Homemade biscuits and gravy is really quite easy to make. I put off  learning how to make it for way too long! I wish I would have realized how easy it is to make!

Freezer Meal Recipes: Biscuits and Sausage Gravy

Ingredients

  • Biscuits from a can or homemade biscuits
  • Gravy:
  • 1 lb Sausage
  • 1/4 cup Flour
  • 2 cups Milk
  • salt and pepper

Instructions

1. Bake the biscuits from the homemade biscuits recipe or from the can.

2. Brown sausage in a pan. In this photo I used sausage links because that is what I had on hand. It turned out great, but traditionally I have used ground sausage.

3. When sausage is fully cooked add flour. Stir until well mixed.

4. Slowly add milk. Stir on medium heat until sauces is thick.

5. Add salt and pepper to taste.

6. Serve over warm biscuits.

Preparing For the Freezer:

If you do this as a freezer recipe you can freeze your biscuits. If they are in the tube do not freeze them in the tube. Remove them from the tube unbaked and freeze them in a freezer bag. Homemade biscuits can be frozen in a freezer bag after you bake them.

Gravy can be frozen after prepared, but it tastes a little better to make it the day you are serving it. To speed things up you can freeze the ground cooked sausage and make the gravy on the day you are serving this meal.

Prepare after Freezing:

Let your biscuits thaw. Bake tube biscuits according to tube instructions. Warm homemade biscuits in the oven for 5-10 minutes at 350 degrees.

If you froze gravy. let it thaw and then warm it on the stove. If you only froze sausage put it in a pan over medium heat, warm it up and then make gravy. Or cook sausage and make gravy the day of serving.

Mixing sausage and flour. I normally make this with ground sausage, but this day I only had links so I made it with the links instead and it turned out great!

Stir your sauce until thick. For a richer sauce use half and half or heavy cream instead of your milk or do 1 cup of each.

These burritos are great for mornings on the go! I often warm them up for my husband as he’s getting ready for work. You could also send them off with your kids before school. Customize them however you like, there are all kinds of options!

Freezer Meal Recipe: Breakfast Burritos

Yield: 12-18 burritos

Ingredients

  • 1 pound ground pork sausage
  • 1 lb. frozen cubed Ore Ida potatoes
  • 12 eggs, beaten
  • 2 T. milk
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 2 T. butter
  • 2 10 oz. cans green chili sauce
  • 12-16 burrito sized flour tortillas (I used regular size whole wheat tortillas this time and was able to make about 10 burritos.)
  • 2 cups cheddar cheese, grated

Instructions

To prep the burrito ingredients:

In a large skillet, brown the sausage. Remove from heat and drain excess fat. Set aside. Brown potatoes in oven by placing them on a baking sheet and broiling according to package instructions until crisp. Meanwhile, mix eggs, milk, salt and pepper together in a medium mixing bowl. Over medium heat, melt the butter in separate large skillet. Add egg mixture to skillet and scramble the eggs, removing from heat once the eggs are cooked but still moist. Warm green chili sauce over medium heat in saucepan until warmed through.

To assemble the burritos and prep to freeze:

Warm the flour tortillas on skillet or in the microwave until soft and flexible. Fill tortillas with 1/3 cup scrambled eggs, 2-3 T. sausage, and 1/3 cup potatoes. Top with cheddar cheese and green chili sauce according to taste. Fold tortillas snuggly into burritos. Wrap each burrito in plastic wrap, then place in freezer bags. Freeze.

On serving day:

Remove burrito from freezer and remove plastic wrap. Wrap in a paper towl and place in microwave on defrost for 3 minutes, then on high for 1 minute. Let cool and enjoy with sour cream or salsa!

This is a super easy and delicious recipe that you can thaw and throw into the crockpot on low for 6 hours!  It goes well with Funeral Potatoes and a vegetable of your choice.

Slow Cooker BBQ Spareribs

Ingredients

  • 1-2 lbs of country-style pork ribs
  • 1 1/2 cups ketchup
  • 1 1/2 tsp seasoned salt
  • 1/2 teaspoon liquid smoke
  • 3/4 cup brown sugar
  • 1/2 cup white vinegar
  • 1 tsp ground mustard

Instructions

Place pork in resealable gallon-sized freezer bag.

