead of 1, so I always do 4 at a time
  • 24 Potatoes, Fresh, Sliced (about 1/4 inch thick) about a 5 lb bag
  • 4 10 3/4 oz cans Cream of Chicken Soup (or 2 Large Cans-you'll have about 3 TBSP left over)
  • 5 1/3 C Water
  • 5 lbs Ham
  • 8 cups broccoli (or 2 bags 16 oz frozen broccoli)
  • Salt and Pepper
  • 1 lb Cheddar Cheese, Shredded
  • 4 Gallon size Freezer Bags

Instructions

Preparing For the Freezer:

Place 2 cups Broccoli in each gallon bag

Add 1 can (or 1 1/3 cups, if from the big cans) Cream of Chicken Soup to each bag

Add 1.25 lbs cubed ham to each bag

Add 1 1/3 cups (or one can, if you used the little cans of soup) water to each bag

Place 6-7 sliced potatoes (we like yellow or red-and leave the skins on for quicker prep) on top.

Seal and lay flat to freeze.

Preparing after Freezing:

To cook, defrost slightly (enough to get out of Freezer Bag), place entire contents in Crock Pot and cook on low for 8 hours.

In the last hour of cooking, add 4 oz shredded cheddar cheese (or if like me, you forget this step, add it at the end and stir gently)

Notes

I do all the the other work in the same time it takes my sweet hubby to wash and slice the potatoes. Doing all four meals takes the 2 of us about 15 minutes.

I like to buy a 5 LB ham, and cut in in half, and then the halves in half (so each quarter looks identical), it saves time and measuring :)!

You can add the cheese into the bags if you want to save a step, I just personally think it tastes better added at the end of cooking time

If you don't add the potatoes at the end, and freeze right away, they may turn brown/black. This doesn't mean they are bad, it just is what they look like if left in the air to long.

Cost for all 4 Meals

Broccoli $0.78 each ($1.56)

Cream of Chicken soup $1.98 each ($3.96)

5 Lb Ham $9.28

Potatoes $2.50

Cheese $4.99 2 lb Brick (Albertsons Round Up-Ends Tuesday.) ($2.50)

Final Price: $19.80 or $4.95 per meal!

Albondigas Soup

This is my favorite Mexican soup! It’s made with fresh vegetables & good any time of the year.

Ingredients

  • 2 lbs ground beef
  • 1 cup dry uncooked rice
  • 9 cups beef broth
  • 1 can diced tomatoes
  • 3 carrots, peeled & diced
  • 1/2 onion diced
  • 6 medium potatoes peeled & diced
  • 2 celery stalks diced
  • 4 small zucchini
  • 1 tsp cumin
  • 1/2 Tbsp garlic powder (can use 1 clove fresh garlic)
  • 1/4 Tbsp pepper
  • 1 bunch cilantro

Instructions

Combine raw ground beef with dry uncooked rice in mixing bowl, stir together.

Make small balls with meat mixture then place in refrigerator.

In a large stock pan add tomatoes, carrots, onion, potatoes, & celery.

Bring to boil.

Once boiling then add zucchini, cumin, garlic, & pepper.

Add meat balls to stock pan, turn down heat to simmer.

Simmer for 20 minutes.

Garnish with fresh cilantro.

Serves 8