Mix remaining ingredients together in a bowl and pour over pork.

Mix together in bag and zip closed.

When ready to eat, remove from freezer and thaw in fridge for 24 hours.

Cook on HIGH for 3-4 hours or LOW for 6-7 hours.

One of my favorite, and probably the easiest Freezer Meal recipe I make, Ham and Scalloped Potatoes is simple, fast and nutritious!

Freezer Meal Recipe: Ham and Scalloped Potatoes

Ingredients

    For 1 Meal
  • 6 Potatoes, Fresh, Sliced (about 1/4 inch thick)
  • 1 10 3/4 oz cans Cream of Chicken Soup (can substitute any Cream of Soup you have, it all tastes great!)
  • 1 1/3 C Water
  • 1.25 lbs Ham
  • 2 cups broccoli (this is 1/2 bag frozen broccoli (16 oz) if you want to save time)
  • Salt and Pepper
  • 4 oz Cheddar Cheese, Shredded
  • 1 Gallon size Freezer Bags
  • For 4 Meals
  • Because this is so simple, it only takes about 5 extra minutes to make 4 instead of 1, so I always do 4 at a time
  • 24 Potatoes, Fresh, Sliced (about 1/4 inch thick) about a 5 lb bag
  • 4 10 3/4 oz cans Cream of Chicken Soup (or 2 Large Cans-you'll have about 3 TBSP left over)
  • 5 1/3 C Water
  • 5 lbs Ham
  • 8 cups broccoli (or 2 bags 16 oz frozen broccoli)
  • Salt and Pepper
  • 1 lb Cheddar Cheese, Shredded
  • 4 Gallon size Freezer Bags

Instructions

Preparing For the Freezer:

Place 2 cups Broccoli in each gallon bag

Add 1 can (or 1 1/3 cups, if from the big cans) Cream of Chicken Soup to each bag

Add 1.25 lbs cubed ham to each bag

Add 1 1/3 cups (or one can, if you used the little cans of soup) water to each bag

Place 6-7 sliced potatoes (we like yellow or red-and leave the skins on for quicker prep) on top.

Seal and lay flat to freeze.

Preparing after Freezing:

To cook, defrost slightly (enough to get out of Freezer Bag), place entire contents in Crock Pot and cook on low for 8 hours.

In the last hour of cooking, add 4 oz shredded cheddar cheese (or if like me, you forget this step, add it at the end and stir gently)

Notes

I do all the the other work in the same time it takes my sweet hubby to wash and slice the potatoes. Doing all four meals takes the 2 of us about 15 minutes.

I like to buy a 5 LB ham, and cut in in half, and then the halves in half (so each quarter looks identical), it saves time and measuring :)!

You can add the cheese into the bags if you want to save a step, I just personally think it tastes better added at the end of cooking time

If you don't add the potatoes at the end, and freeze right away, they may turn brown/black. This doesn't mean they are bad, it just is what they look like if left in the air to long.

Cost for all 4 Meals

Broccoli $0.78 each ($1.56)

Cream of Chicken soup $1.98 each ($3.96)

5 Lb Ham $9.28

Potatoes $2.50

Cheese $4.99 2 lb Brick (Albertsons Round Up-Ends Tuesday.) ($2.50)

Final Price: $19.80 or $4.95 per meal!

Super Bowl: Root Beer Pulled Pork Recipe

Your next Super Bowl party will certainly be a big hit with Root Beer Pulled Pork! It takes about twenty minutes to prep and within 8 to 10 hours the pulled pork turns out amazing!

Ingredients

  • 1 medium onion, chopped
  • 1 garlic clove, minced
  • ½ cup ketchup
  • 1/3 cup cider vinegar
  • 1 (4 ounces) tomato paste
  • 1 tablespoon paprika
  • 2 tablespoons Worcestershire sauce
  • 2 tablespoons yellow mustard
  • 1 (12 ounce) can or bottled root beer (do not use diet root beer)
  • 4 lbs boneless pork shoulder roast
  • 12 buns

Instructions

In a slow cooker, mix everything together except the pork.

Add the pork, stir well, and cover.

Cook on low for 8-10 hours.

An hour or two before it is done shred the pork with two forks in the slow cooker.

Mix well. The sauce will be a little runny but the longer you let the meat sit the more it will soak up the juices.

Serve on hamburger buns.

When I have leftover ham I like to make the Cheesy Ham & Broccoli Braid and/or the savory Spiral Roll recipe below. You can certainly substitute turkey or chicken for the ham, if that’s what you have.

Ham & Broccoli Spiral Rolls Recipe

Ingredients

  • 1 recipe roll or french bread dough or pre-made roll dough (yielding about 12 rolls)
  • 12 oz cream cheese, softened
  • 1/4 c (1/2 stick) butter, softened
  • 2 c chopped ham
  • 1 1/2 c finely chopped broccoli
  • 2 c shredded cheese (Swiss or cheddar, etc)
  • 1 c Parmesan
  • 1 c finely chopped green onions

Instructions

Follow the recipe for your dough until the dough has risen. Punch it down and roll the dough out into a large rectangle about 1/2-inch thick.

In a small bowl, cream together the butter and cream cheese. Spread the butter/cream cheese mixture onto the rolled out dough. Sprinkle the ham, broccoli, cheese, Parmesan cheese, and green onions onto the dough. Roll the dough up (like cinnamon rolls), pinching the seam to seal. Slice the roll into about 1-inch segments (I like to use floss to cut rolls of dough). Place the rolls on a lightly greased baking sheet (or use a silicone baking mat) and cover with plastic wrap. Let the rolls rise until nearly doubled and bake at 350 degrees for about 20 minutes, until lightly browned and bubbly.

I usually bake all of the rolls and freeze the leftover ones.

Freezer Meal Recipe: Cafe Rio Style Burritos & Salad

Meat

3 lbs Pork Roast
1 can Dr. Pepper
1 cup brown sugar
1 cup salsa
1 teaspoon garlic powder
1 teaspoon ground mustard
salt and pepper

Rice

3 c. rice
3 c. water
2 teaspoons chicken bouillon
2 garlic cloves-minced
1 can diced green chili’s
1/2 cup chopped cilantro
1/2 teaspoon salt
1 tablespoon butter
1/4 cup chopped onion

Dressing

2 cups prepared Ranch Dressing

  • 1 cup milk
  • 1 cup mayonnaise
  • 1 envelope Hidden Valley Ranch Dressing

1/2 cup chopped cilantro
4 small tomatillos {Optional, these enhance the dressing, but if you do not have them on hand you can go without and the dressing still turns out fab}
1/2 tsp. minced garlic
2 T fresh lime juice
1 tsp. Tabasco sauce

Additional Ingredients Needed

1 can black or pinto beans
1 can red/green enchilada sauce {your preference, I prefer green}
2 c. Mexican style cheese
1 Package Large Tortillas

And guacamole

To Prepare Meat: Place pork in the crock pot. Then add all ingredients. Cook on low for 6-8 hours. Shred pork with about an hour left to cook.

To Prepare Rice: Put 3 cups on water on high heat to boil. Add butter and bouillon. Then add remaining “rice” ingredients. Once you water boils add rice. Cover and reduce heat to low. Cook on low for 20 minutes. Rice makes a lot. We usually serve some of it on the side as well.

Rolling Burritos: Once meat and rice are hot and ready, layer burritos on a tortilla. One layer of pork, then rice, then beans and sprinkle with shredded cheese. Wrap your tortilla and place seam side down.   Cover with enchilada sauce and sprinkle with cheese. Bake at 350° until heated through. Sometimes I like to put all the ingredients out and have my guests assemble their own burritos and we skip the baking with enchilada sauce.

To Prepare Dressing: In your blender add milk and mayo. Take your cilantro off the stems and cut slightly, add cilantro and remaining ingredients to the blender. Mix until smooth. If you do not have a blender you can mix by hand but finely chop your cilantro first. If you add tomotillos chop them very fine.

Sweet Pork Salad: I also like to make a salad out of mine. I use a warm tortilla and layer with pork, cheese, beans, rice, guacamole, salsa, chips lettuce and cilantro dressing.

 

Note: I have corn tortillas pictured in this post. Both flour and corn are good. If you choose corn I like to slightly soften the tortillas slightly cooking on each side in hot vegetable oil before rolling.

To Freeze

You can easily freeze this pork for later. It is a fantastic freezer meal!
